CATHY'S QUICK STIR-FRIED BROCCOLI SLAW SIDE DISH
My husband and I were hosting a small backyard get together, and were getting ready to take everything out to the deck to eat, when I realized we didn't really have much of a vegetable to serve. I opened the fridge and saw a bag of broccoli slaw and just threw this together. It was a hit! Our neighbor begged me for the recipe, so I decided I'd better post it before I forget what I did! Measurements of oil, garlic, and soy sauce are approximate. This is a simple, fresh side dish with a nutty-garlic flavor. Adjust to your personal preferences. I've never cooked with sesame seeds, but I'd be curious to see how they would work in this dish, in place of the pine nuts. Prep time is for toasting pine nuts, but this can easily be done while stirfrying the broccoli slaw as well. (In a separate pan, of course!)

Steps:
- Heat sesame oil in large skillet or wok.
- Add garlic. Sautee garlic slightly, infusing oil with garlic flavor. Monitor heat carefully to avoid burning.
- Add broccoli coleslaw, and stir fry until crisp-tender. (I cheated and put the cover on my skillet for a little while to speed things along with a little steam).
- Add soy sauce and splenda, and continue to cook until splenda is disolved and liquid is absorbed. Taste test, and determine whether or not you'd like to add more splenda, soy sauce, or salt and pepper. Adjust seasonings accordingly.
- Place in serving bowl, and top with toasted pine nuts. Toss slightly, but no so much that pine nuts drop all the way to the bottom of the bowl.
- Note: To toast pine nuts, I placed them in a heavy pan, over medium-low heat, and tossed and shook the pan to keep them moving, until they started to show some browning and until they started to smell toasted and more intense.
CHICKEN & BROCCOLI SLAW WITH SPEEDY THAI PEANUT SAUCE
This salad is one of my favorite ways to stretch a little extra chicken into a light yet complete (and really easy) meal. If you like your salads with a liberal coating of dressing or add multiple extras, double the sauce recipe and drizzle a little extra over top when serving. Yields 4 servings (and approximately 1/3 cup sauce).

- In a small bowl, thoroughly combine all of the peanut sauce ingredients.** (If the peanut butter is cold, warming it slightly in the microwave or allowing it to sit at room temperature for a few minutes will allow it to mix more easily with the other ingredients.) To a large bowl, add the broccoli slaw, chicken, and optional extras. Pour the sauce over top and toss to thoroughly coat. At this point, you may cover the salad and refrigerate until ready to eat. Sprinkle with the sunflower seeds or peanuts just before serving.
THAI CHICKEN BROCCOLI SLAW STIR-FRY
Here is a simple and delicious stir-fry with Thai flare using packaged "broccoli slaw mix" of shredded broccoli, carrots and red cabbage. The chopping is done already so you can get dinner on the table more quickly!

- Cut chicken breast length-wise into strips about 1 inch (2.5 cm) long and ½ inch (1.25 cm) thick. Set aside.
- Cook the brown rice in unsalted water according to package directions.
- Finely grate lime peel and juice the lime. Set juice aside.
- Make stir-fry sauce by combining lime peel, peanut butter, rice vinegar, light tamari, water, garlic cloves, fresh ginger and ground cayenne pepper in bowl of blender or food processor. Process until smooth.
- Wash broccoli slaw under running cold water to freshen. Drain. Cut red peppers into thin slices. Slice green onions to make ½ cup (125 mL) white and ¼ cup (60 mL) of the green.
- Heat one tablespoon (15 mL) grapeseed oil over medium-high heat in a wok or skillet. Add chicken and fry five minutes on one side to brown. Flip and cook on other side for another 3-5 minutes to brown or until internal temperature reaches 165°F (74°C). Remove from pan and set aside. Sprinkle with the reserved fresh lime juice.
- Heat remaining grapeseed oil. Add the sliced white of the green onions, broccoli slaw and red peppers. Stir-fry one minute.
- Pour sauce over stir-fry and sauté another two minutes or until vegetables are just tender crisp. Add chicken back and toss again. Taste and adjust seasoning - you may want to add more fresh lime juice or light tamari.
- To serve, mound brown rice on plate and top with the chicken stir-fry. Garnish with reserved sliced green ends of onions.

CHINESE STIR-FRY OVER CRUNCHY SLAW
Adapted from a recipe I found in a magazine. You can serve rice on the side if you must but it really isn't needed this makes very generous, healthy portions. The nutrional numbers on this recipe will be a little off because you throw away the marinade but it is in the ingredients (hope that makes sense, lol)

- In a medium bowl whisk together soy sauce, vinegar, sesame oil and chili-garlic sauce.
- Divide in half, reserving half for sauce, other half is for marinade.
- Add Chicken to half the sauce, toss to coat and let stand 15 minutes.
- Whisk water and cornstarch into reserved sauce until smooth and set aside.
- Remove chicken from marinade.
- Heat oil in wok over high heat till hot.
- Add chicken and stir fry until almost cooked through, about 3 minutes.
- Add bell pepper, snow peas, green onions and garlic, stir fry for 1 minute.
- Add reserved sauce and stir fry another minute till the sauce has thickened and chicken is completely done.
- Divide cole slaw mix between 2 plates, top with chicken mixture.
- Sprinkle with peanuts and cilantro.

Steps:
- Cut steak on the bias (on an angle) into thin 2-3 inch long strips and place in a bowl. Combine marinade ingredients in a cup, stirring well to dissolve the cornstarch. Pour this over the beef and toss. Set aside.
- In a cup or small bowl, combine the stir-fry sauce ingredients together, stirring well to dissolve the sugar. Set aside.
- Heat a wok or large frying pan over medium-high heat. Add oil and swirl around, then add the shallot/onion, garlic, and ginger. Stir-fry 1 minute to release the fragrance.
- Add the beef together with its marinade. Stir-fry until browned, 4-5 minutes. Add the sherry as you stir-fry to keep pan moist.
- Add broccoli and red pepper plus stir-fry sauce. Reduce heat to medium and simmer 5 minutes, stirring occasionally, until vegetables have softened but still retain some crunch.
- Stir together the cornstarch and water mixture. Push ingredients aside in the wok to reveal the stir-fry sauce. Add the cornstarch-water mixture and stir to thicken the sauce. Then stir-fry everything together.
- Switch off heat and drizzle over the sesame oil. Taste-test the dish. If not salty or flavorful enough, add more fish sauce until desired taste is achieved. If too salty for your taste, add a squeeze of lime or lemon juice. If not sweet enough, add a little more sugar. Add more chili for more heat. Serve with plenty of Thai jasmine rice. Thai chili sauce can also be served on the side for those who like it extra spicy. ENJOY!

- Heat 1 tbsp oil in wok over medium-high heat; add garlic, lemongrass, and chiles, heating until they become fragrant, then add chicken to wok.
- Stir-fry chicken 3-4 minutes, or until chicken is cooked through; remove from pan and set aside.
- Add another 1/2 tbsp oil to wok if needed; allow to heat and add broccoli florets, stir-frying for about 3-4 minutes or until broccoli is crisp-tender.
- Return chicken to pan with broccoli and stir well.
- Stir together peanut butter with chile sauce, galanga powder, and the juice of the half of lime until smooth; add to pan along with the fish sauce and blend well.
- Add chopped basil right at the end, stir well and serve (with steamed jasmine rice!).
CHICKEN AND BROCCOLI SKILLET STIR-FRY
You don't need a wok to make this just a large skillet --- this recipe will feed 2-3 people but can be doubled easily and all amounts may be adjusted to taste --- if you prepare the chicken and broccoli florets ahead of time this recipe takes little time to prepare, I sometimes add in matchstick-size carrots also, the red pepper flakes may be adjusted to suit heat level, my family likes extreme spice so add in lots! :)

Steps:
- In a large skillet heat about 1-1/2 tablespoons sesame oil over medium-high heat.
- Add in chopped garlic and dryed chili flakes; saute for about 1 minute.
- Add in broccoli florets and 4 tablespoons chicken broth; cover skillet and cook until the broccoli is just crisp-tender (about 2 minutes) transfer to a bowl.
- Add in 1 tablespoon more sesame oil to the skillet.

- Preheat the oven to 375º and line a baking sheet with foil. Lightly grease the foil. Cut chicken breasts in half and place on the baking sheet. Season both sides with salt and pepper – about 1/2 teaspoon of each in total. Place into the oven and bake for 6-8 minutes. Flip the chicken and return to the oven for another 6-8 minutes. My chicken breasts were on the smaller side so they cooked relatively quickly.
- Add all of the ingredients for the sauce into a mason jar and shake until it's smooth and combined. You can also add everything to a bowl and whisk to combine if you prefer.
- In a large skillet, bring 2 Tablespoons of oil to medium heat. Add broccoli slaw to the skillet and toss to coat with oil. Cook for 10-12 minutes, tossing every few minutes.
