TENDER HOMEMADE SOUR CREAM BISCUITS (NO-FAIL RECIPE)
I've tried biscuit recipes for most of my life. Some work, some don't. Some are ok, but this one is GOOD. And it's an easy NO-FAIL recipe. I haven't even tried another one in years. I've been making these for a very long time now, and cannot remember where it came from. :/ But if you love homemade biscuits and have never had very good luck with them, this one will make you smile and feel proud! Enjoy!! :D Happy to share! (*Sorry about the awful pic. I've been sick and was so tired I didn't get out my rolling pin and just patted the dough, hence why they are a bit lopsided. Normally they are picture perfect. So don't worry, yours will be. ;) )

Steps:
- In medium-sized bowl, whisk first 4 ingredients til well mixed.
- Add sour cream in spoonfuls on top, add oil and mix til all is just moistened with a spoon. Switch to using your hands turning the dough to get all the last of the dry stuff on the bottom of the bowl. Knead 8 times on floured surface.
- Roll thick to only about an 8" circle. Just a few passes with your (floured) rolling pin. Cut out 6 biscuits with a biscuit cutter or a floured glass. Get 2 more out of the last of the dough. (Bunch it back together, knead it just a bit, pat or roll it and cut.) Pitch any last little tidbit if any left. I place mine on my old round metal pizza pan covered with foil and sprayed with butter-flavored Pam. But a cookie sheet will work just fine.
- Place little pats of butter on top, or spread it a little if the butter is VERY soft and doesn't deflate the biscuits while doing so. Bake in hot, preheated 425 oven for 12-15 minutes (ovens vary) or til golden brown on top. Remove from oven and butter tops again with other half of butter. Serve warm with more butter and homemade jam or honey. Makes 8 tall sour cream biscuits.
SIMPLE SOUR CREAM BISCUITS
This recipe is perfect for those of us who love homemade biscuits, but only cook for 1 or 2 people. You'll have 4 fresh, warm, tender biscuits on your plate in only 15 minutes. These biscuits cook up so quickly, that you can enjoy them any time of day! Eat them for breakfast, spread with butter, jelly, or honey, or use them to wipe up every drop of gravy off your dinner plate. Also try placing the raw biscuits on top of your favorite pot pie filling, and you'll have a hearty, comforting meal. This is a great way for new cooks to learn how to make biscuits!!

Steps:
- Combine flour and baking soda, then add remaining ingredients, stirring just to combine.
- Place dough on floured surface, knead 4-6 times, then cut into 4 biscuits--you can just use a knife to divide the dough into 4 squares, or use a biscuit cutter for the classic round shape-if you don't have a biscuit cutter, use a drinking glass turned upside down.
- Brush tops of biscuits with melted butter, or just lightly spray with non-stick cooking spray.
- Bake at 425 degrees for 10 to 12 minutes or until golden brown.

- Place flour in a mixing bowl and add in sour cream. Stir with a spatula / wooden spoon first then finish by hand until the mixture comes together to form a dough. Don't over-mix.
- Scrape dough onto a lightly floured counter and dust the top lightly with flour. Roll or simply pat into a disc of approximately 1-inch thickness. Cut into 4 or 6 pieces using a bench scraper (or a knife). Slide the bench scraper underneath each piece to transfer the biscuits onto the baking sheet. Space the biscuits at least 1.5 inches apart as they will rise during baking. Do work quickly otherwise the dough will start to get sticky.
- Bake for 20 to 25 minutes until the top is golden-brown. Let cool on a wire rack. Serve warm or at room temperature.
