10 oz maraschino cherries (drained, halved, and patted dry)
1 cup sweetened coconut flakes
2 cups miniature marshmallows
3/4 cup chopped nuts (pecans, walnuts, cashews optional)

Steps:

  • Fold sour cream into Cool Whip in a large serving bowl.
  • Fold in remaining ingredients making sure the pineapple, oranges, and cherries have been properly drained.
  • Serve immediately or refrigerate until serving.

Steps:

  • Mix pineapple, mandarin oranges, Cool Whip, sour cream, marshmallows, and shredded coconut together in a bowl.
  • Cover bowl with plastic wrap and refrigerate until flavors blend. Refrigerate for at least 2 hours. Tastes even better when chilled overnight.

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine.   • Also good with chopped pecans added!

3 green onions, thinly sliced
1 (15 ounce) can pinto beans, drained, rinsed
1 (11 ounce) can mexicorn whole kernel corn, with Red and Green Peppers, drained
1 (3 7/8 ounce) can sliced ripe olives, drained
1 1/2 cups salsa
3 -4 cups corn chips
sour cream, if desired
green onion, thinly sliced, if desired

Steps:

  • In large bowl, combine cucumbers, 3 green onions, beans, corn, olives and salsa; toss to mix.
  • Arrange about 1/2 to 2/3 cup corn chips on each individual serving plate.
  • Top each with about 1 1/4 cups cucumber mixture.
  • Top each salad with sour cream and additional sliced green onions. Serve immediately.
