Categories     main-dish

Time 55m

Yield 12 manicotti

Number Of Ingredients 19

Butter, for greasing the pan
12 manicotti or cannelloni pasta shells
1 head (about 12 ounces) red or white Swiss chard
2 tablespoons olive oil
1 medium onion, chopped
1 clove garlic, minced
1 (15-ounce) container whole milk ricotta cheese
3/4 cup frozen petite peas, thawed
1 cup shredded mozzarella (4 ounces)
3/4 cup grated Parmesan (2 ounces)
1/4 cup chopped fresh basil leaves
3/4 teaspoon kosher salt
1/4 teaspoons freshly ground black pepper
3/4 cup whole milk
1/2 cup heavy whipping cream
3 cups (6 ounces) fontina cheese, grated
2 tablespoons grated Parmesan
2 tablespoons chopped fresh basil leaves
1 1/2 cups (6 ounces) mozzarella, shredded

Steps:

  • Preheat the oven to 400 degrees F. Grease a 13 by 9-inch glass baking dish liberally with butter.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain the pasta and rinse with cold water. Set aside.
  • Using kitchen scissors or a knife, remove the leaves from the stems of the chard. Discard the stems. Chop the leaves into 1-inch pieces. In a large nonstick skillet, heat the oil over medium-high heat. Add the onion and cook until soft, about 5 to 7 minutes. Add the garlic and cook for 1 minute longer. Add the chard and cook, stirring constantly, until wilted, about 2 minutes. Allow the mixture to cool slightly. Place the ricotta cheese, peas, mozzarella cheese, Parmesan cheese, basil, salt, and pepper in the bowl of a food processor. Add the cooled chard mixture and blend until smooth. Spoon the mixture into the prepared pastry bag and fill each manicotti shell with the filling. Place the stuffed manicotti in the prepared baking dish.
  • In a medium heavy-bottomed saucepan, bring milk and cream to a simmer, over medium heat. Reduce heat to low. Add the fontina cheese and cook, stirring constantly, until the cheese is melted and the mixture is smooth. Remove the pan from the heat. Stir in the Parmesan cheese and basil.
  • Pour the sauce over the stuffed manicotti and sprinkle with the mozzarella cheese. Bake for 30 to 35 minutes until the top is golden. Cool for 5 minutes before serving.

SWISS CHARD AND RICOTTA CROSTATA

Swiss Chard and Ricotta Crostata image

Provided by Anne Burrell

Time 2h30m

Yield 8 to 10 servings

Number Of Ingredients 19

2 cups all-purpose flour
1 cup grated Parmesan
1/2 cup mascarpone
Pinch kosher salt
Pinch cayenne pepper
1 stick cold butter, cut into pea-sized pieces
2 eggs
Extra-virgin olive oil
2 cloves garlic, smashed
Pinch crushed red pepper flakes
1 bunch white Swiss Chard, stems removed cut into 1/4-inch lengths, leaves cut into 1-inch lengths
2 leeks, tough green tops removed, cut in 1/2 lengthwise and then cut crosswise into 1/4-inch lengths
2 to 3 tablespoons water
Kosher salt
2 cups fresh ricotta
1 cup grated Parmesan
2 eggs
Pinch cayenne pepper
Egg wash: 1 egg beaten with 2 tablespoons water.

Steps:

  • Combine the flour, Parmesan, mascarpone, salt, cayenne and butter in the bowl of a food processor and pulse, pulse, pulse, until it looks very dry and crumbly--what I like to call the Parmesan stage. Add the eggs and pulse until the mixture forms a ball. Remove the dough from the food processor, and refrigerate for at least 30 minutes.
  • Coat a large saute pan generously with olive oil. Add the garlic and crushed red pepper and bring the pan to a medium heat. When the garlic has become golden brown and is very aromatic remove it and discard, it has fulfilled its garlic destiny. Add the Swiss chard stems, leeks and 2 to 3 tablespoons of water and season with salt. When the water has evaporated and the stems and leeks are soft, add the leaves. Season the leaves with salt and saute until they are very soft and wilted. Remove from the heat and allow the Swiss chard to cool.
  • In a large bowl combine the ricotta, Parmesan, eggs, cayenne and the Swiss chard mixture. Mix to thoroughly combine. Taste and adjust the seasoning if needed (it will). Set aside.
  • Preheat the oven to 375 degrees F.
  • Remove the dough from the refrigerator and let warm up for about 10 to 15 minutes, this will make it really much easier to roll out.
  • Dust a large clean work surface with flour and roll the dough into a large circle about 1/4 to 1/8-inch thick. Transfer the dough to a large sheet try lined with parchment paper. Lay the dough out flat, don't worry about the overhang on the sides. Put the filling in a large circle in the center of the rolled out dough leaving a 3 to 4-inch border of dough along the outside edge. Fold the dough up around the filling to make a "free-form pie". Brush the top of the dough with egg wash and bake in the preheated oven until the crust is firm, golden brown and shiny, about 45 to 50 minutes. Remove from the oven and let cool for 10 to 15 minutes before slicing, this will allow it to up for easier slicing.
  • Serve hot or at room temperature.
  • What a delightful lunch!!!

Moroccan-Inspired Swiss Chard Rolls image

Provided by Giada De Laurentiis

Time 2h30m

Yield 4 to 6 servings

Number Of Ingredients 19

2 3/4 cups vegetable broth or stock
Two 1/4-inch-thick slices fresh ginger, each about 1-inch in diameter
1/2 cup short or long-grain brown rice
1/2 cup wild rice
3 tablespoons vegetable oil or canola oil
1 cup sliced green onions (about 1 small bunch)
3 small carrots, peeled and chopped into 1/4-inch pieces
1 medium onion, finely chopped
1 clove garlic, minced
One 2-inch piece fresh ginger, peeled and grated
2 teaspoons mild curry powder
1 teaspoon ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup golden raisins
6 ounces extra-firm tofu (1/2 of one 12-ounce package), drained, patted dry, cut into 1/2-inch cubes
1/2 cup organic coconut milk
12 large fresh Swiss chard leaves (from 2 to 3 bunches)
One 26-ounce jar arrabiata or tomato-basil sauce

Steps:

  • For the rice: Combine the vegetable broth and ginger slices in a medium saucepan; bring to boil. Add the brown and wild rice and bring to boil. Reduce the heat to medium-low; cover and simmer until the rice is just tender, 50 to 55 minutes. Drain if necessary. Discard the ginger slices. Set the rice aside.
  • Meanwhile, position the oven rack in the center of the oven and preheat to 400 degrees F. Lightly oil a 13- by 9- by 2-inch glass or ceramic baking dish with 1 tablespoon of the vegetable oil; set aside.
  • Heat the remaining 2 tablespoons oil in a large nonstick skillet over medium-high heat. Add the green onions, carrots, onions, garlic, ginger, curry powder, cumin, 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook, stirring occasionally, until the vegetables are tender, 6 to 7 minutes. Stir in the golden raisins, tofu and cooked rice mixture. Add the coconut milk and bring to a simmer. Cook for 1 minute until the sauce coats the back of a spoon. Season with the remaining 1/4 teaspoon of salt and 1/8 teaspoon pepper.
  • Remove from the heat and let cool while preparing the chard leaves.
  • Bring a large pot of salted water to boil. Using a sharp knife, cut away the thick stems from the center of each leaf; discard the stems. Cut each leaf in half lengthwise. Trim the wide ends from the leaves to make each leaf half about 10 inches long. Using tongs and working with 1 leaf half at a time, dip the leaf half into the pot of boiling salted water for 10 seconds. Transfer to paper towels to drain.
  • Place about 1/3 cup of the rice filling onto the end of one Swiss chard leaf half. Roll up the leaf, enclosing the filling completely. Repeat with the remaining leaf halves and rice filling for a total of 12 rolls.
  • Spread 1 cup of the sauce onto the bottom of the prepared baking dish. Place the filled rolls, seam-side down, in a single layer atop the sauce in the dish. Spoon the remaining tomato sauce over the rolls. Bake until the rolls are heated through, 25 to 30 minutes.

SWISS CHARD MANICOTTI (WITH OAMC DIRECTIONS)

Swiss Chard Manicotti (With OAMC Directions) image

We grew Swiss Chard in our garden this year and have been experimenting with how to use it. We loved this recipe. It is a little more bland, but we liked it. If you have a suggestion of how to "spice it up a bit" please let me know!

Provided by LindyFlugelman

Categories     < 4 Hours

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 10

1 (8 ounce) package manicotti
1 lb swiss chard, leaves only, cut into small pieces and cooked
16 ounces ricotta cheese
1 egg white, beaten
1/2 cup cheese, your favorite or whatever is on hand, grated
1/4 teaspoon nutmeg
1 teaspoon olive oil
1 large chopped tomato
2 fresh garlic cloves, minced
1 medium onion, chopped

Steps:

  • Cook the manicotti shells according to the package directions. Drain and set aside.
  • Cook the Swiss chard by placing it in a pan on medium heat. Use only the water that is left on it from washing it. Continue stirring it until it is a similar consistency to cooked spinach.
  • In a Ziploc bag (gallon size) combine Ricotta cheese, egg white, grated cheese, nutmeg, and cooked Swiss chard.
  • Zip up bag and smoosh all ingredients together, mixing them well.
  • Cut off a small corner of the bag and squeeze mixture into manicotti shells, placing filled shells side by side in a 9X12 baking dish.
  • At this point you can freeze for OAMC to use later.
  • In a frying pan, heat olive oil.
  • Sauté onion, garlic, and tomatoes until the onions are cooked.
  • Pour mixture on top of manicotti. If manicotti was frozen for OAMC use, thaw it in the refrigerator before pouring mixture over the top of it.
  • Bake at 350 F for 45 minutes.

CHEESY CHICKEN MANICOTTI (OAMC)

Cheesy Chicken Manicotti (Oamc) image

This is a very modified version of recipe #120007. I use banquet chicken tenders because they are longer than the other brands and I put in one per manicotti and I had two leftover. This will make 5-6 8"x8" pans of manicotti depending on how many you put in each pan. I make five.

Provided by Jadelabyrinth

Categories     Chicken

Time 2h25m

Yield 5 pans, 10-15 serving(s)

Number Of Ingredients 6

1 (28 1/2 ounce) bag breaded chicken tenders
3 (8 ounce) packages manicotti, uncooked
3 (26 ounce) jars spaghetti sauce
2 (8 ounce) bags shredded lowfat mozzarella cheese
1 (30 ounce) low-fat ricotta cheese
1 1/4 cups water

Steps:

  • Using one jar of sauce, spread an equal amount of sauce on the bottom of each 8"x8" pan.
  • Using a butter knife spread a thin coat of ricotta cheese inside each manicotti noodle.
  • Insert chicken into uncooked manicotti shells, choose which end to stuff from wisely, the tenders will fit but you have to squeeze them in gently.
  • Fill in the ends of the manicotti with the remaining ricotta cheese.
  • Place shells on spaghetti sauce in dish. To make five pans place 8-9 in each pan. To make 6 pans, place 7 in each pan.
  • Pour remaining spaghetti sauce evenly over shells, covering completely. Add 1/4 cup of water to each pan.
  • Sprinkle with mozzarella cheese. STOP HERE.
  • TO STORE IN REFRIGERATOR: Cover the unbaked manicotti tightly with aluminum foil. Refrigerate no longer than 24 hours.
  • TO STORE IN FREEZER: Wrap unbaked manicotti tightly with labeled aluminum foil Or cover with foil and place in a labeled freezer bag. Freeze no longer than 1 month.
  • TO COOK FROM REFRIGERATOR: Heat oven to 350 degrees and cook covered pan for 1 hour and fifteen minutes, or until noodles are tender.
  • TO COOK FROM FREEZER: Heat oven to 350 degrees and cook covered pan for 1 hour and 50 minutes, or until noodles are tender.
