Thon En Salade (Swiss Tuna Salad Plate) image

Adapted from Woman's Day Encyclopedia of Cookery. This somewhat resembles tuna Nicoise, but is much simpler and contains mayonnaise. I have changed the recipe from 7 ounce cans of tuna to 6 ounce cans, and reduced the amount of mayonnaise slightly. You can substitute curry powder for the paprika and capers for the parsley.

2 (6 ounce) cans tuna
3 tablespoons mayonnaise
lettuce
4 tomatoes, peeled and cut in wedges
8 ripe olives
4 hardboiled egg, quartered
1/2 cup mayonnaise
1 garlic clove, crushed
1 teaspoon paprika
parsley (to garnish)

Steps:

  • Mash tuna with a fork.
  • Add 3 tablespoons mayonnaise and mix well.
  • Mound tuna mixture in the center of a serving platter.
  • Surround tuna with lettuce, tomatoes, olives and eggs.
  • Combine remaining mayonnaise with garlic and mix well.
  • Strain.
  • Mix in paprika.
  • Pour mayonnaise mixture over tuna.
  • Garnish with parsley.

I love salads that can be made ahead of time. This particular salad looks nicer when the lettuce is shredded (taco style). You might also want to "eyeball" how much dressing to add. I typically don't use it all at once, and have enough dressing left over to make one more salad at a later date. It is from Taste of Home magazine.

1 cup sliced green onion
1 cup sliced celery
1 cup diced green pepper
1 cup sliced stuffed green olive
1/3 cup vegetable oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
salt and pepper
6 cups shredded lettuce
8 ounces shredded swiss cheese

Steps:

  • In a small bowl, combine the onions, celery, green pepper and olives.
  • In another bowl, whisk together the oil, vinegar, mustard, salt and pepper.
  • Pour over vegetables and refrigerate several hours or overnight.
  • Just before serving, place the lettuce in a large salad bowl; add the cheese and dressing with vegetables.
  • Toss lightly.

I am American/Swiss and I really like both American potato salad and German. So I just made a twist of both in my country. Hope you enjoy it as well as my family does.

2 lbs potatoes, quartered (1 to 2 inches in diameter)
3 tablespoons table salt
8 -10 slices smoked bacon
1 large red onion, chopped fine
2 finger sized pickles, diced (I use garlic ones)
3 -4 hard-boiled eggs, diced
1/2 a carrot, finely diced
1 teaspoon sugar
1/2 cup white vinegar
3 tablespoons whole-grain German mustard
1 teaspoon ground black pepper
1/4 cup chopped fresh parsley
1/4 teaspoon rosemary
1/4 teaspoon thyme
additional salt

Steps:

  • boil potatoes with salt until tender reserving 1/4 cup of water.
  • fry bacon until crispy then set aside reserving fat in pan.
  • add onion until tender and then add vinegar and potato water and allow to reduce a bit.
  • once reduced to desired consistency add to potatoes along with remaining ingredients folding in bits at a time.
  • served warm or cold.

It could also include beetroot or even coleslaw. Some people like to add half an egg or decorate the salad with nuts or pumpkin seeds.
