Fresh, fruity flavor makes this pretty salad popular with all ages. Our whole family really digs into its fluffy goodness. I can put it together in the morning or even the night before and pop it in the fridge until suppertime. -Denise Nebel, Wayland, Iowa

3 cups water
1 package (3 ounces) orange gelatin
1 package (3.4 ounces) instant vanilla pudding mix
1 package (3 ounces) tapioca pudding mix
1 can (15 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, drained
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a saucepan, bring water to a boil. Whisk in gelatin and pudding mixes. Return to a boil, stirring constantly; boil for 1 minute. Remove from the heat and cool completely. Fold in oranges, pineapple and whipped topping. Spoon into a serving bowl. Cover and refrigerate for 2 hours.

1 (3 ounce) package orange flavored Jell-O® mix
1 (3.4 ounce) package instant vanilla pudding mix
1 (3 ounce) package instant tapioca pudding mix
1 (15 ounce) can mandarin oranges, drained
1 (8 ounce) can crushed pineapple, drained
1 (8 ounce) tub frozen whipped topping, thawed

Steps:

  • Bring the water to a boil in a large saucepan. Whisk in the orange gelatin mix, vanilla pudding mix and tapioca pudding mix. Return to a boil and cook for 1 minute, stirring constantly. Remove from the heat and allow to cool completely. Fold in mandarin oranges, pineapple and whipped topping. Transfer to a serving bowl and refrigerate for at least 2 hours. Fluff the top using a spoon before serving.

3 cups whole milk
½ cup quick-cooking tapioca
½ cup white sugar
¼ teaspoon salt
2 eggs, beaten
½ teaspoon vanilla extract

Steps:

  • Stir together the milk, tapioca, sugar, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir 5 minutes longer.
  • Whisk 1 cup of the hot milk mixture into the beaten eggs, 2 tablespoons at a time until incorporated. Stir the egg mixture back into the tapioca until well mixed. Bring the pudding to a gentle simmer over medium-low heat; cook and stir 2 minutes longer until the pudding becomes thick enough to evenly coat the back of a metal spoon. Remove from the heat and stir in the vanilla. The pudding may be served hot or poured into serving dishes and refrigerated several hours until cold.

Homemade tapioca pudding topped off with fresh pineapple, strawberries, mangoes, blueberries and blackberries. I haven't had a chance to try this yet, but wanted to put it here for safekeeping. This recipe is from Favorite Brand Name Sunday Suppers cookbook. Time does not include chill time.

1 1/2 cups coconut milk
1 cup milk
3/4 cup sugar, divided
2 eggs, beaten
1/4 cup water
3 tablespoons quick-cooking tapioca
1/2 teaspoon vanilla
1 pinch salt
2 cups fresh pineapple, chunks
2 cups fresh strawberries, quartered
1 cup mango, diced
1 cup fresh blueberries
1 cup fresh blackberries
1 lime peel, grated
2 tablespoons lime juice

Steps:

  • Mix coconut milk, milk, 1/2 cup sugar, eggs, water, tapioca, vanilla and salt in medium saucepan. Let stand 5 minutes. Cook over medium heat, stirring, until full boil. Remove from heat. Cool 30 minutes. (Pudding thickens as it cools.).
  • Spoon into individual dessert bowls. Combine pineapple, strawberries, mango, blueberries and blackberries in large bowl. Stir in remaining 1/4 cup sugar, lime peel and juice; mix well. Spoon over tapioca.
  • Cover; refrigerate 2 to 3 hours before serving.

6 pieces coconut meat, cubed
4 cups coconut juice
5 ounces unflavored gelatin
1 (14 ounce) can sweetened condensed milk (or less)
1 cup half-and-half
250 g tapioca

Steps:

  • Cook coconut juice with gelatin according to package instructions. Depending on how firm you want it to be.
  • Let cool completely and cube. Set aside.
  • Boil water and cook tapioca till transparent about 20 minutes, drain.
  • In a large bowl, combine half and half with sweetened condensed milk, according to your preference of sweetness.
  • Add in cubed coconut, tapioca and gelatin cubes. Blend well and chill at least 6 hours. Serve cold. YUMMO!

1 can Dole pineapple chunks (or tidbits), drained
1 can 3 Diamond mandarin oranges, drained
1-2 cups Jet-Puffed Mini Marshmallows
1 pint whipping cream, whipped or 1 tub (8 oz.) Cool Whip

Steps:

  • Mix orange Jell-O and 2 packages tapioca pudding with the 3 cups water. Cook until bubbly and stirring constantly. COOL completely.
  • Mix in pineapple, mandarin oranges, and marshmallows. Mix in whipping cream or Cool Whip.
  • Blend well and chill.
