SIMPLE SPAGHETTI WITH TOMATO SAUCE



Simple Spaghetti with Tomato Sauce image

This basic pasta dish can be transformed by adding extras like cooked bacon, shrimp or even a few handfuls of baby spinach to the sauce. We like canned San Marzano plum tomatoes because they are slightly sweeter and less acidic than other varieties.

Yield 4 cups sauce

Number Of Ingredients 9

3 tablespoons extra-virgin olive oil
4 cloves garlic, very thinly sliced
Kosher salt
Pinch crushed red pepper flakes
One 28-ounce can San Marzano plum tomatoes, crushed by hand
1 cup torn basil leaves
12 ounces spaghetti
Grated Parmesan, optional
Bring a large pot of salted water to a boil.

Steps:

  • Cook the oil, garlic, 1/2 teaspoon salt and pepper flakes in a large skillet over medium heat, stirring, until the oil heats up and the garlic just starts to turn golden, 4 to 6 minutes.
  • Add the tomatoes; rinse the can with about 1 cup of water, and add the water to the skillet. Add the basil, raise the heat to medium-high and simmer until the sauce thickens, 15 to 20 minutes.
  • Meanwhile, add the spaghetti to the boiling water, and cook according to package directions; strain well.
  • Add the cooked spaghetti to the sauce, and stir to coat. Serve with Parmesan if desired.

10-MINUTE SUN-DRIED TOMATO PASTA



10-Minute Sun-Dried Tomato Pasta image

Dinner is ready in 10 minutes with this creamy sun-dried tomato pasta! I use my favorite all-natural sun-dried tomatoes, and I skip heavy cream in favor of a little whole milk and starchy pasta water for a lighter sauce, but you can definitely use heavy cream if you prefer! If you're not worried about keeping this pasta dish vegetarian, toss in some shredded rotisserie chicken or leftover Italian-style baked chicken breast or skillet chicken.

8 ounces penne pasta or short pasta of your choice
3 to 4 ounces sun-dried tomatoes, (chopped, I used our all-natural sun-dried tomatoes which are bold and flavorful)
Extra virgin olive oil
2 small shallots, (chopped)
4 large garlic cloves, (minced)
Kosher salt
½ cup whole milk
½ to ¾ cup grated Parmesan cheese, (more or less to your liking (or a vegetarian Parmesan option))
1 teaspoon dried oregano
1 teaspoon red pepper flakes or Aleppo-style pepper, (less spicy)
Fresh basil, (torn)

Steps:

  • Begin cooking the pasta. Fill a medium saucepan with plenty of water and season the water well with kosher salt. Bring the water to a boil and add the pasta. Cook according to package instructions, till al dente. Make sure to reserve some of the pasta cooking water before you drain the pasta.
  • While the pasta is cooking, work on the sauce. Heat 2 tablespoons of good extra virgin olive oil in a large deep pan over medium heat until shimmering. Add the shallots, garlic, and a good pinch of salt and cook, tossing regularly for about a minute. Add the chopped sundried tomatoes and cook for another minute or so, tossing until the dried tomato bits have softened a little. Add the milk and a little bit of the pasta cooking water (about ¼ cup) and cook for another minute or two until warmed through. Stir in the oregano and red pepper flakes.
  • Turn the heat off. Add in the pasta and Parmesan cheese, mix well to make sure the pasta is well-coated (if needed, add a bit more of the pasta cooking water). Taste and adjust the seasoning to your liking.
  • Finish with the torn basil and serve immediately!

Serve this spaghetti with tomato sauce that's ready in 45 minutes - perfect for Italian cuisine.

2 cloves garlic
1 small onion
1 1/2 teaspoons olive oil
1 can (29 ounces) pureed tomatoes
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1/4 teaspoon salt
1/4 teaspoon pepper
Water
16 ounces uncooked spaghetti or your favorite pasta

Steps:

  • Peel the outside layer of skin from each of the cloves of garlic. Chop garlic cloves into tiny pieces on the cutting board, using the knife.
  • Peel the outside layer of skin from the onion. Wash onion in cool water. Pat dry with the paper towel. Chop onion into small pieces on cutting board, using knife (you need about 1/4 cup.)
  • Put the olive oil in the large saucepan. Heat it over medium heat for about 1 minute. Put garlic and onion in oil. Cook about 3 minutes, stirring all the time with one of the wooden spoons, until onion is tender. Take saucepan off hot burner.
  • Open the can of tomatoes with the can opener. Pour tomatoes into the garlic and onion mixture in saucepan. Add the basil, oregano, salt and pepper. Stir with spoon until mixed. Turn the heat up to high. Heat until the mixture is boiling. Turn heat down to low. Simmer the sauce uncovered for about 30 minutes, stirring a few times.
  • While sauce is simmering, fill the very large saucepan with enough water so it is about half full. Cover saucepan with lid. Heat over medium-high heat until water is boiling fast. Add the spaghetti to water. Heat until water boils again. Boil uncovered for 10 to 12 minutes, stirring often with the other wooden spoon, until spaghetti is soft but not mushy.
  • Pour spaghetti into the colander over the sink to drain. Serve spaghetti with sauce.

200g spaghetti or linguine
1 red chilli , deseeded and finely chopped
2 shallots , finely chopped
1 tbsp extra virgin olive oil
zest 1 lemon
1 tbsp red wine vinegar
2 tsp caster sugar
300g tomato , diced
125g ball mozzarella or burrata (see tip, below), torn into pieces
handful basil leaves , torn, to serve

Steps:

  • Cook the pasta following pack instructions. Meanwhile, put the chilli, shallots, oil, lemon zest, vinegar, sugar and tomatoes into a big mortar. If yours isn't big enough, put it all in a bowl and just use the pestle in that. Add a good amount of sea salt and freshly ground black pepper and bash everything together.
  • Drain the pasta and toss together with the tomato mixture and mozzarella. Scatter over the basil and serve immediately.

The sauce for this pantry pasta is a vegetarian take on arrabbiata and amatriciana sauces, two spicy tomato sauces from Southern Italy that include pancetta or guanciale. The authentic versions would call for grated Pecorino Romano cheese, but I've already broken with tradition here, so use either Pecorino of Parmesan.

1 (28-ounce) can chopped tomatoes in juice
1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1 small dried red chili pepper, crumbled, or 1/4 teaspon red pepper flakes
Salt to taste
1 teaspoon dried oregano or 2 teaspoons slivered fresh basil
1 pound penne, bucatini, pericatelli, or spaghetti
1/2 cup freshly grated Pecorino Romano or Parmesan

Steps:

  • Begin heating a large pot of water for the pasta.
  • Pulse the chopped tomatoes in a food processor fitted with the steel blade, or pass through the medium blade of a food mill with their juice before you begin. Heat the oil over medium heat in a large, wide nonstick skillet or saucepan and add the garlic and crumbled chili (or flakes). Cook, stirring, for 30 seconds to a minute, until the garlic is translucent and begins to smell fragrant, and add the tomatoes and their juice, salt, and oregano if using. Stir and turn up the heat. When the tomatoes begin to bubble, lower the heat to medium and cook, stirring often, until thick and fragrant, 15 to 25 minutes. Taste and adjust seasonings. Keep warm while you cook the pasta.
  • When the pasta water comes to a boil, add a tablespoon of salt and the pasta. Cook the pasta al dente, following the timing instructions on the package but checking a minute or two before the time on the package. When the pasta is done, transfer to the pan with the sauce, add the basil if using, and toss together over medium heat until it is well coated with the sauce. Add half the cheese, toss together and serve, passing the remaining cheese at the table.

When you have ripe, perfect tomatoes that you want to enjoy without much fuss, this is the pasta to make. (If your tomatoes are tasteless, your pasta will be too, so don't try this with the off-season grocery store variety.) It's inspired by pan con tomate, in which grated tomato and its juices are spooned onto garlic toasts. Here, with vigorous stirring, grated tomato and cold butter form a glossy, light, pretty-in-pink sauce that tastes of sweet, just-cooked tomato. The red-pepper flakes, garlic, basil and Parmesan bring out the flavor of the tomato, and while there are plenty of other ways to embellish further, you don't need to: This is lazy, easy summer cooking at its best. 1 pound wavy or ridged pasta (like cavatappi or rigatoni), or a long noodle (like fettuccine)
2 pounds large, ripe tomatoes (about 2 to 3), halved horizontally
4 tablespoons cold unsalted butter
1 large garlic clove, peeled
1/4 teaspoon red-pepper flakes, plus more for serving
Black pepper
Torn basil leaves, for serving (optional)
Finely grated Parmesan, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup pasta cooking water, then drain the pasta.
  • Meanwhile, using the large holes of a box grater, grate the cut ends of the tomato into a large bowl. Discard or compost skins. Grate the butter into the bowl as well. Using the small holes of the box grater, grate the garlic into the bowl. Add the red-pepper flakes, and season generously with salt. Refrigerate until ready to use.
  • Return the drained pasta to the pot, along with the bowl of grated tomato and butter. Set over medium-high heat and cook, stirring constantly, until the mixture thickens slightly and glosses the pasta, 2 to 3 minutes (the sauce will thicken as it sits). Add pasta water as needed to emulsify the sauce. Season to taste with salt and pepper. Serve with more red-pepper flakes, black pepper, basil and Parmesan as desired.
