GINILING NA BABOY
Pork Giniling is a hearty and tasty stew made with ground pork, carrots, potatoes, and fresh tomatoes. It's easy to make in 30 minutes and in cooks in one pan.

Steps:
- In a pan over medium heat, heat oil.
- Add onions and garlic and cook until softened.
- Add ground pork and cook, breaking into pieces with the back of a spoon, until lightly browned. Drain any excess grease.
- Add fish sauce and continue to cook for about 1 to 2 minutes.
- Add tomatoes and cook, mashing with the back of a spoon, until softened and release juices.
- Add water and bring to a boil. Lower heat, cover and continue to simmer until meat is tender and fully cooked. Add more water in 1/2 cup increments as necessary to maintain 1 cup of liquid.
- Add potatoes, carrots, and raisins and cook until liquid is mostly reduced, vegetables are tender, and raisins are softened.
- Add bell peppers and cook until tender-crisp. Season with salt and pepper to taste. Serve hot.

Steps:
- Saute ginger in oil till fragrant.
- Add in the garlic, stir fry.
- Dump in ground pork and stir vigorously.
- When meat is no longer pink, add in the black bean garlic sauce and soy sauce.
- Let mixture simmer in low heat, covered, 10 minutes.
- Pour in hot water.
- Simmer another 10 minutes to let flavors blend.
- Dump in leeks last 2 minutes of cooking.

Steps:
- In a hot pan, add the oil and stir fry garlic and chili until fragrant.
- Add pork and continue to stir fry on medium heat until almost ready.
- Keep stir frying and add pork stock as needed.
- Add oyster sauce, fish sauce, sugar.
- Increase heat to high and add fresh thai basil. Keep stir frying for few seconds.
- Serve with white basmati rice and fried eggs.

Steps:
- Cover beans in cold water and soak uncovered, overnight.
- Drain, transfer back to the pot and cover in 5 cups of cold water. Bring to a boil and simmer for about 1 hour and 15 minutes.
- Drain and puree with a hand blender or in a food processor.
- Press through a metal sieve. Note: This is time consuming work. The pureed beans become a thick paste and it takes some time to press through the sieve, clean off the underside, continue pressing until most of the bean puree passes through and the skins are left behind.
- Heat oil in a medium saucepan over medium-high heat. Add pureed beans and sugar. Stir with a wooden spoon for about 3-5 minutes. Transfer to a bowl, cover with plastic wrap, and allow to cool.
- After the paste has cooled, scoop out 1/2" balls. Cover loosely with plastic wrap so they won't dry out.

TAIWANESE BRAISED MINCED PORK
Steps:
- 1. Add the oil to a large Wok or skillet. Add the ginger, garlic, shallots and mushrooms. Cook until softened and the mushrooms have given up their liquid. Add the ground pork and star anise.
- 2. Cook until the pork is done. Add the shaoxing wine, rock sugar, mushroom soy sauce, dark soy sauce, oyster sauce, and white pepper. Add the water and bring to a boil.
- 3. Simmer 20 minutes until most of the water is absorbed. Stir in the mustard stems and green onions. Remove the star anise Serve over rice noodles.

- Push pork on the side then add garlic, ginger, onions and red chillies, sauté until fragrant. Now stir and combine with pork.
