ROASTED CAPRESE BITES

12 Campari tomatoes
3/4 teaspoon kosher salt
12 small fresh basil leaves, chopped
12 mozzarella ciliegine, dried well
1/4 cup panko breadcrumbs
1 1/2 tablespoons olive oil
1/2 teaspoon dried oregano

Steps:

  • Preheat the oven to 450 degrees F.
  • Using a small serrated knife, cut off the top eighth of each tomato and hollow out the insides, leaving the sides intact. (Discard the seeds and insides.) Slice a small sliver off each tomato bottom so it sits flat. Drain well on paper towel, taking care to dry the inside.
  • Sprinkle the tomatoes with 1/4 teaspoon salt. Stuff each tomato with a pinch of the chopped basil and a mozzarella ball and set on a small rimmed baking sheet.
  • Combine the breadcrumbs with the olive oil, oregano and the remaining 1/2 teaspoon salt in a small bowl. Divide the mixture among the tops of the tomatoes.
  • Bake until golden and the cheese is melted, about 10 minutes. Allow to cool for 10 minutes, then serve warm.

⅓ cup honey

Steps:

  • Preheat oven to 400°F (200°C).
  • On a parchment-lined baking sheet, season both sides of the chicken with olive oil, salt, pepper, garlic powder, and oregano.
  • Bake for 30 minutes, or until cooked through and juices run clear.
  • While the chicken is in the oven, combine the balsamic vinegar and honey in a sauce pot and simmer, stirring occasionally.
  • NOTE: It should take about 20 minutes for the mixture to reduce.
  • Once the glaze has reached your desired thickness, remove it from the heat and set aside.
  • Remove the chicken from the oven and top with slices of mozzarella and tomato.
  • Broil for 8-10 minutes, or until the cheese is melty and the tomatoes are slightly charred.
  • While the chicken is broiling, you can chiffonade (cut into thin strips) the basil.
  • Drizzle the balsamic glaze over the chicken and top with basil.

4 tsp extra-virgin olive oil
3 fat garlic cloves, crushed
1 small onion, finely chopped
Large sprig fresh rosemary, leaves picked and chopped
600g canned chopped tomatoes
1 tbsp sun-dried tomato purée
1 fresh bay leaf
300g penne
2 x 125g balls half-fat mozzarella, drained and cut into 1cm pieces
Handful fresh basil, leaves picked
60g rocket leaves
1 tsp balsamic vinegar

Steps:

  • Put 3 tsp of the olive oil and the crushed garlic into a medium pan and place over a medium heat. As soon as the garlic starts to sizzle, add the finely chopped onion and chopped rosemary leaves and cook gently until very soft but not browned. Add the tomatoes, sun-dried tomato purée and bay leaf and leave to simmer for 15-20 minutes, stirring every now and then, until reduced and thick. Season to taste, and remove the bay leaf.
  • Meanwhile, bring a large pan of lightly salted water to the boil. Drop the penne into the boiling water and cook for 13 minutes or until al dente. Drain well, return to the pan and stir in the tomato sauce, diced mozzarella and basil leaves. Divide the pasta among 4 warmed bowls.
  • Toss the rocket leaves with the balsamic vinegar and the remaining 1 tsp olive oil, pile on top of each bowl of pasta and serve.

Have you ever had one of those super awesome hors d'oeuvres at a party or wedding and then found yourself wanting that same thing every day for the next month? Well... this is one of those dishes. It's fresh, garlicky, balsamicky, and it's pretty!

1 whole wheat baguette
4-5 roma tomatoes
1 bunch fresh basil
1/2 lb mozzarella cheese, the fancy kind
1 medium-large red onion
3 Tbsp balsamic vinegar
1/4 c extra virgin olive oil
1 Tbsp of each: minced garlic, italian seasoning, grated parmesan cheese
1 Tbsp margerine or butter
1 Tbsp sugar
salt and pepper to taste

Steps:

  • 1. Slice the baguette about a 1/4-1/2 inch thick, you'll and get about 26-30 slices. Slice the tomatoes, making sure to get enough for 1 per crostini. Slice the mozzarella cheese about the same size as the tomatoes, maybe a little thinner.
  • 2. Very thinly slice the onion. Toss them in a warm saucepan with 1 tbsp of margerine, the sugar and salt & pepper to taste. After about 2 minutes of tossing, dump the balsamic vineger in the pot, stir, and cover for another few minutes before stirring again. Repeat until the onions are purple and very soft.
  • 3. In a small bowl, combine the oil, garlic, parmesan, and seasonings and microwave for about 1 minute. This will infuse the oil. Brush each slice and broil for a couple minutes- until edges are brown.
  • 4. On each slice, put a tomato, followed by a small piece of basil, then a piece of the mozzarella. Lastly, top with a few of the balsamic onions and shake a small amount of parmesan on the whole platter. Eat them right away or you might not get any!

I don't consider myself a baker, but I do enjoy baking shows like The Great British Bake-Off. And sometimes on a rainy afternoon, I get inspired to have some fun and try something new. This is my attempt at a homemade flatbread . . . it turned out surprisingly well!

2 cups all-purpose flour, plus more for kneading
1/2 teaspoon active dry yeast
1 teaspoon sea salt, plus more as needed
1/4 teaspoon sugar
1 cup warm water (105°F to 110°F)
Extra virgin olive oil
4 ounces fresh mozzarella, cut into 1/2-inch cubes
1/2 pint grape tomatoes, sliced into 1/4-inch-thick rounds
Handful of fresh basil leaves

Steps:

  • Combine the flour, yeast, salt, and sugar in a large bowl and whisk to blend. Stir in the water until it forms a rough dough.
  • Sprinkle some flour on a counter or cutting board. Turn the dough out onto the board and sprinkle a bit more flour on top. Knead until the dough becomes a smooth ball, 3 to 4 minutes, adding more flour as needed. Cover the dough with a clean kitchen towel and let it rest on the counter for 10 minutes.
  • Preheat the oven to 425°F. Coat a baking sheet with cooking spray.
  • Roll the dough into a 9x17-inch rectangle and transfer it to the prepared pan. Drizzle with a bit of olive oil and bake 18 to 20 minutes, until golden and crisp.
  • Meanwhile, combine the mozzarella and tomatoes in a medium bowl. Slice the basil into ribbons and add them to the bowl, along with a drizzle of oil. Season with salt.
  • Transfer the flatbread to a cutting board. Scatter the mozzarella mixture on top. Cut the flatbread lengthwise, then into triangles. Serve immediately.

6 cups vegetable broth
½ teaspoon baking soda
2 sprigs fresh thyme

Steps:

  • Combine oil, onion, celery, and garlic over medium heat in a large pot. Sauté for 3 minutes until onions are translucent.
  • Add salt, pepper, tomato paste, basil, crushed tomatoes, broth, baking soda, and thyme. Bring to a boil.
  • Lower heat and cover, simmering for 15 minutes.
  • Uncover and remove thyme.
  • Use an immersion or countertop blender to blend the soup until smooth.
  • Allow to cool 2 minutes and serve topped with basil.

  • First put the tomatoes in a bowl and pour boiling water over them. Leave them for 1 minute, then drain and slip the skins off using a cloth to protect your hands if necessary. You can watch how to do this in our Cookery School Video on tihs page. Then slice the tomatoes thinly. All you do now is arrange the slices of Mozzarella and tomato in layers, either in rows or concentric circles, on a serving dish. Scatter the whole basil leaves over them, then, just before serving, sprinkle with plenty of salt and freshly milled black pepper and drizzle the oil all over. 1 1/2 tablespoons freshly grated Parmesan cheese
1 large thinly sliced plum tomato
8 to 9 leaves fresh basil
3 oz very thinly sliced, about 8 or 9 slices fresh mozzarella cheese
salt
black pepper

Steps:

  • Preheat oven to 400 °F. Line a baking sheet with parchment paper and set aside.
  • On a lightly floured surface, unfold the pastry. Using a 3-inch round cookie cutter, cut out 8 or 9 rounds; place rounds on the prepared baking sheet. Prick the pastry rounds all over with a fork. Sprinkle each with about 1/2 teaspoon Parmesan. Bake rounds for 5 minutes. Remove from oven.
  • Top each tart with a slice of tomato, basil leaf and mozzarella slice. Bake for 10 minutes or until puffed and golden. Season with salt and pepper, to taste, and serve.
