2 teaspoons olive oil
1 pound ground pork
1 pound ground bison
1 pound ground beef chuck
3 cloves garlic, minced
2 red bell peppers, chopped
1 jalapeno, seeds removed, chopped
1 large white onion, chopped
1 tablespoon chili powder
1 tablespoon cumin
2 teaspoons chopped chipotle chiles in adobo sauce
1 teaspoon cayenne pepper
Kosher salt and ground black pepper
One 28-ounce can tomato puree
One 28-ounce can crushed tomatoes
1 cup lager-style beer
Two 16-ounce cans red kidney beans, drained and rinsed

Steps:

  • Heat the olive oil in a large Dutch oven over high heat and add the ground pork, ground bison and ground chuck; using the back of a wooden spoon, break up the meat into small pieces and cook until well browned, 10 to 12 minutes.
  • Add the garlic, bell peppers, jalapeno, onion, chili powder, cumin, chipotle, cayenne, 1 teaspoon salt and 1 teaspoon pepper, and cook, stirring occasionally, until the vegetables soften, 6 to 8 minutes.
  • Stir in the tomato puree, crushed tomatoes and beer, bring to a boil, then reduce the heat and simmer for 1 hour, stirring occasionally. Stir in the kidney beans and cook for 10 more minutes. Serve hot.

1 pound dried kidney beans
2 pounds ground beef
2 medium onions, chopped
1 medium green pepper, chopped
2 envelopes chili seasoning mix
1-1/2 teaspoons salt
1-1/2 teaspoons pepper
1 teaspoon sugar
2 cans (28 ounces each) diced tomatoes, undrained
1 can (12 ounces) tomato paste
2 cans (8 ounces each) crushed pineapple, undrained
2 jars (4-1/2 ounces each) sliced mushrooms, drained
3 to 5 jalapeno peppers, seeded and minced
3 cans (11-1/2 ounces each) V8 juice

Steps:

  • Rinse beans and place in a large kettle or Dutch oven; cover with water. Bring to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 to 4 hours or until softened. Drain, discarding liquid; set beans aside. , In a large skillet, cook the beef, onions and green pepper over medium heat until beef is no longer pink; drain. Stir in seasoning mixes, salt and pepper. Pour into an ovenproof 8-qt. Dutch oven. Add beans and remaining ingredients; mix well. Cover and bake at 350° for 1 hour. , Reduce heat to 325°; bake for 4-5 hours or until beans are tender, stirring every 30 minutes.

1-1/2 pounds bulk Italian sausage
3 cans (14-1/2 ounces each) stewed tomatoes
2 cans (16 ounces each) kidney beans, rinsed and drained
1 cup chopped onion
1 large green pepper, chopped
1 can (6 ounces) tomato paste
2 jalapeno peppers, finely chopped
2 tablespoons chili powder
2 tablespoons white vinegar
1 tablespoon spicy brown mustard
1 tablespoon dried oregano

This is one of the dishes I made for a big crowd that will be partying with us on the Fourth of July. (You can cut the recipe in half or you can freeze for a latter day).I used venison but you can use lean beef. Venison is very lean. I use small cubed pieces of meat as well as ground. Gives it more texture. But its melt in your mouth cubes of meat. It really does melt in your mouth. All the different ingredients blend together to give you a nice spicy almost 5 alarm chili. I used Goya beans which are not to be rinsed. Check your cans most do need a rinse.The picture shown is one serving and topped with grated cheddard cheese, sour cream, and Salsa Verde recipe #84339.

14 ounces dark beer
1/2 cup brown sugar
2 (28 ounce) cans crushed tomatoes
8 ounces tomato paste
4 -6 tablespoons chili powder
1 tablespoon parsley
1 tablespoon oregano
1 tablespoon cumin
1 tablespoon salt
1 tablespoon pepper
4 (14 ounce) cans kidney beans, I like it but I know down south it unheard of (optional)
4 cups turkey broth or 4 cups water

Steps:

  • In a very large pot.
  • I used my 18 quart electric roaster oven (counter top).
  • It`s like a very very large crock pot.
  • Heat to 400 degrees add oil and brown meats.
  • While meat is browning add onions, peppers, garlic and Worcestershire sauce.
  • Continue to cook till all meat is browned stirring often.
  • Add all the rest of the ingredients and lower the temperature to 275 degrees and cook for 2-3 hour till all the flavor meld into a delish chili. Be sure to stir all the while!
  • Check for seasoning.
  • Enjoy over rice or straight.

4 ancho chiles
4 pounds boneless beef chuck, trimmed and cut into 3/4-inch pieces
1 pinch salt and freshly ground black pepper to taste
2 medium onions, coarsely chopped
6 cloves garlic
¼ cup ground red chile pepper
2 teaspoons salt
1 teaspoon cumin seeds
1 teaspoon dried oregano
½ teaspoon ground coriander
1 cup Mexican beer, or more as needed

Steps:

  • Soak the ancho chiles in boiling hot water to cover for 1 hour.
  • While dried chiles soak, preheat the oven to 350 degrees F (175 degrees C). Season beef with salt and pepper.
  • Heat a cast iron Dutch oven over medium-high heat. Brown the beef on all sides, working in small batches, 5 to 7 minutes. Set aside.
  • Drain chiles; remove stems and seeds. Place chiles, onions, garlic, ground chile pepper, salt, cumin seeds, oregano, and coriander in the bowl of a food processor. Pulse to chop, then process into a thick paste. Add 1 cup beer and continue processing to blend.
  • Place meat and any accumulated juices back in the Dutch oven, pour in sauce, and stir well. Cover with a sheet of aluminum foil, then place lid on top for a tight seal.
  • Bake on the middle rack of the preheated oven for 1 hour; stir. Continue to bake, stirring every 15 minutes, until meat is fork-tender, 30 minutes to 1 hour more, adding more beer if sauce seems too thick.
