NEGRONI MOCKTAIL
A negroni is all booze (equal parts gin, Campari and sweet vermouth), but we flipped the switch and made an alcohol-free version of the classic cocktail. Bitterness comes from the bottled nonalcoholic aperitivo and vermouth. And to mimic the botanical flavor of gin, we add a touch of grenadine for sweetness and tonic water for a hint of floral effervescence. Do not forget the orange peel (a classic garnish for this drink) - simply use a vegetable peeler to shave a thin piece of peel from a fresh navel orange.

- Stir the nonalcoholic gin, aperitivo, vermouth and grenadine in a shaker with ice until chilled. Strain into an old-fashioned glass and add 1 large ice cube. Pour over the tonic and garnish with an orange peel.

Steps:
- Pour the gin, vermouth and Campari into a mixing glass or jug with ice. Stir well until the outside of the glass feels cold.
- Strain into a tumbler and add 1 large ice sphere or some fresh ice, and garnish with an orange slice, using a blood orange when in season.

- Steep the tea infusion. After 1 minute, filter and place the leaves at the bottom of the teapot. Add the Campari, gin and vermouth, allowing to infuse for 1 minute. Add plenty of ice to the teapot and close. Mix by moving the teapot with a circular motion for 10 seconds. Garnish and serve.
- For the tea infusion, combine 1 tsp. Assam tea, 1 cinnamon stick (broken into pieces) and and a handful of dried rose petals.
