1 pound ground chuck beef (80% lean)
2 cups frozen Southwest mixed vegetables (corn, black beans, red peppers)
1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 (10 ounce) can red enchilada sauce
1 ¼ cups water
1 ¼ cups shredded Mexican blend cheese
¼ cup thinly sliced green onions
1 teaspoon Sour cream

Steps:

  • Preheat oven to 400 degrees F. Spray 13x9-inch glass baking dish with cooking spray. Place uncooked noodles in baking dish.
  • Heat large skillet over medium-high heat. Add beef; cook 5 to 7 minutes or until crumbled and no longer pink. Drain. Add vegetables, undrained tomatoes, enchilada sauce and water to skillet; stir. Bring to a boil. Pour mixture over noodles.
  • Cover dish tightly with foil; bake 15 minutes. Stir; sprinkle with cheese and cover with foil. Bake 10 minutes more or until noodles are tender. Sprinkle with green onions. Serve with sour cream, if desired.

1/2 cup water
2 cans refried beans

1 cup romaine lettuce (, thinly sliced)
1 vine tomatoes (, diced)
1/2 cup black olives (, sliced)

Steps:

  • Preheat oven to 350 degrees and spray a 9x13 baking dish with vegetable oil spray.
  • Add the ground beef and onions to a large skillet on medium high heat and break it apart as you cook it, for 6-8 minutes, until no longer pink.
  • Drain excess fat before adding in taco seasoning and water.
  • Stir well and cook until water has evaporated then add in the salsa and stir.
  • Layer the baking dish with refried beans, taco salsa mixture and cheese.
  • Bake, uncovered for 20 minutes, top with Fritos and bake an additional 10 minutes.
  • Top with lettuce, tomato and olives before serving.

Steps:

  • Heat oven to 350°F.
  • Cook meat, onions, garlic and taco seasoning mix in large skillet sprayed with cooking spray on medium heat 10 min. or until meat is done, stirring frequently. Remove from heat.
  • Drain beans, reserving 1/4 cup of the liquid; set beans aside. Add reserved bean liquid to meat mixture along with the tomato sauce and chiles; mix well.

2 cloves garlic, minced

2 teaspoon canola oil
1 medium onion, halved and thinly sliced

1 10 ounce package frozen chopped spinach, thawed and squeezed dry
1.5 cup purchased salsa
4 6 inch corn tortillas, coarsely torn

0.5 of an avocado, halved, seeded, peeled, and chopped (optional)

Steps:

  • Preheat oven to 350°F. Coat an unheated large nonstick skillet with cooking spray. Preheat skillet over medium-high heat. In a medium bowl toss together chicken, garlic, and chili powder. Add to hot skillet. Cook for 4 to 6 minutes or until chicken is no longer pink, stirring frequently. Remove chicken from skillet; set aside.
  • Add canola oil to skillet. Add onion and sweet pepper. Cook over medium heat about 5 minutes or until tender, stirring occasionally. Stir in spinach.
  • Coat a 2-quart square baking dish with cooking spray. Spread about 1/2 cup of the salsa in the baking dish. 2 tablespoons olive oil
2 cups diced fresh tomatoes (about 3 to 5)
1 onion, diced
3 cloves garlic, minced
4 teaspoons chili powder
2 teaspoons paprika
2 teaspoons ground cumin
1 large boneless, skinless chicken breast (about 12 ounces), cut into bite-size pieces
Kosher salt
1 15-ounce can pinto beans, drained and rinsed
1 15-ounce can kidney beans, drained and rinsed
1 16-ounce jar salsa verde
10 large (burrito-size) flour tortillas or 12 small flour or corn tortillas
2 cups cooked rice (from 2/3 cup dry)
1 11-ounce can corn kernels, drained
1 pound grated cheddar-jack cheese
1 1/2 cups red enchilada sauce
Sour cream and cilantro, for serving

Steps:

  • In a large skillet over medium-high heat, heat 1 tablespoon of the olive oil. Add the tomatoes, onion and garlic, stir and cook for a minute or two to soften the onion. Add 2 teaspoons of the chili powder, 1 teaspoon of the paprika and 1 teaspoon of the cumin. Stir and cook the mixture for another minute or two to release the flavors of the spices. Remove the mixture to a bowl and set aside.
  • In the same skillet, heat the remaining 1 tablespoon olive oil. Add the chicken along with the remaining 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon cumin and 1/2 teaspoon salt. Saute the chicken until it's deep golden brown and done in the middle, about 4 to 5 minutes. Add 1 cup water and stir to make a sauce. Bring the sauce to a boil and cook until it's reduced by half, about 3 to 4 minutes. Stir in the beans and set aside.
  • To assemble the casserole, pour half a jar (about 1 cup) of salsa verde into the bottom of a 9-by-13-inch casserole dish or disposable foil baking pan. Add a layer of half the tortillas on top of the salsa verde, overlapping the edges. Spoon the rice over the tortillas, spread the tomato mixture over the rice, then sprinkle the corn over the tomatoes. Next, add the chicken and bean mixture, then sprinkle on half the cheese and pour over half the enchilada sauce. Next, add the rest of the tortillas, then pour on the rest of the salsa verde and the rest of the enchilada sauce and sprinkle on the rest of the cheese.
  • If you're baking the casserole right away, preheat the oven to 375 degrees F and bake, covered with foil, for 20 minutes. Then remove the foil and continue baking for 15 to 20 minutes, or until hot and bubbly. Serve with sour cream and cilantro.

taco chips
2 (14 ounce) cans refried beans
1 (16 ounce) jar salsa

  • Preheat oven to 350 degrees.
  • Cook beef and add taco seasoning.
  • Mix both cans of refried beans with the jar of salsa, set aside.
  • Layer the bottom of a 13" x 9" (lasagna) pan with taco chips.
  • Place the cooked ground beef on top of the taco chip layer.
  • Add any remaining liquid to the bean and salsa mixture, mix together.

12 corn crunchy taco shells
1 jar taco sauce (not salsa)
1 lb ground beef
1 medium onion, chopped
1 package taco seasoning

  • Brown the ground beef with the onion and drain.
  • Add the taco seasoning and the water.
  • Simmer until water is cooked away.

1 tablespoon olive oil
1 medium white or yellow onion (diced)
4 cloves garlic (minced)
15 ounce can black beans (drained and rinsed)
1 tablespoon ancho chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons tomato paste
2-15 ounce jars tomato salsa
2 cups shredded cheddar or cheddar Jack cheese (divided)

Steps:

  • Arrange a rack in the middle of the oven and heat to 350F.
  • Heat a large, high-sided skillet over medium heat.
  • Add the beef and cook, breaking up the meat with a spoon, until browned and cooked through, about 6-8 minutes.
  • Remove ground beef to a plate, and drain any remaining fat from the skillet.
  • Add the tablespoon of oil to the now-empty skillet, and heat until shimmering.
  • Add the onion and garlic.
  • Cook, stirring occasionally, until softened, about 5 minutes.
  • Turn heat to medium-low.
  • Add the chili powder, cumin, smoked paprika, oregano, salt, pepper, and tomato paste, and stir to combine.
  • Return the beef to the pan, and stir in along with the beans.
  • Cook for 2 minutes.
  • Remove the skillet from the heat, and stir in the salsa and 3/4 cup of the cheese.
  • Sprinkle with the remaining 1 ¼ cups cheese.
  • Bake until the cheese is melted and casserole is heated through, about 15-20 minutes. Let sit for 5 minutes before serving.

I love this taco rice casserole. It's easy to make, and most of the ingredients are usually on hand. Kick it up with dashes of hot sauce.

1 pound ground beef
1 cup chopped celery
½ cup chopped onion
1 (14.5 ounce) can diced tomatoes
1 ¼ cups water
1 cup uncooked long-grain rice
1 cup salsa
1 (4.5 ounce) can diced green chilies, drained
¼ cup sliced black olives
1 ½ teaspoons beef bouillon granules
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
¼ teaspoon ground black pepper
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, celery, and onion in the hot skillet until beef is browned and crumbly and vegetables are tender, 5 to 7 minutes. Drain and discard grease.
  • Stir tomatoes, water, rice, salsa, chilies, olives, bouillon granules, chili powder, Worcestershire, and pepper into beef mixture. Bring to a boil. Transfer to a 2-quart casserole dish.
  • Bake, covered, in the preheated oven until rice is tender, 45 to 50 minutes. Sprinkle with cheese. Cover and let stand for 10 minutes before serving.

4 cups shredded, cooked chicken
2 (10.75 ounce) cans Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 cup light sour cream
1 (10 ounce) can diced tomatoes and green chiles, undrained
1 (15 ounce) can black beans, rinsed and drained
1 (1 ounce) envelope reduced-sodium taco seasoning mix
5 cups coarsely crushed tortilla chips
2 cups shredded Cheddar cheese
Chopped tomato
Sliced green onion
Chopped fresh cilantro leaves

Steps:

  • Heat the oven to 350 degrees F. Lightly grease a 13x9x2-inch baking dish. Stir the chicken, soup, sour cream, tomatoes and green chiles, beans and seasoning mix in a large bowl.
  • Layer half the chicken mixture, 3 cups tortilla chips and half the cheese in the baking dish. Layer with the remaining chicken mixture and tortilla chips. Cover the baking dish.
  • Bake for 30 minutes. Uncover the baking dish. Sprinkle with the remaining cheese.
  • Bake, uncovered, for 10 minutes or until hot and bubbling and the cheese is melted. Sprinkle with the chopped tomato, green onion and cilantro before serving, if desired.
