TANGY MOZZARELLA BITES



Tangy Mozzarella Bites image

I adapted this recipe from one I found years ago, substituting ingredients most people have on hand. I like to serve it with crackers or small bread slices.

Number Of Ingredients 6

1/4 cup olive oil
1 to 2 teaspoons balsamic vinegar
1 garlic clove, minced
1 teaspoon dried basil
1 teaspoon coarsely ground pepper
16 ounces cubed part-skim mozzarella cheese

Steps:

  • In a large bowl, combine the oil, vinegar, garlic, basil and pepper. Add cheese; toss to coat. Cover and refrigerate for at least 1 hour.

All-purpose flour, for dusting
1 sheet frozen puff pastry (from a 17.3-ounce package, such as Pepperidge Farm), thawed
1 tablespoon salted butter, melted
1 cup grated manchego cheese
1 cup grated Parmesan
One 12-ounce jar sliced jalapenos, drained

Steps:

  • Preheat the oven to 400 degrees F; line 2 baking sheets with parchment.
  • On a floured surface, carefully roll out the sheet of pastry into a 10-by-12-inch rectangle. Dock the pastry all over with the tines of a fork and then brush it with the melted butter. Sprinkle over the manchego and 1/2 cup of the Parmesan. Using the rolling pin, press the cheese into the pastry. Cut the pastry into rounds using a 1 1/2-inch round pastry cutter. Gently press 1 slice of jalapeno into the middle of each round. Transfer to the prepared baking sheets. Sprinkle over the remaining 1/2 cup Parmesan.
  • Bake until golden brown and puffed, 10 to 12 minutes. Allow to cool before serving.

Classic French nibbles that are devilishly moreish

85g plain flour
50g butter , chopped
50g mature gruyère , grated
25g fresh parmesan (or vegetarian alternative), finely grated
2 eggs , well beaten
1l vegetable oil , for deep frying

Steps:

  • Sift the flour and a little salt into a bowl. Set a non-stick pan on the heat with 150ml cold water and the chopped butter. Bring to the boil, stirring until the butter melts. Tip in all the flour and, using a wooden spoon, beat hard until the mix becomes smooth and starts to leave the side of the pan.
  • Remove from the heat, beat in the gruyère and half the parmesan and cool for 5 mins. Gradually beat in the eggs until you have a smooth, thick, but spoonable mix - you may not need all the egg. Can be set aside now for 2 hrs without chilling.
  • When ready to serve, heat the oil in a deep-fat frying pan to around 180C. Using 2 teaspoons scoop up neat dollops and carefully drop into the hot oil. Fry 6-8 dollops a time for 3-4 mins until golden and crisp - dunk the dollops under to brown evenly. Reheat the oil as necessary. Drain on paper towels, sprinkle with the rest of the parmesan. Serve hot.

Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

2 lbs sharp cheddar cheese, shredded
2 cups unsalted butter, softened
5 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 (8 ounce) jar small pimento-stuffed green olives, well drained (optional)
raw pecan halves (optional)

Steps:

  • Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
  • Roll dough into 1 inch balls and place on an un-greased baking sheet.
  • If using olives, form each ball around 1 olive.
  • If using pecans, press 1 pecan half onto each ball.
  • Can bake them right now (see instructions below) or freeze for later.
  • Place in trays in freezer for 30 minutes.
  • Remove from freezer and place in freezer bags or container.
  • Seal and freeze.
  • Can bake them straight from freezer.
  • Preheat oven to 425°F.
  • Place cheese balls 3 inches apart on an un-greased baking sheet.
  • Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

1 small baguette
2 tablespoons salted butter, softened
1/4 cup cherry preserves
5 ounces fontina, shredded
2 ounces thinly sliced spicy salami
1/4 cup mini cornichons

Steps:

  • Position an oven rack in the center of the oven and preheat to broil.
  • Slice the baguette slightly on a bias into 16 crostini. Spread a thin layer of the butter and preserves onto each slice, then place onto a baking sheet. Top each with a good pinch of the fontina and transfer to the oven to broil, about 5 minutes.
  • Carefully remove the baking sheet from the oven and transfer the crostini to a board or platter. Fold the salami into triangles and add one to the top of each slice. Garnish each one with a mini cornichon and serve.

This is my twist on the sandwich you used to dread finding in your lunch box as a kid. Now updated and bite-sized, you might not mind so much. To me, the two best breads for this are a Jewish rye and a flax seed bread. It gives these little sandwiches a nice kick. Salt amounts should be adjusted to your personal taste. The vinegar makes extra salt a bit too much for some. Great for lunches, family functions, and afternoon tea.

6 -8 pieces whole grain bread, lightly toasted and fully cooled
6 ounces albacore tuna
1 egg, hard-boiled
1 1/2 tablespoons light mayonnaise
1/2 tablespoon brown mustard
1/4 teaspoon balsamic vinegar
1/4 teaspoon tarragon
1/4 teaspoon paprika
1/2 teaspoon fresh rosemary
1/4 teaspoon ground thyme
1/4 teaspoon fresh oregano
1/2 teaspoon ground black pepper
1/4 teaspoon ground fennel
1 dash nutmeg
1/4 teaspoon salt
1/4 roasted red pepper (optional)

Steps:

  • Using a whisk or large fork, mix mayonnaise, mustard, balsamic vinegar, tarragon, paprika, rosemary, thyme, oregano, black pepper, fennel and nutmeg in a medium-sized bowl until smooth.
  • Dice boiled egg into 1/4 inch pieces or smaller, crumble yolk. Add to seasoning mixture.
  • Drain all water from tuna, flake into bowl, mix until well coated.
  • Cut toasted bread into quarters.
  • Spoon tuna mixture onto bread, making small sandwiches.
  • Garnish with 1/4 inch wide slices, roasted red pepper, hold together with toothpicks for easy serving.

1 (1 pound) loaf unsliced Italian bread
¾ cup butter, cubed
½ (8 ounce) package cream cheese, cubed
1 ½ cups shredded sharp Cheddar cheese
1 ½ cups crumbled blue cheese
3 egg whites
1 teaspoon paprika

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter 2 baking sheets.
  • Cut crusts off bread. Cut bread into 1 1/2-inch cubes; set aside.
  • Melt butter in a large saucepan over medium heat. Stir in cream cheese until melted. Remove from heat; stir in Cheddar and blue cheeses until melted.
  • Beat egg whites in a small bowl until stiff peaks form. Fold into the cheese mixture. Dip bread cubes in the cheese, turning to coat.
  • Place dipped bread cubes on the prepared baking sheets.
  • Bake in the preheated oven until bottoms are golden brown, 12 to 15 minutes. Serve warm.
