CILANTRO CHICKEN AND SPICY THAI NOODLES

Number Of Ingredients 20

4 boneless, skinless chicken thighs (about 1 pound)
3 tablespoons canola oil
Salt and freshly ground black pepper
2 tablespoons minced garlic
1/4 cup cilantro leaves
2 limes, 1 zested and 2 juiced
2 tablespoons seasoned rice vinegar
2 tablespoons canola oil
1-inch chunk ginger, peeled and grated (about 1 tablespoon)
1 lime, zested and juiced
2 cloves garlic, minced
1/4 teaspoon red pepper flakes
1 cup chicken stock
Salt and freshly ground black pepper
1 tablespoon Thai green curry paste
1 tablespoon seasoned rice vinegar
3 scallions, white and green parts, chopped, for garnish
1 pound spaghetti, cooked al dente and sprayed with canola oil spray
1 carrot, shredded
1/4 cup crushed roasted peanuts

Steps:

  • For the chicken: Combine all the ingredients in a nonreactive bowl and let stand at room temperature for 20 minutes. Prepare a grill pan to medium-high heat and place the chicken thighs on the pan, cooking for 4 minutes per side.
  • For the noodles: In a medium saute pan over medium heat, add the canola oil. Add the ginger, lime zest and juice, garlic, red pepper flakes and chicken stock. Stir all to combine and sprinkle with salt and pepper. Add the curry paste, seasoned rice vinegar and scallions. Reduce the heat to low and simmer for 2 minutes.
  • Place the noodles in a large serving bowl along with the carrots and crushed peanuts and toss well to combine. Add the cilantro chicken and serve.

1 pound chicken breast with skin (2 pieces)
½ teaspoon salt
½ teaspoon black pepper
4 tablespoons butter
a handful of toasted peanuts, chopped
Spicy lime cilantro sauce:
4 cloves garlic, minced
2 stalks scallion, chopped
1 teaspoon grated ginger
4 thai chili peppers, sliced
a handful of chopped cilantro
1 lime, juiced
1 tablespoon soy sauce
1 teaspoon sugar
¼ teaspoon ground black pepper

Steps:

  • Rub salt and pepper over the chicken breast on both sides, let sit for 10 minutes
  • Toast a handful of peanuts in the oven, chopped and set aside
  • Combine garlic, scallion, ginger, Thai chili pepper, cilantro, lime juice, soy sauce, sugar and black pepper in a small container, mix well and set aside.
  • Heat a tablespoon butter in a skillet over medium-low heat until melt, place the chicken breast, skin side down, in the skillet.
  • Wait 6-7 minutes until the skin side is golden brown (do not move the chicken while cooking), flip the chicken with a spatula.( If the chicken skin sticks to the pan, wait for 1 or 2 more minutes and shake the pan, the chicken should) release.
  • Pan-fry the other side for 6-7 minutes until golden brown as well.
  • Add 3 tablespoons butter into the pan, after the butter has melted, tilt the pan toward you, spoon up the butter with a long-handled spoon, quickly and repeatedly spoon up the foamy butter and pour it back over the chicken for 1-2 minutes before the butter starts smoking.
  • Poke the breasts with a fork, if the juices run clear, the chicken is ready.
  • Transfer the chicken to a cutting board, let rest a few minutes and then cut into thick slices.
  • Spoon some lime cilantro sauce onto the chicken and top with chopped peanuts to serve.

3 tablespoons sesame oil
3 tablespoons fish sauce
1 teaspoon sugar
4 cloves garlic, peeled and finely chopped
2 fresh red chilies, seeded and finely chopped
2 tablespoons chopped cilantro
9 fluid ounces rice vinegar
6 ounces sugar
1 teaspoon salt
4 cloves garlic, peeled and finely chopped

2 tablespoons chopped cilantro

Steps:

  • Mix the marinade ingredients together, pour over chicken and leave it in the fridge to marinate for at least 30 minutes.
  • While chicken is in the fridge, prepare the sauce.
  • Heat vinegar, sugar in a saucepan over low heat, and stir until dissolved.
  • Bring to boil and simmer until the sauce thickens, and a syrup forms.
  • (this will only take a minute or two) Pour into a bowl.
  • Preheat grill.
  • Place chicken about 20cm/8 inches from the heat, and cook both sides until coloured.
  • (about 6 minutes on the first side, 4 minutes on the second) Serve with Coriander/Cilantro Sauce and Fragrant Rice.

4 tablespoons vegetable oil, divided
1 medium onion, chopped
4 large garlic, chopped
1 lb chicken breast, cut into strips
3 cups broccoli florets
1 red pepper, bit size pieces
1/2 cup cilantro, chopped
2/3 cup coconut milk
2 tablespoons soy sauce
1 tablespoon oyster sauce
2 teaspoons brown sugar
1 1/2 teaspoons ginger, fresh and finely grated
1 teaspoon hot chili paste
1 teaspoon sesame oil

Steps:

  • Prepare the vegetables and chicken.
  • Brown sauce: Combine the ingredients and set aside.
  • In a large skillet or wok, add 2 T of the oil. Let it heat up until sizzling. Carefully add the chicken and stir fry until chicken is partially cooked. Remove to a plate.
  • Add 2 T more of the oil to the skillet and let it heat up. Add the onions and garlic; stir fry for 2 minutes Add the broccoli and pepper and stir fry for 2 minutes. Add the chicken back to the wok and add a little bit of water -- close the lid of the skillet and steam cook, until veggies and chicken are almost cooked.
  • Add the cilantro and coconut milk and cook until heated through and chicken is cooked.

1/2 cup cilantro
2 tablespoons soy sauce
1 tablespoon toasted sesame oil
4 boneless skinless chicken breasts

Steps:

  • Place all the ingredients above in a food processor and process until smooth.
  • Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
  • Prepare your grill or broiler.
  • Cook until temperature registers 165F on the meat thermometer.
  • Let the chicken breasts rest for 5 minutes before serving, this prevents the meat from drying up.

4 chicken thighs, boneless and skinless (about 1 pound)
3 tablespoons canola oil
salt & freshly ground black pepper
2 tablespoons garlic, minced
1/4 cup cilantro leaf
2 limes, zest of 1 lime and juice of both
2 tablespoons seasoned rice vinegar
2 tablespoons canola oil
1 tablespoon fresh ginger, peeled and grated
1 lime, zested and juiced
2 garlic cloves, minced
1/4 teaspoon red pepper flakes
1 cup chicken stock
salt & freshly ground black pepper
1 tablespoon thai green curry paste
1 tablespoon seasoned rice vinegar
3 scallions, white and green parts-chopped
1 lb spaghetti, cooked al dente and sprayed with canola oil (keep warm)
1 carrot, shredded
1/4 cup roasted peanuts, crushed

Steps:

  • For the chicken, combine all the ingredients in a nonreactive bowl and let stand at room temperature for 20 minutes. Prepare a grill pan to medium-high heat and grill the chicken thighs 4 minutes per side or until done.
  • For the sauce, add canola oil to a saute pan over medium heat. Add the ginger, lime zest, juice, garlic, red pepper flakes and chicken stock. Stir well to combine and sprinkle with salt and pepper. Add the curry paste, seasoned rice vinegar and scallions. Reduce the heat to low and simmer 2 minutes.
  • Place the cooked noodles in a large serving bowl and add sauce, carrots and peanuts - toss well. Add the cilantro chicken and serve.

  • Light the grill or heat the broiler. In a blender or food processor, puree the jalapeños, smashed garlic cloves, the 1/2 cup cilantro leaves and stems, the fish sauce, cooking oil, sesame oil, and 1/4 teaspoon of the salt. Put the chicken in a shallow dish and coat it with the cilantro puree.
  • Grill the chicken over moderately high heat or broil it for 5 minutes. Turn and cook until just done, about 5 minutes longer.
  • Meanwhile, in a small stainless-steel saucepan, bring the vinegar, sugar, and the remaining 1/4 teaspoon salt to a simmer, stirring. Simmer for 2 minutes. Pour the liquid into a small glass or stainless-steel bowl and let cool. Add the minced garlic, the 1 tablespoon chopped cilantro, the red-pepper flakes, and water. Serve each chicken breast with a small bowl of the dipping sauce alongside.

  • MARINATE CHICKEN: Place garlic, cilantro, soy sauce, lime juice, and sesame oil in a food processor and process until smooth.
  • Place chicken in large zipper-top bag, and pour marinade into bag. Seal the bag, and shake until chicken is coated with marinade. Lay bag flat in refrigerator, and marinate for at least 1 hour, and up to overnight.
  • COOK CHICKEN: Move oven rack 4 inches from broiler, and preheat broiler. Line rimmed baking sheet with foil, and spray lightly with nonstick cooking spray. Remove chicken from marinade and arrange in a single layer, spacing apart, on prepared baking sheet. Drizzle chicken with 1 tablespoon olive oil, and season with salt and pepper. Broil until browned and cooked through, about 10-14 minutes (all depending on your broiler). Internal temperature of chicken should register 165 degrees F on a meat thermometer. Let chicken rest for 5 minutes before serving. Serve with lime wedges.
