Grilled Filet Mignon with Herb Butter & Texas Toasts image

This dish is simply luxurious: grilled beef tenderloin smothered in a vibrant herb butter served on top of a garlicky slab of whole-grain toast. And yes, with only about 303 calories and 14 grams of fat total, this steakhouse-worthy entree can be part of a healthy diet. If you like, make extra herb butter to top chicken, fish or even a grilled pork chop.

1 tablespoon whipped or regular butter, slightly softened
3 teaspoons extra-virgin olive oil, divided
1 tablespoon minced fresh chives, or shallot
1 tablespoon capers, rinsed and chopped
3 teaspoons minced fresh marjoram, or oregano, divided
1 teaspoon freshly grated lemon zest, divided
1 teaspoon lemon juice
¾ teaspoon kosher salt, divided
½ teaspoon freshly ground pepper, divided
1 tablespoon minced fresh rosemary
2 cloves garlic, (1 minced, 1 peeled and halved)
1 pound filet mignon, about 1 1/2 inches thick, trimmed and cut into 4 portions
4 slices whole-grain bread
4 cups watercress, trimmed and chopped

Steps:

  • Preheat grill to high.
  • Mash butter in a small bowl with the back of a spoon until soft and creamy. Stir in 2 teaspoons oil until combined. Add chives (or shallot), capers, 1 teaspoon marjoram (or oregano), 1/2 teaspoon lemon zest, lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cover and place in the freezer to chill.
  • Combine the remaining 1 teaspoon oil, 2 teaspoons marjoram (or oregano), 1/2 teaspoon lemon zest, 1/4 teaspoon salt and pepper, rosemary and minced garlic in a small bowl. Rub on both sides of steak. Rub both sides of bread with the halved garlic clove; discard the garlic.
  • Grill the steak 3 to 5 minutes per side for medium-rare. Grill the bread until toasted, 30 seconds to 1 minute per side. Divide watercress among 4 plates. Place 1 toast on each serving of watercress and top with steak. Spread the herb butter on top of the steaks and let rest for 5 minutes before serving.

3 teaspoons extra virgin olive oil, divided
1 tablespoon minced chives or 1 tablespoon shallot
1 tablespoon capers, rinsed and chopped
3 teaspoons minced fresh marjoram or 3 teaspoons oregano, divided
1 teaspoon freshly grated lemon zest, divided
1 teaspoon fresh lemon juice (not the bottled kind)
3/4 teaspoon kosher salt, divided
1/2 teaspoon fresh ground pepper, divided
1 tablespoon minced fresh rosemary
1 garlic clove, minced, plus
1 garlic clove, peeled and halved
1 lb filet mignon, about 1 1/2 inches thick, trimmed of fat and cut into 4 portions
4 slices whole grain bread
4 cups watercress, trimmed and chopped

Steps:

  • Preheat grill to high.
  • Mash butter in a small bowl with the back of a spoon until it's soft and creamy.
  • Stir in 2 teaspoons oil until combined.
  • Add chives (or shallot), capers, 1 teaspoon marjoram (or oregano), 1/2 teaspoon lemon zest, lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Cover and place in the freezer to chill.
  • Combine the remaining 1 teaspoon oil, remaining 2 teaspoons marjoram (or oregano), remaining 1/2 teaspoon lemon zest, remaining 1/4 teaspoon salt and pepper, rosemary and minced garlic in a small bowl.
  • Rub on both sides of steak.
  • Rub both sides of bread with the halved garlic clove; discard the garlic.
  • Grill the steak 3 to 5 minutes per side for medium-rare.
  • Grill the bread until toasted, 30 seconds to 1 minute per side.
  • Transfer the toasts to a large plate, place the steaks on top of the toasts and spread the herb butter on top of the steaks; let rest for 5 minutes.
  • Divide watercress among 4 plates and top with the steak-topped toasts.

2 teaspoons olive oil
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
2 tablespoons unsalted butter
1 garlic clove, minced
2 teaspoons chopped fresh tarragon or 3/4 teaspoon dried tarragon

Steps:

  • Rub steaks with olive oil, season with salt and pepper, and let stand at room temperature for 15 minutes.
  • Heat medium skillet over medium-high heat. For rare steak, cook filets until instant thermometer reads 130 degrees, about 10 minutes, turning once (for filets cooked to a greater doneness, turn down heat and increase cooking time). Transfer to serving plate and tent loosely with aluminum foil.
  • Place pan on medium heat; melt butter until it begins to brown slightly, scraping up any browned bits. Add garlic, and cook until fragrant, about 15 seconds. Add tarragon, swirling to blend. Pour sauce over steaks. Serve immediately.

2/3 cup puerto rican dark rum
1 tablespoon lime juice
4 beef tenderloin steaks
3 tablespoons butter
1/4 cup minced shallot
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1 tablespoon minced parsley

Steps:

  • Combine half of rum, shallots, lime juice and pepper in shallow dish.
  • Add steaks.
  • Marinate 30 TO 60 minutes, turning once.
  • Sprinkle with salt.
  • Heat remaining rum, shallots, lime juice and pepper in small pan on preheated outdoor grill.
  • Stir in butter a small piece at a time.
  • Stir in parsley.
  • Brush steaks with half of rum butter and grill 8 to 10 minutes.
  • Turn and brush with remaining rum butter.
  • Grill another 8 minutes or until desired doneness.
