FRIJOLES BORRACHOS - MEXICAN DRUNK BEANS

Frijoles Borrachos - Mexican Drunk Beans image

This our secret family traditional recipe for "frijoles borachos" translates into "drunk beans. What many people call frijoles a la charra or frijoles charros! These are great for any time especially when you make carne asada.

Provided by Spyce

Categories     Beans

Time 1h50m

Yield 8 serving(s)

Number Of Ingredients 10

1 lb dried pinto bean
8 slices bacon, chopped
2 garlic cloves
4 medium fresh tomatoes, diced
2 medium onions, diced
2 cups ham, chopped
2 cups smoked sausage (optional, chopped)
1 (12 ounce) can beer (chef's choice)
1 bunch fresh cilantro, chopped
3 fresh green jalapeno peppers, diced

Steps:

  • Rinse and pick over beans and clean them out.
  • Add the beans and the garlic in a large pot of water and bring to a boil. After the water boils reduce heat and cook over medium heat for 1 to 1½ hours until they are tender but still firm.
  • While beans are cooking cut and cook bacon, till its fully cooked and set aside.
  • In another frying pan add 2 cups of ham and 2 cups of chopped smoked sausage.*Both cut into small cubes. Brown the ham and sausage for about 7-10 minutes, and set aside.
  • Add the can of beer to your beans before the they are fully cooked and let simmer till the beans become fully cooked.
  • When the beans are fully cooked, add the all the remaining ingredients into the pot ( a whole bunch of chopped cilantro, diced jalapeno peppers, diced onions, diced tomatoes, cooked bacon, ham, and sausage) . Let the beans come to a boil after you add the remaining ingredients. This recipe will not need salt because there is already enough of that coming from your beer, bacon and ham and sausage. The secret is in the cilantro and the beer. The more cilantro and beer the more flavorful!
  • *For those of you that don't eat pork, you can use turkey ham, turkey bacon and turkey sausage. The taste is just as flavorful.

BEANS A LA CHARRA

Beans a la Charra image

Categories     Bean     Roast     Simmer     Boil

Yield serves 8 to 12

Number Of Ingredients 12

1 pound dried pinto beans (about 2 cups)
12 cups water
1 poblano chile
2 dried ancho chiles, stemmed and seeded
12 slices applewood-smoked bacon
3 cups chopped yellow onions
2 jalapeño chiles, stemmed, seeded, and diced
3 tablespoons minced garlic (about 9 cloves)
1 (10-ounce) can tomatoes with green chiles, with juice
1 tablespoon kosher salt
1 (12-ounce) bottle Corona (or other Mexican) beer
1/2 cup chopped fresh cilantro, for garnish

Steps:

  • Sort through the beans and rinse them in cold water. In a large stockpot set over high heat, boil the beans in the 12 cups water for 2 minutes. Remove the pot from the heat, cover, and let the beans soak for 1 hour. Roast the poblano chile with a kitchen torch, over a gas burner, or under an oven broiler until evenly charred. Rinse it in cold water to remove the charred skin, then stem, seed, and chop it into small dice; set aside.
  • Place the ancho chiles in a medium bowl and cover with hot water. Use a plate or small bowl to weigh down the chiles, keeping them submerged. Soak them until softened, about 15 minutes. Drain the chiles, reserving 1/4 cup of the soaking water. Puree the softened chiles and the reserved chile soaking water in the jar of a blender or the work bowl of a food processor fitted with the metal blade. Use a wooden spoon to push the pureed chiles through a strainer and into a bowl; set aside.
  • In a large skillet, brown the bacon over medium heat until crisp; drain on paper towels. In the same skillet, sauté the onions, jalapeños, garlic, and poblano in the bacon fat over medium heat. Add the onion mixture to the beans and their soaking water in the stockpot.
  • Add the tomatoes, pureed ancho chiles, salt, and beer. Bring the beans to a gentle simmer over medium heat and cook, uncovered, until the beans are tender, about 1 1/2 hours. Crumble the cooked bacon and stir into the beans. Serve warm in small bowls, sprinkled with cilantro.
  • do it early
  • The beans can be made up to 5 days in advance and refrigerated.

  • In a large heavy pot, cook the bacon until done but not crisp. Add the onion, garlic, and jalapeno to the hot bacon. Cook, stirring regularly, until onions are transparent.
  • Add the beans, cumin, chili powder, salt, and ¼ cup cilantro. Add ½ gallon cold water and stir with a wooden spoon to scrape the browned bits off the bottom of the pan. Turn heat to low.
  • Cook beans at a very slight simmer until fork tender - I let them cook all day (~5 hrs) so the beans get very soft. Stir regularly to avoid burning the bottom and add more water as necessary (you will have to add another pint or two).
