MEXICAN DEVILED EGGS
With two young children, my husband and I live on a beautiful lake and host lots of summer picnics and cookouts. I adapted this recipe to suit our tastes. - Slice the eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with cheese, mayonnaise, salsa, onions, sour cream and salt. , Stuff or pipe into egg whites. Serve immediately or chill until ready to serve.

Steps:
- In medium non-stick skillet, heat oil over medium heat; saute red and jalapeno peppers and garlic for 2 minutes or until softened. Add ham and chili powder; saute 2 minutes or until heated through. Remove to bowl; cover to keep warm.
- In a small bowl or measuring cup, whisk eggs, salt and pepper.
- Melt butter in the same skillet on medium heat; add eggs and cook, stirring gently, until set but still soft, about 2 minutes.
- Spoon eggs on each tortilla, top with ham mixture, cheese and onion. Serve with salsa and/or coriander, if desired.

- In a large pan, cover eggs with water and bring to a boil. Turn heat off and let eggs sit in water for 12 minutes.
- Peel cold eggs, then cut each in half lengthwise with a sharp knife. With a spoon, scoop out yolks.
- Add yolks to a bowl and mash with a fork. Add refried beans, green chiles, taco seasoning and chopped green onions. Mix well to combine.

- Remove yolks from halved eggs and place in a medium bowl. Mash the yolks with a fork and then add the mayonnaise, sour cream, chives, and 1 1/2 teaspoons of taco seasoning. Mix together well.
- Place mixture in a resealable plastic bag, snip off the corner, and pipe into the cooked egg whites.
- Top with finely diced avocado and chives. Using a strainer add the remaining 1/2 teaspoon of taco seasoning and lightly dust the eggs with it. Refrigerate until serving.
