MEZCAL SHRIMP TACOS WITH GUAC CREMA
This is not your standard taco night. There is smoke and fire throughout these tacos. Mezcal, fire-roasted tomatoes, pimenton and chipotle in adobo bring the smoky heat to counter a cool crema and juicy shrimp.

- Gather your ingredients.
- For the crema: Seed and chop green chili. Halve and pit avocado. To a food processor or high power blender, add the juice of 1 lime, chili, scoop in the avocado, onion and crema or sour cream and process into a smooth sauce. Season with salt to taste.
- For the tacos: Finely chop onion. Place tomatoes in a strainer to drain. Pat shrimp dry. Peel garlic and thinly slice, grate or chop garlic.
- Heat a large cast-iron or wide, shallow skillet over medium-high heat with EVOO, 2 turns of the pan. Melt butter into oil and when it foams add onion, garlic, cumin, paprika and chipotle in adobo. Swirl and toss a minute. Add tomatoes, cook a minute or 2 more, then add mezcal and a drizzle of honey -- be mindful of a flare up. Swirl a minute more. Add the shrimp to the sauce, season with salt and pepper and cook, turning occasionally, 3 to 4 minutes. Add juice of lime, remove from heat.
- Char tortillas in a hot stainless pan over high heat or over open flame on gas burners. Blister the tortillas 20 to 30 seconds and stack in a cloth napkin or towel to keep warm.
- Serve shrimp in serving bowl with tortillas, crema, lettuce, lime wedges and toppings alongside.
- To build tacos: Slather or squirt sauce on tortilla, top with lettuce, shrimp -- squirt on more lime juice of you like, cilantro, jalapenos, radishes, cheese and scallions.
EASY BEEF TACOS WITH GUACAMOLE, SOUR CREAM AND PICO DE GALLO RECIPE BY TASTY
Steps:
- For the guacamole: Mash together ingredients in a bowl. Cover with plastic wrap and let chill in the fridge.
- For the pico de gallo: In a medium-sized bowl, combine the onions, fresh cilantro, chopped garlic, *pickled jalapeño, cherry tomatoes, lime juice, salt and pepper. Cover with plastic wrap and let chill in the fridge.
- For the meat: Into a large pan, turn on the low heat and combine the oil with the butter. Add the ground beef and pork and mix them until combined. Turn on the medium heat, then add the taco seasoning.
- Once the taco meat mixture is cooked, turn off the heat and preheat your oven to 180°C (356°F) . On an inverted (upside-down) cupcake tin, place the small tortillas in crevices to create 'taco shells.' Place in the oven and let dry for 10-15 minutes until crisp.
- To serve: Fill each taco shell with 2 tbsp meat mixture and garnish/assemble with condiments and toppings as desired.
GUACAMOLE WITH SOUR CREAM
My guacamole is very free-form, but here are the basics: Figure about 1/2 large avocado per person. I don't care whether I'm using Haas or regular avocados - some people do. Pick ones that give to mild pressure but are not mushy. If you can't find any that are ripe, get hard ones and keep them in a paper bag for a couple of days until they ripen.

- Cut the avocado in half, scoop out the flesh with a spoon; mash 3/4 of it well and chop the remaining 1/4 coarsely (I do this with the spoon, in the avocado shell, before scooping the last bit out).
- Mix it into the mashed portion.
- Mix all remaining ingredients together.
- Serve immediately, or cover with plastic wrap, pressing wrap firmly to surface of guacamole (or it will turn color due to oxidation) and refrigerate up to 4 hours before serving.

Steps:
- To make the taco meat...In a saucepan, heat the oil on medium-low, add bell pepper, onion, and jalepeno. Cook until onion is translucent (~ 5 min.). Add minced garlic. Add ground beef. Add cumin, chili powder, salt, pepper, and cayenne. Stir and cook until meat is cooked through (~15 min). Drain fat and adjust seasoning as needed.
- To make the queso...In a saucepan on medium-low, mix together the Rotel, chicken broth and corn starch, mix well and cook until the sauce has thickened (~2 min). Thrn the heat down to low. Working in batches, stir in a handful of cheese. Once melted, add another handful and repeat until all melted. Add salt to taste.
- To serve...Spoon the meat into a 9 inch square dish. Top with cheese mixture. Garnish with guacamole and sour cream. Serve with Tortilla Chips.

Reduce heat to low, gradually add both cheeses, and cook, stirring constantly, until cheese is completely melted and queso is smooth. If it seems too thick, stir in a little more milk.
