2 cups raw mixed nuts, such as almonds, walnuts and cashews
2 tablespoons tamari sauce
1 tablespoon sugar
1 teaspoon toasted sesame oil
1/2 teaspoon Calabrian chili paste
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F.
  • Spread the nuts on a small rimmed baking sheet and roast for 15 minutes. Meanwhile, in a medium bowl, stir together the tamari, sugar, sesame oil and Calabrian chili paste. Add the hot nuts to the bowl and toss well to coat. Spread the nuts back out on the baking sheet and sprinkle with the salt. Roast until golden brown and fragrant, stirring every 5 minutes, about 15 minutes more.

The addition of tamarind and mint to what might otherwise be simply sweet and spicy cashews elevates these nuts beyond simple bar snacks designed to encourage thirst. They're sophisticated and exciting, while remaining quite simple to make.

4 tablespoons unsalted butter
3 tablespoons honey
2 tablespoons light brown sugar
1 teaspoon tomato paste
1 1/2 teaspoons tamarind concentrate or paste
1 pound roasted unsalted cashews
70 grams unsweetened coconut flakes (about 1 cup)
Large pinch cayenne, plus more to taste
10 grams ground garam masala, preferably freshly toasted and ground (about 1 tablespoon)
8 grams coarse kosher salt, plus more for sprinkling (about 1 1/4 teaspoons)
Chopped fresh mint, for serving

Steps:

  • Heat oven to 300 degrees.
  • In a medium pot, melt butter, honey, brown sugar, tomato paste and tamarind. Add nuts, coconut, cayenne, garam masala and salt and toss until coated. Spread on baking sheet.
  • Bake for about 25 minutes, stirring occasionally, until mixture is toasted and sugars have begun to caramelize. Sprinkle nuts lightly with salt and let cool completely. Before serving, break up nuts and sprinkle with mint. (Nuts can be stored in an airtight container up to 2 weeks, but don't add mint until serving.)

Aim to impress vegetarian dinner party guests with a modern meat-free main, flavoured with tangy tamarind paste, chilli and sesame seeds

2 large aubergines
4 tsp tamarind paste
2 tsp sesame oil
1 red chilli , deseeded and thinly sliced
1 tbsp sesame seeds
200g black rice
6 spring onions , finely sliced
100g feta , crumbled
2 small packs mint , roughly chopped
small pack coriander , roughly chopped, reserving a few leaves, to serve
zest 1 large lime
2 tbsp dark soy sauce
juice 1 lime
5cm/2in piece ginger , peeled and finely grated (juices and all)
pinch of sugar

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut the aubergines in half lengthways and, with the tip of a knife, score the flesh deeply in a criss-cross diamond pattern - but don't pierce the skin. Press on the edges of the halves to open the cuts. In a small bowl, combine the tamarind paste and sesame oil. Brush the mixture over the aubergine, pushing it into the cuts. Place on a baking tray, sprinkle over the chilli and sesame seeds, then roast, cut-side up, for 25-35 mins or until the flesh is really soft.
  • Put the rice in a small sieve and wash under running water for 1 min until the water runs clear. Tip the rice into a small saucepan and add 650ml cold water. Bring to the boil, reduce the heat and simmer for about 35 mins until the rice is tender. Drain under cold running water.
  • Make the dressing by whisking all the ingredients together with a pinch of salt. Adjust the seasoning to taste, adding a little more sugar, salt or lime juice, if you like.
  • In a big bowl, mix together the black rice, spring onions, feta, mint, chopped coriander, and the lime zest and dressing. Sprinkle the reserved coriander leaves over the aubergine halves and serve with the rice.

  • You will be cutting off a 125 gram/4.5 ounce piece from your tamarind block. I recommend using a kitchen scale to weigh it. If you don’t have a scale, try to use the full weight listed on the package to decide how much to cut off. For example, one half of a 500 gram block would get be the same as 250 grams. Half of the 250 gram chunk would be 125 grams and so on.
  • Take a closer look at the tamarind chunk you just sliced off. Notice the lighter fiberous parts. You’ll strain these out later on. Remember, these lighter parts are not the seeds, although they may appear that way.
  • Pour 250 ml/one cup of hot tap water or enough to cover the tamarind in a bowl. The smaller your bowl, the less water you’ll need to cover the tamarind. If you find your hot tap water isn’t very hot, you can use half tap water, half boiled water. The exact temperature of the water isn’t important, just make sure it’s almost too hot for your your hand to touch. Using cooler water won’t ruin things, but it will make the tamarind harder to break up in later steps of the recipe.
  • Pour the hot water into the bowl with the tamarind. The water should completely cover the tamarind. Soak the tamarind for 20 minutes.
