TERIYAKI SHRIMP AND PINEAPPLE PARCELS

- Cook the rice to according to the package instructions; allow to cool.
- Preheat the oven to 450 degrees F. Cut six 12-by-20-inch pieces of foil.
- In a medium mixing bowl, combine the cooked rice, pineapple, peas, teriyaki sauce, peppers, garlic, ginger and a pinch of salt and pepper.
- To assemble the parcels: Layer an even portion of the rice mixture in the middle of each of the foil sheets and top each with one-sixth of the shrimp. Drizzle 1/8 teaspoon sesame oil into each parcel, then seal them.
- Put the parcels on a baking sheet and cook until the shrimp are pink and cooked through, about 15 minutes. Open the parcels and sprinkle over some green onions and cilantro, then top with a squeeze of lime juice.
TERIYAKI SHRIMP SUSHI BOWL
A tasty, deconstructed Teriyaki Shrimp Sushi Bowl made with both rice and quinoa and topped with teriyaki shrimp, cucumber and avocado and drizzled with sriracha mayo. The best part is that it comes together in just 20 minutes!

- If you haven't already, cook the rice and quinoa then set them aside, keeping a lid on the saucepan(s) so they stay warm.
- Add oil and shrimp to a large skillet, then sauté the shrimp over medium heat for 2-3 minutes. While the shrimp is heating up, make the teriyaki sauce by whisking all of the sauce ingredients together.
- Next, add the garlic to the skillet and sauté for 1 minute. Reduce the heat to low, then pour 1/4 cup of the teriyaki sauce into the pan, using a wooden spoon to stir until the shrimp is coated. Remove from the heat, then sprinkle the shrimp with sesame seeds.
- Assemble: Add the rice/quinoa mixture to a bowl, then top it with the marinated shrimp, cucumber and avocado. Drizzle the remaining teriyaki sauce over top.
- Last, whisk the mayo and sriracha together, then drizzle that over top of everything. Enjoy!

- Heat oil in a wok over medium heat. Add shrimp, garlic, garlic powder, and ginger. Cook until shrimp are opaque, 3 to 5 minutes.
- Add brown sugar and sesame seeds. Blend in white wine, teriyaki sauce, and teriyaki marinade and bring to a boil. Add frozen vegetables and return to a boil. Reduce heat to a simmer. Cover and cook until vegetables are heated through and tender, 10 to 15 minutes.
- Serve stir-fry over a bed of rice.

- Combine teriyaki sauce and sugar in measuring cup, stirring until sugar dissolves.
- Remove 3 tablespoons of mixture and pour over shrimp in large plastic food storage bag. Press air out of bag; close top securely. Turn bag over several times to coat pieces well. Marinate 15 minutes.
- Meanwhile, add enough water to remaining teriyaki sauce mixture to measure 2/3 cup; blend in cornstarch.
- Heat oil in large skillet over medium-high heat; add shrimp and sauté about 2-3 minutes. Add teriyaki sauce mixture. Cook, stirring, about 1 minute, or until sauce boils and thickens slightly.
- Spoon shrimp and sauce over rice in large individual serving bowls. Serve vegetables on top of rice.
