2 dozen chicken wings, about 3 1/4 pounds, rinsed and patted dry
Salt and freshly ground black pepper
Olive oil
1 tablespoon sesame seeds, toasted in a skillet over medium heat until lightly browned
Leaves from 1/2 bunch fresh cilantro, chopped
1 cup low-sodium soy sauce
1 cup grapefruit juice
1/4 cup hoisin sauce
1/4 cup ketchup
3 tablespoons rice wine vinegar
1/4 cup brown sugar
1 fresh, hot red chile, halved
5 garlic cloves, halved
2-inch piece fresh ginger, smashed with the side of a large knife

Steps:

  • Preheat the oven to 400 degrees F.
  • Season the chicken wings with salt and pepper and drizzle a little olive oil on them to prevent sticking. Lay the wings in a single layer on a baking sheet. Bake for 30 minutes or until the skin gets crispy and the wings are cooked through.
  • Meanwhile, combine the teriyaki sauce ingredients in a large saucepan. Simmer over low heat and reduce until slightly thickened. Pour the sauce into a large bowl. Dump the wings into the bowl and toss to coat them with the sauce. Transfer to a serving platter and sprinkle with the sesame seeds and cilantro. Serve hot.

2 pounds boneless, skinless chicken thighs
1 cup low-sodium soy sauce
1/2 cup packed brown sugar
1/2 cup honey
1/4 cup seasoned rice wine vinegar
1/4 cup vegetable oil
2 tablespoons Asian chili sauce
2 tablespoons lime juice
1 tablespoon grated fresh ginger
1 tablespoon toasted sesame oil
1 tablespoon hot chili oil
1 teaspoon freshly ground black pepper
4 scallions, sliced, whites and greens separated
2 cloves garlic, minced
One 12-ounce package soba noodles
6 mini bell peppers, thinly sliced into strips
2 tablespoons fresh cilantro leaves
1 tablespoon toasted sesame seeds

Steps:

  • Add the chicken thighs to a large resealable freezer bag.
  • In a medium bowl or large mason jar, combine the soy, sugar, honey, rice wine vinegar, vegetable oil, Asian chili sauce, lime juice, ginger, sesame oil, hot chili oil, pepper, scallion whites and garlic. Whisk or shake until the sugar has completely dissolved.
  • Add a third of the marinade to the bag with the chicken and toss to completely cover. Marinate for at least 2 hours and up to overnight. Refrigerate the remaining marinade in a jar, covered, until ready to cook.
  • Cook the soba noodles according to the package instructions. Rinse until cool, then set aside in a bowl.
  • Heat a grill pan or cast-iron pan over medium heat.
  • Remove the chicken from the marinade. (Discard any used marinade left in the freezer bag.) Cook the chicken, turning, until cooked through, 2 to 3 minutes a side. Remove to a cutting board and slice into strips.
  • Add the reserved jarred marinade to a medium pot over medium-high heat. Bring to a boil and remove from the heat. Pour half of the marinade over the noodles in the bowl and toss until completely coated and warmed through. Add the sliced peppers and toss.
  • Pile the noodles onto a platter, arrange the sliced chicken on top and garnish with the reserved scallion greens, cilantro and toasted sesame seeds. Serve the remaining hot marinade in a pitcher on the side.
  • To make ahead: This makes a great kit meal. Put the chicken in a large resealable freezer bag. Make the marinade and pour one-third over the chicken, seal the bag and coat. Save the remaining marinade in a mason jar and seal. Put the cooled rinsed noodles in a resealable freezer bag. Put the sliced peppers in a resealable freezer bag. Put the sesame seeds and scallions in tiny disposable containers with lids. Put the cilantro in a small resealable freezer bag. Put everything on a sheet pan and store in the fridge. When you are ready to cook, follow the instructions above.

⅓ cup low sodium soy sauce
2 tablespoons honey
2 tablespoons brown sugar
1 tablespoon sesame seed

Steps:

  • Preheat oven to 400˚F/200˚C.
  • Remove excess moisture from chicken wings with a paper towel.
  • In a large bowl, stir in baking powder and salt until chicken is thoroughly coated.
  • Bake on a baking rack for 1 hour, or until golden brown and crispy, flipping every 20 minutes. (For best results, place baking rack on a baking sheet covered with parchment paper or foil to catch drippings).
  • In a skillet, combine soy sauce, honey, and brown sugar on medium heat. Bring to a boil and add in sesame seeds.
  • Once sauce is thickened, stir in chicken wings until fully coated.

1 cup water
1 cup soy sauce
1 cup white sugar
¼ cup pineapple juice
¼ cup vegetable oil
1 tablespoon minced fresh garlic
1 tablespoon minced fresh ginger
3 pounds chicken wings or drumettes

Steps:

  • Whisk together the water, soy sauce, sugar, pineapple juice, vegetable oil, garlic, and ginger in a large glass or ceramic bowl until the sugar has dissolved. Add the chicken wings, coat with the marinade, cover the bowl with plastic wrap, and marinate in the refrigerator for at least 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease baking dishes, and set aside.

- 10 fresh whole chicken wings
- chicken wing dry rub, as needed, recipe follows
- sesame teriyaki sauce:
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- two cloves garlic, crushed
- 1 teaspoon minced fresh ginger
- 1/4 teaspoon finely ground black pepper
- three scallions, cut on a diagonal

Steps:

  • with a sharp knife, cut the tips off the chicken wings and save them for stock. Slash The inside of the wing joint to help them cook more evenly, but don't cut them all the way through. Sprinkle liberally with the chicken wing dry rub. Set aside.
  • To make the sauce, mix the soy sauce and brown sugar together in a medium microwave safe bowl. Add the oil, rice vinegar, garlic, ginger, and pepper. Mix well. Microwave on high for one minute. Stir, and microwave on high for another 30 seconds. Set aside.
  • Prepare the grill for cooking over direct medium heat. Grill the wings for about 25 minutes, turning often. The wings are done when they are nicely browned and the juices run clear. Remove the wings to a platter. You may serve the wings whole but if you prefer to serve them in individual segments, cut them apart now. Transfer the wings to a bowl. Pour the sauce over the wings. Toss to coat well. To serve, transfer to a platter and top with scallions. Serves 10
  • Chicken wing dry rub: 2 tablespoon salt 2 tablespoons sugar in the raw 2 tablespoons granulated garlic 2 tablespoons onion powder 2 tablespoons paprika 2 teaspoons good-quality chili powder 2 teaspoons finely ground black pepper 1 teaspoon lemon pepper 1 teaspoon ground cumin 1/4 teaspoon cayenne pepper mix together and store in an airtight container. Makes about 3/4 cup.

15 ounces teriyaki sauce (no more than 2 grams sugar per serving)
6 tablespoons sesame oil
1/4 teaspoon minced garlic
1 lemon, juiced
1 tablespoon sugar substitute (recommended: Splenda)
2 pounds boneless, skinless chicken thighs
1 tablespoon sesame seeds, toasted
1 cantaloupe half filled with melon balls, optional

Steps:

  • Soak bamboo skewers in water for 1 hour to keep from burning later.
  • Mix all marinade ingredients together in a non-reactive container large enough to hold all of the chicken. Cut chicken into 1/2-inch strips and submerge them in the marinade, cover, and refrigerate for at least 1 hour.
  • Preheat oven to 375 degrees F.
  • Thread 1 chicken strip on each skewer towards end of the stick, and line up on a sheet pan. Place in oven and bake for about 30 minutes, or until fully cooked through. 2 tbsp toasted sesame oil
6 skinless and boneless chicken thighs, sliced
2 large garlic cloves, crushed
1 thumb-sized piece ginger, grated
50g runny honey
30ml light soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame seeds , to serve
4 spring onions, shredded, to serve
sticky rice, to serve
steamed bok choi or spring greens, to serve

Steps:

  • Heat the oil in a non-stick pan over a medium heat. Add the chicken and fry for 7 mins, or until golden. Add the garlic and ginger and fry for 2 mins. Stir in the honey, soy sauce, vinegar and 100ml water. Bring to the boil and cook for 2 - 5 mins over a medium heat until the chicken is sticky and coated in a thick sauce.
  • Scatter over the spring onions and sesame seeds, then serve the chicken with the rice and steamed veg.

1 cup soy sauce
2/3 cup water
1 cup brown sugar
2 tablespoons dry mustard
