SPICY SOUTHWEST CORN

Steps:
- Remove the husks and silk from corn and cut kernels off the cob. Reserve cobs. Heat butter and oil in a medium skillet over medium heat. Once hot, add corn kernels, ancho chile powder, chile de arbol powder, and a generous pinch of Kosher salt.
- Using the back of your knife (dull side of the blade), scrape up and down the sides of the reserved cobs over the skillet to release some of the corn's milk into the mixture.
- Let corn cook, stirring occasionally, until cooked through, about 10 minutes. Sprinkle crumbled queso fresco on top of the corn and serve.

- Fill a large saucepan half full with water; bring to a boil. Add corn; cover and cook for 5-7 minutes or until tender. , Meanwhile, in a small saucepan, heat oil and butter over low heat until butter is melted. Stir in the jalapeno, cumin and pepper. Drain corn; brush with butter mixture.

- In a small bowl combine the butter, parsley, chili powder, garlic salt, and cumin; set aside.
- To pot of boiling water add 1 tablespoons granulated sugar, and 1 tablespoons lemon juice. Add corn. Boil for 3 to 5 minutes, uncovered. Remove from heat, cover and let stand for 15 minutes. Remove from hot water, spread ears of corn with seasoned butter.

- Heat oven to 200C/180C fan/gas 6. Mash butter, garlic and parsley with seasoning.
- Cut 4 pieces of foil large enough to hold a cob, place a cob on each piece, top each one with butter, then seal edges to form parcels. Bake, or cook on the barbecue, for 30-35 mins or until tender.

- Boil a large pan of water. Add some salt and the corn. Boil for 10 mins. Meanwhile, mix the butter with coriander and chilli powder. When ready to serve, drain the corn, then add the butter mixture to the pan so it melts on all sides of the corn.

TANGY CORN ON THE COB
Steps:
- Husk and remove hair for corn, rinse. Make out of aluminum foil, six foil packets. Place corn in foil. Add 1 tablespoon of Kraft Italian low calorie salad dressing per corn. Seal foil packet.
- On a 300 to 400 degree barbeque, place foil packets on top rack. Cook for about 15 minutes. Serve in packets (be careful of the steam when opening) or remove before serving. Makes 6 servings of wonderful tasting corn on the cob.

- Rinse the ears of corn.
- Put corn cobs directly on the middle rack of the oven.
