Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place melted butter or margarine in a shallow dish or bowl, then place potato flakes in a separate shallow dish or bowl. Roll chicken pieces in butter or margarine, then in potato flakes. Place coated chicken pieces in a 9x13 inch baking dish, skin side up.
- Bake at 400 degrees F (200 degrees C) for 1 hour.

BBQ CHICKEN TATER TOT SKILLET
A twist on a traditional Midwestern tater tot hot dish, this BBQ Chicken Tater Tot Skillet goes from stove to oven, to the table in just one pan.

- Preheat oven to 425 degrees.
- Prepare the chicken breasts: Place the chicken breasts on a cutting board and cover with plastic wrap. Pound the chicken with a meat mallet until each piece is of even thickness, about 1 - 1 1/2 inch thick. Season both sides of the chicken with salt and pepper (a few pinches of each).
- Cook the bacon over medium heat until crispy. Remove the bacon, reserving the fat, and transfer to a plate lined with paper towels. Drain off some of the fat, leaving about 1 tablespoon in the pan. Add the chicken breasts to the pan and cook through, about 8-10 minutes. Remove the chicken from the pan and set aside.
- Add the onion, garlic, and peppers to the pan. Cook them until the soften, about five minutes. While the veggies are cooking, shred the chicken.
- Add the chicken stock to the pan with the veggies and bring it to a boil. Scrape all the browned bits off the bottom of the pan. Add the oregano and salt and stir. Sprinkle the flour over the top of the veggies and stir until the mixture thickens. Add the shredded chicken to the pan and stir it all to combine.
- Add the BBQ sauce to the pan and stir to combine. Turn the heat off and top the BBQ chicken with the shredded cheese. Top the cheese with the frozen tater tots. Sprinkle the crispy bacon over the top.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the dish is bubbling and the tater tots are hot and baked through. Garnish with chopped parsley before serving.

TATOR TOT CHICKEN POT PIE CASSEROLE

- Heat 2 tablespoons butter in a large pot over medium-high heat. Add the chicken and cook for 7-10 minutes, stirring occasionally, until no longer pink. Remove chicken from the skillet and set aside.
- Melt remaining 4 tablespoons of butter in the same skillet. Add onions, celery, and carrots and cook until tender, about 7-10 minutes. Add garlic and cook another minute.
- Preheat oven to 400° F.
- Sprinkle flour over vegetables and mix well until combined; cook 1 minute.
- While mixing, slowly pour in the chicken broth then the milk. Simmer over medium heat for about 5-7 minutes, or until thickened to gravy consistency.
- Stir in ground thyme, ground nutmeg, salt and pepper, then mix in the cooked chicken, peas and corn.
- Transfer mixture to a 9 x 13 inch (or 3-4 quart) baking dish. Top with cheddar cheese then tater tots. Bake for 40-45 minutes or until hotdish is bubbling and tater tots are golden and crispy.

- Spray a 13x9-inch baking dish with cooking spray and preheat the oven to 350 degrees.
- Heat oil in an 8- or 10-inch nonstick skillet over medium heat. Sauté onion in oil 3 to 5 minutes, stirring occasionally, until tender.
- Using a medium bowl, combine onion, condensed soup, sour cream, milk, 1 cup of cheese, 2 tablespoons of dressing mix, and the black pepper; stir in the chicken.
- In the baking dish, layer half of the frozen potatoes on the bottom. Spoon and spread the chicken mixture on top of the potatoes; sprinkle with 1/4 cup of the bacon.

- Preheat oven to 375°F.
- In a skillet over medium heat, brown ground beef and onions until no pink remains. Drain, and place in a large mixing bowl.
- Add both cans of soup, frozen vegetables, ½ cup of cheddar cheese, both cans of soup, garlic powder, worcestersire sauce, and Italian seasoning.
