BEEF TAQUITOS

Like tacos, only neater to eat. In Mexico, they're often deep-fried, but baking them works well too. It's easier and healthier, and the tortillas still turn golden brown and crispy around the edges. Serve with salsa and sour cream.

1 tablespoon vegetable oil, plus more
vegetable oil, for brushing on the taquitos
1 medium onion, finely chopped
1 garlic clove, minced
3/4 lb lean ground beef
1/2 cup salsa, plus more salsa, for dipping
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
10 (6 inch) flour tortillas
1/2 cup cheddar cheese or 1/2 cup monterey jack cheese, shredded
sour cream

Steps:

  • Heat the oven to 400°. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook them for 3 minutes, stirring often. Add the beef and use a wooden spoon or a spatula to break it up while it cooks, until it is no longer red, about 3 minutes. Stir in 1/2 cup of the salsa, the chili powder, and the salt and pepper. Cook the mixture over low heat, stirring occasionally, for 10 minutes.
  • Place the tortillas on a plate and cover them with damp paper towels. Microwave them until warm and pliable, about 45 seconds. Top each tortilla with 2 tablespoons of the beef mixture, spreading it to an inch from the edges. Sprinkle cheese evenly over the beef.
  • Roll up the tortillas and place them on a foil-lined baking sheet with the seam sides down. Brush the taquitos lightly with vegetable oil, then bake them until the filling is heated through and the tortillas are lightly browned, about 8 to 12 minutes. Serve them hot with sour cream and/or salsa.

Steps:

  • Heat oil in a skillet over medium-high heat.
  • Combine roast beef, pepper jack cheese, and green chilies in a bowl. Use a fork to break up the beef and mix ingredients.
  • Fry tortillas in hot oil just long enough to soften, just a few seconds; drain on a plate lined with paper towels.
  • Begin spooning beef mixture into tortillas making a line down the middle of the tortilla. Roll tortilla around the filling and place in frying pan with the edge of the rolled tortilla facing the bottom of the pan. Cook until the tortillas are completely browned, 5 to 8 minutes per side. 1-2 chipotle peppers in adobo sauce (, minced)

12 7- inch flour tortillas (, (you can use corn tortillas if you prefer))
2-3 cups canola oil for frying (, (or 1 tablespoon canola oil to brush the tortillas with if baking))
Creamy Avocado Salsa Verde (, (recipe here))
Pico de Gallo (, (recipe here))
Shredded lettuce
Shredded cotija cheese
Mexican crema or sour cream

Steps:

  • In a medium bowl, toss the shredded chicken breast with the chipotle peppers and adobo sauce until well combined. Add more or less peppers and the adobo sauce to your liking.
  • To assemble, lay the tortillas on a work surface and fill the bottom third of each tortilla with 1/3 cup of the shredded chicken mixture and sprinkle with 1/4 cup of the shredded cheese. Roll the tortillas up tightly and secure the end with a toothpick inserted into the seam.

Happy Taco Tuesday! This Really Really Easy Taquitos recipe is a partnered effort with Mirum and Mission Tortillas. All recipes and opinions are my own.

6 large flour tortillas (burrito size)
1 can chicken (drained (12.5 ounce) -or- 2 cups cooked shredded chicken)
1 cup shredded Mexican/Fiesta blend cheese
1 tablespoon taco seasoning
optional: olive oil

Steps:

  • In a bowl, mix together chicken, cheese, and taco seasoning.
  • Cut each tortilla in half, then starting at the wide end, make a line of meat/cheese.
  • Roll tightly and set on a parchment lined baking sheet.
  • Spray or baste with olive oil (this is optional, but it will help them brown), and bake at 350 degrees for about 20 minutes or until browned and cooked through.
  • Cut in half and serve with Cilantro Garlic Sauce or Restaurant Style Roasted Tomato and Garlic Salsa.
  • Enjoy!

2 cups shredded rotisserie chicken
1 cup shredded mild white Cheddar cheese
1/2 teaspoon ground cumin
1/2 cup chunky prepared salsa, plus more for serving, optional
Eight 6-inch flour tortillas
1/2 cup sour cream, for serving, optional

Steps:

  • Add enough oil to a heavy bottom straight-sided pan to come 2 inches up the sides. Heat over medium heat to 350 degrees F on a deep-fry thermometer.
  • Meanwhile, mix together the chicken, Cheddar, 1/2 cup salsa and the cumin in a medium bowl. Spoon about a 1/4 cup of the mixture into the center of each tortilla. Roll the tortillas tightly around the filling and secure with a toothpick.
  • Working in batches of 2 or 3 at a time, place the taquitos in the hot oil and fry, flipping as needed to brown evenly, until crispy and golden brown, about 3 minutes. Using tongs, remove the taquitos to a paper-towel lined plate to drain. Continue with the remaining taquitos. Serve alongside salsa and sour cream for dipping, if desired.

1/2 teaspoon garlic powder

Steps:

  • Place the chicken, salt, pepper, chili powder, garlic powder, cumin, cheddar cheese and Monterey Jack cheese in a bowl. Stir until combined.
  • Wrap the tortillas in a damp paper towel and place on a plate. Microwave for 1 minute or until tortillas are warm and pliable.
  • Lay out the tortillas on a flat surface and divide the chicken and cheese mixture among the 12 tortillas. Roll up each tortilla tightly and secure with a toothpick.
  • To fry the taquitos: Heat 3/4 inch of oil in a deep pan to 350 degrees F. Add 3-4 taquitos and fry until crisp and golden brown, 3-5 minutes. Repeat with remaining taquitos.
  • To bake the taquitos: Preheat the oven to 425 degrees. Place the taquitos in a single layer on a sheet pan coated with cooking spray. Spray the tops of the taquitos with the cooking spray. Bake for 15-20 minutes or until crispy and golden brown.
  • Remove toothpicks, then serve.

1 (9 3/4 to 10-ounce) can 98-percent fat-free chunk white chicken breast in water, drained and flaked
1/2 cup salsa, plus more, as dip, optional
1/3 cup shredded fat-free Cheddar cheese
1/4 teaspoon dry taco seasoning mix
8 (6-inch) yellow corn tortillas
Fat-free sour cream, as dip, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, combine the chicken and salsa, and mix thoroughly. Cover and refrigerate for 15 minutes.
  • Remove chicken mixture from the refrigerator, and drain any excess liquid. Add cheese and taco seasoning, and mix to combine. This is your filling. Set aside.
  • Prepare a baking sheet by spraying it with nonstick spray. Set aside.
  • Dampen 2 paper towels, and place tortillas between them. Microwave for about 1 minute, until tortillas are warm and pliable.
  • Place one tortilla flat on a clean dry surface (keep the rest between the paper towels), and spoon about 2 heaping tablespoons filling onto the tortilla. Spread it evenly across the entire surface, and roll the tortilla up tightly, so that you have a cigar-shaped tube. Secure with toothpicks, if needed, and place seam-side down on the baking sheet. Repeat with remaining tortillas and filling.
  • Bake in the oven until crispy, 14 to 16 minutes.
  • Allow to cool for 5 minutes. Serve with sour cream and additional salsa for dipping, if using. Enjoy!

15 oz. can pinto beans (rinsed and drained)
1/2 cup red enchilada sauce (store-bought)
¼ cup freshly chopped cilantro
½ teaspoon garlic powder

24 6-inch corn tortillas
For serving:
guacamole
sour cream
queso dip
salsa
diced tomatoes
sliced green onions
cilantro

Steps:

  • In 10-inch skillet over medium-high heat add beef and cook, stirring often, until evenly browned, about 5 minutes. Meanwhile, in a large bowl add beans and mash until paste-like. Once beef is browned, drain and add to bean mixture. Add enchilada sauce, cilantro, and garlic powder to bowl and mix until combined. Season to taste with salt and pepper.
  • Move oven rack to middle position and preheat to 425 degrees F. Line baking sheet with foil and set a wire rack inside baking sheet. Lightly spray a wire rack with nonstick cooking spray and set aside.

Homemade Taquitos image

Crispy Homemade Taquitos (also called Rolled Tacos) made with seasoned shredded beef corn tortillas all of the best toppings. They can be baked or fried and are sure to be your new favorite recipe!

1 2.5-4lb beef chuck roast *
Salt and freshly ground black pepper
14 oz can beef broth
½ cup salsa
1 1/2 Tbsp chili powder
1 teaspoon garlic powder
1/2 Tbsp cumin
1 teaspoon dry minced onion powder
20 corn tortillas
Oil for frying
toothpicks
Salsa
Sour cream
Guacamole
Shredded cheese

Steps:

  • For the Slow Cooker: Season roast with salt and pepper. Add chili powder, garlic, cumin, minced onion, beef broth and salsa. Cook on LOW for 7-8 hours or until meat is tender and shreds easily.
  • Remove roast to a plate and shred the meat. Discard any large pieces of fat. Return to the pot to keep warm.
  • For the Instant Pot: Season roast with salt and pepper. Cut it into four large pieces and place in instant pot. Add chili powder, garlic, cumin, minced onion, beef broth and salsa. Cook on manual/high pressure for 50 minutes. When timer beeps allow the pressure to naturally release before removing the lid (about 15-20 minutes).
  • Remove roast to a plate and shred the meat. Discard any large pieces of fat. Return to the pot to keep warm.
  • Assembly:
  • If frying, add about 1 1/2 inches of oil to a large skillet and heat to medium-high.
  • Drain beef and set aside. Heat a non-stick griddle over medium high heat. Cook tortillas for about 15 - 30 seconds on each side until soft and pliable. Remove tortillas to a plate covered with tinfoil to keep them warm and pliable.
  • Spoon about 2 tablespoons of the meat mixture into a line at one end of a tortilla and tightly roll it up. Use a toothpick to secure it.
  • Fried Taquitos:
  • Your oil should be hot (the tortillas should sizzle immediately when you put them in).
  • Fry the rolled tacos in small batches, for a few seconds on each side, rotating them as they cook, until they are golden and crispy on all sides. Place them on a paper towel lined plate.
  • Baked Taquitos:
  • Preheat oven to 425 degrees F. Spray the tops of the tacos with cooking spray , or brush them lightly with oil. Bake for 15-20 minutes or until the shells are crispy.
  • Serve taquitos with guacamole, shredded cheese, salsa and sour cream.

We fill them with chunks of chicken and melty Colby Jack, but you can customize the ingredients to please even the pickiest of eaters with different proteins and cheeses. 1 pound Roma tomatoes
1 small onion, cut into 8 wedges
1 serrano chile
1 clove garlic
1 tablespoon extra-virgin olive oil
Kosher salt
1 cup chopped rotisserie chicken
1 cup (about 4 ounces) shredded Colby Jack
One 4-ounce jar diced pimientos, drained
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon chili powder
Kosher salt
One 12.6-ounce package small "street-size" corn tortillas (24 tortillas)
1 cup refried beans
Butter-flavored nonstick cooking spray
Sour cream, for serving
Shredded romaine lettuce, for serving

Steps:

  • For the salsa: Preheat a 6-quart air fryer to 350 degrees F (see Cook's Note).
  • Combine the tomatoes, onion, chile, garlic and oil in a large bowl and toss to coat. Transfer to the basket of the air fryer and cook until the skin of the tomatoes and the chile are wrinkled and the onion and garlic are charred, about 10 minutes. Cool slightly.
  • When cool enough to handle, peel the skins from the tomatoes and discard. Remove the stem, seeds and skin from the chile and discard. Place the tomatoes, chile, garlic, onion and 1/4 teaspoon salt in a blender. Pulse until smooth. Set aside until ready to serve.
  • For the taquitos: Combine the chicken, cheese, pimientos, oregano, cumin, paprika, chili powder and 1/4 teaspoon salt in a large bowl and toss.
  • Working in batches, quickly run 4 tortillas under running water. Shake off excess water and place in the air fryer basket. Fry until softened and pliable, 15 to 30 seconds. Fill them while they are still warm: Spread 2 teaspoons refried beans over a tortilla, reserving a bit of bean to dab on the seal. Spread 1 1/2 tablespoons of the chicken filling over the beans. Roll the tortilla over the filling and seal tightly with a little refried bean. Repeat with the remaining tortillas, beans and chicken.
  • Spray all sides of the taquitos generously with cooking spray. Place in the air fryer basket (work in batches if needed) and fry until golden brown and crispy, about 8 minutes. Serve warm topped with some of the salsa and sour cream and shredded lettuce.

  • In a large bowl, stir together the chile powder, salt, cumin, garlic powder, onion powder and black pepper. Add the chicken and toss to coat. Stir in the cheese and green chiles.
  • Working with 1 tortilla at a time, spoon about 1/3 cup of the chicken mixture onto the center of the tortilla. Use your fingers to press the chicken mixture into a tight line across the middle of the tortilla. Tightly roll the tortilla around the filling; secure the tortilla in place using one toothpick. (Weave the toothpick through the tortillas where they overlap to close, parallel to the roll). Repeat with the remaining chicken mixture and tortillas.
  • Preheat the oven to 250°. Heat 1/2-inch of oil in a large cast iron skillet over medium heat until it registers 375°. Fry 4 taquitos, turning occasionally, until golden brown on all sides, 1 to 2 minutes. Transfer to a paper towel lined baking sheet; keep warm in oven. Continue frying until all taquitos are cooked. Serve hot with sour cream, guacamole, and salsa.

1 small chuck roast, cooked and shredded (or similiar cut of meat)
1/2 onion
black peppercorns
corn tortilla
canola oil (for frying)

Steps:

  • To cook meat the mexican way: purchase a small chuck roast or similar cut of meat.
  • Put in dutch over and add barely enough water to cover.
  • Add one half of onion (not need to chop) and some black peppercorns to taste.
  • Cook for approximately 1 1/2 hours.
  • Cool.
  • Shred meat with 2 forks.
  • Heat oil in frying pan to 350 degrees f.
  • Place corn tortillas with tongs into hot oil long enough to just coat with oil and drain on paper towels.
  • Place a couple shreds of meat in the tortilla.
  • Roll up like a cigar and using tongs, lower the tortilla into the oil- gently letting go of the tortilla, fry until crisp.
  • Line a serving platter with shredded lettuce and tomatoes and put taquitos on top with cheese and salsa.

4 tsp smoked paprika
2 tsp ground cumin
2 tsp ground coriander
2 tsp celery salt
5 tbsp olive oil
500g/1lb 2oz turkey mince
6 tsp spice mix (from above)
2 tbsp sherry vinegar
2 banana shallots, finely chopped
1 large garlic clove, grated
1 red pepper, finely chopped
1 yellow pepper, finely chopped
1 green pepper, finely chopped
50g/1¾oz roasted red pepper (from a jar), roughly chopped
1 lime, zest and juice
8 white tortillas
150g/5½oz cheddar, grated
2 knobs butter
salt
guacamole, to serve
tomato salsa, to serve

Steps:

  • To make the spice mix, mix all the ingredients together in a small bowl.
  • To make the taquitos, heat 1 tablespoon of the oil in a frying pan and add half of the turkey mince. Season with 3 tsp of the spice mix. Fry the mince until cooked through, drain off the fat and set aside. Deglaze the pan with the sherry vinegar. Heat 1 tablespoon of the oil in the pan again and cook the remaining turkey mince with the remaining spice mix until cooked through. Drain off the fat and set aside with the cooked mince.
  • In a clean frying pan, heat 1 tablespoon of oil and sweat the shallot and garlic. Do not let it colour. Once softened, add the red, yellow and green peppers and cook for 2-3 minutes. Stir in the roasted pepper, add the mince and mix together. Taste and add more spice mix and a pinch of salt if needed. Any leftover spice mix can be stored in an airtight container and used in another recipe. Stir in the lime zest and juice.
  • Spoon 2-3 tablespoons of the turkey mixture in a line down the centre of each tortilla. Sprinkle cheese over the turkey mixture. Fold over the two opposite ends of the tortilla and then roll to make a burrito-type parcel.
  • Heat a large frying pan and add 1 tablespoon of oil. Place four of the taquitos in the pan, seam-side down. Cook for 2 minutes. Once golden, flip over and cook for another 2 minutes, until golden on both sides. Add a knob of butter, baste the taquitos and remove from the pan. Repeat with the remaining four taquitos.
  • Serve with guacamole and tomato salsa.

  • Place potatoes in a large pot, and add cold water to cover by 2 inches. Bring to a boil over high. Reduce heat to medium-high, and simmer until potatoes are tender when pierced, 35 to 40 minutes.
  • While potatoes simmer, cook poblano directly over a medium flame of a gas stovetop, or under broiler, turning occasionally, until skin is charred and blistered, 11 to 12 minutes. Place chile in a small bowl, and cover with plastic wrap; let steam 20 minutes.
  • Drain potatoes, and let cool slightly, about 20 minutes. Peel potatoes with a sharp paring knife; transfer to a large bowl, and mash until smooth.
