TERIYAKI CHICKEN ZOODLE BOWLS

Grilled chicken teriyaki is served over zucchini noodles and topped with pineapple salsa in these healthy, gluten free and delicious zoodle bowls!

½ cup teriyaki sauce (divided - click link for homemade recipe)
2 boneless, skinless chicken breasts (app. ½ lb. each)
1 cup pineapple (diced)
2 tbsp fresh squeezed lime juice
¼ cup red bell pepper (diced)
¼ cup red onion (diced)
1 tbsp cilantro (chopped)
¼ cup jalapeño (seeded & minced)
¼ tsp salt
2 large zucchinis (spiralized into app. 4 cups zoodles)
1 tbsp olive oil

Steps:

  • Place the chicken breasts in a bowl or ziplock bag and toss with ¼ cup of teriyaki sauce.
  • Marinate for 30 minutes.
  • Combine all of the pineapple salsa ingredients in a medium bowl, set aside.
  • Heat a grill or grill pan over medium heat, add the chicken and grill for 6-7 minutes per side.
  • While the chicken is grilling, add the olive oil to a large skillet, then add the zucchini noodles and saute 3-5 minutes.
  • Divide the zucchini noodles between two bowls.
  • Once the chicken is grilled, slice it up and place on top of the zoodles.
  • Spoon the pineapple salsa over the chicken and zoodles.
  • Drizzle the remaining teriyaki sauce over the bowl.

I found this on another recipe website...it's really easy, fairly inexpensive (I had all the ingredients at home already) and the leftovers are super! I really hope you enjoy! I serve with Shortcut Sticky Rice, Recipe #105013. The cooking time does not include the marinating time of 2-3 hours. Hint: I made the 2nd batch of marinade right before I cooked the chicken.

1 1/2 lbs boneless skinless chicken breasts, cut in thin pieces
3/4 cup water
1/2 cup soy sauce
3/4-1 cup brown sugar (I use the 3/4 cup as we don't like ours that sweet)
1/4 teaspoon garlic powder
1/8 teaspoon ground ginger
1/2 tablespoon cornstarch
1 tablespoon vegetable oil

Steps:

  • Combine water, soy sauce, brown sugar, garlic and ginger.
  • Whisk to mix well.
  • Marinate chicken in half of sauce 2-3 hours, turning once.
  • Stir cornstarch into remaining sauce and bring to boil over medium-high heat, stirring constantly, until mixture boils and thickens slightly (I did this step right before cooking chicken).
  • Cool this mixture to room temperature.
  • Drain marinade off of chicken, reserving 2 tbsp of the marinade; discard remaining marinade.
  • Stir fry chicken in vegetable oil until chicken in almost done.
  • Stir in reserved 2 tbsp of marinade and continue stir frying until chicken is done and glazed.
  • Serve over hot rice with cooled teriyaki sauce.

3 tablespoons olive oil (divided)
2 tablespoons balsamic vinegar
1/2 teaspoon sea salt
1/2 teaspoon black pepper
3 garlic cloves (crushed)
2 tablespoons fresh basil (chopped)
2 chicken breasts
3 roma tomatoes (chopped)
1/4 cup red onion (chopped)
2 garlic cloves (minced)
1 tablespoon fresh basil (chopped)
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons parmesan cheese (grated)
2 large zucchini (spiralized into app. 4 cups zoodles)

Steps:

  • Combine 2 tbsp olive oil, balsamic vinegar, sea salt, black pepper, garlic and basil.
  • Add to a large plastic bag with the chicken and marinate for up to 8 hours. I would recommend at least an hour.
  • Before grilling the chicken, combine all of the tomato basil bruschetta ingredients in a medium bowl. (ingredients from the roma tomatoes, down).
  • Place in the refrigerator until ready to serve the bowls.
  • Remove the chicken from the marinade and place on a grill over medium heat for 10-12 minutes per side.
  • While the chicken is grilling, add the remaining 1 tbsp olive oil to a large skillet, then add the zucchini noodles and saute 3-5 minutes.
  • Divide the zucchini noodles between two bowls. Once the chicken is grilled, slice it up and place on top of the zoodles. Spoon the bruschetta over the chicken and zoodles.

8 ounces soba noodles, halved
1 tablespoon sesame oil
2 tablespoons vegetable oil
2 boneless skinless chicken breasts, sliced crosswise into 1/3-inch slices
6 green onions, sliced diagonally into 1-inch pieces
1 carrot, peeled, thinly sliced diagonally
1/4 teaspoon crushed red pepper flakes
6 tablespoons teriyaki sauce

Steps:

  • Cook noodles in large pot of boiling salted water until just tender.
  • Drain well; return to pot.
  • Add sesame oil and toss to coat.
  • Heat vegetable oil in heavy large skillet over high heat.
  • Sprinkle chicken with salt and pepper.
  • Add chicken to skillet and saute until no longer pink, about 2 minutes.
  • Add sliced green onions, carrot and crushed red pepper.
  • Stir-fry until vegetables are crisp-tender but still bright in color and chicken is cooked through, about 2 minutes longer.
  • Add noodles and teriyaki sauce and toss to blend well.

  • Meanwhile, spiralize your zucchini and set aside. Add the teriyaki sauce ingredients to a small bowl and whisk together. Also get your cornstarch mixture ready in another small bowl and chop the scallions if using.
  • When the chicken is about done, reduce the heat to medium and add the teriyaki sauce mixture and the cornstarch mixture to the skillet. Stir well so the chicken is coated, and let it bubble (it will thicken fast) for a minute or two.
  • Add the zucchini noodles to the skillet and using tongs, toss them with the teriyaki chicken. The zucchini will release water. Don't cook the zoodles for too long or they will get limp and watery. I warm them through for a couple of minutes max, tossing continuously.
