1 ½ cups jasmine rice
1 teaspoon salt
3 skinless, boneless chicken breast halves
½ cup soy sauce
1 tablespoon water, or as desired
1 (14 ounce) can coconut milk
1 cup white sugar
2 tablespoons curry powder
1 mango - peeled, seeded, and diced
2 cups clover sprouts, or to taste
1 cup finely chopped cashews
1 bunch fresh cilantro, finely chopped
4 green onions, chopped

Steps:

  • Combine 3 cups water, rice, and salt in a saucepan; bring to a boil. Reduce heat to low, cover saucepan, and simmer until liquid is absorbed, about 15 minutes. Remove saucepan from heat and let sit until rice is tender, about 5 minutes more.
  • Place chicken breasts in a skillet and add soy sauce and 1 tablespoon water; turn heat to medium-high. Cover skillet and cook chicken, turning occasionally, until no longer pink in the center, about 20 minutes. Cut chicken into cubes.
  • Combine coconut milk, sugar, and curry powder in a saucepan; bring to a simmer. Add mango to curry sauce and cook until heated through, about 5 minutes.
  • Spoon rice into a bowl and top with sprouts, cashews, cilantro, green onions, and chicken. Drizzle mango curry sauce over chicken.

1 small/medium spaghetti squash
1 lb Mighty Spark Thai-Style Ground Chicken
½ red bell pepper
½ green bell pepper
½ white onion
2 tbsp olive oil
salt and pepper (to taste)
balsamic glaze
sriracha (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • Prepare your spaghetti squash first. Slice in half, remove the seeds from the center with a spoon, and oil each side. Then, sprinkle with salt and pepper. Place squash face down on your sheet pan.
  • Bake squash for 35 minutes.
  • While squash roasts, chop your white onion and red and green bell peppers.
  • Heat a greased or non-stick fry pan to medium heat. Add in a package of Mighty Spark Thai-Style Ground Chicken. About half way through cooking, add your chopped onion and bell peppers. Sauté.
  • Carefully remove the spaghetti squash from the oven. Remember, the pan will be extremely hot. Shred the cooked squash with a fork and add it to the chicken and vegetable mixture.
  • Add balsamic glaze and sriracha and mix ingredients well.
  • Serve and enjoy!

1 pound cooked chicken, shredded or sliced
1 cup sweet chili dressing
1 tablespoon sesame seeds, toasted

  • Bring the water and quinoa to a boil, reduce the heat and simmer, covered, until the quinoa is tender and has absorbed the water, about 15-20 minutes, remove from heat and let sit for 5 minutes, covered, before letting cool.

3 tablespoons peanut oil
1/4 cup rice vinegar
1 tablespoon soy sauce, divided
2 garlic cloves, minced
1/2 teaspoon minced fresh ginger
1 teaspoon chili oil (optional)
1 1/4 lbs chicken wings, tips trimmed and cut at the joint
1/4 cup sweet Thai sweet chili sauce
1 tablespoon hot sauce (siracha)

Steps:

  • In a bowl whisk together peanut oil, rice vinegar, 2 teaspoons soy sauce, garlic, ginger and chili oil (if using). Place chicken wings in marinade and toss to coat. Cover and refrigerate for at least 1 hour.
  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Place marinated chicken wings on top, cook 20 - 25 minutes or until chicken is cooked through and skin has darkened. Turning once.
  • In another bowl whisk together sweet Thai chili sauce, 1 teaspoon of sriracha and remaining teaspoon of soy sauce. Taste and add more sriracha if desired.
  • Transfer hot wings to the bowl and toss to coat.
  • Serve with plenty of napkins.

Steps:

  • In a large bowl, mix together the chicken and bread crumbs. Season with green onion, ground coriander, cilantro, chili sauce and lemon juice; mix well.
  • Using damp hands, form mixture into evenly shaped balls that are either small enough to eat with your fingers, or large enough to use as burgers.

2 tablespoons sugar
1 tablespoon white vinegar or 1 tablespoon cider vinegar
1/2 teaspoon salt, to taste
2 tablespoons vegetable oil
1 tablespoon chopped garlic
8 ounces boneless skinless chicken breasts, cut into 1-inch chunks (or chicken thighs)
1 cup small cauliflower floret
1/2 cup coarsely chopped onion
2 tablespoons water
1/2 cup cubed cucumber (1/2 inch cubes)
1/2 cup halved cherry tomatoes

Steps:

  • In a bowl, combine fish sauce, sugar, vinegar and salt; stir well and set aside.
  • Heat a wok or a large deep skillet over high heat.
  • Add oil and swirl to coat pan.
  • Add garlic and toss well, until fragrant, about 15 seconds.
  • Add chicken and spread into a single layer.
  • Cook, until edges turn white, about 1 minute; toss well.
  • Add cauliflower florets and onion and toss well.
  • Add water and cook, tossing once or twice, until cauliflower is tender, about 2 minutes.
  • Add fish sauce mixture and toss well.
  • Cook, undisturbed, until chicken is cooked through, about 1 minute more.

1/2 pound sliced fresh mushrooms
1 large sweet onion, cut into 1-inch pieces
1 large sweet red pepper, cut into 1-inch pieces
1 cup hoisin sauce
3/4 cup sweet chili sauce
1/4 cup reduced-sodium soy sauce
2 tablespoons lime juice
2 garlic cloves, minced
1-1/2 teaspoons minced fresh gingerroot
1 teaspoon rice vinegar
Torn fresh cilantro leaves
Hot cooked rice, julienned green onions, lime wedges, and Sriracha chili sauce

Steps:

  • Place pork in a 6-qt. electric pressure cooker. Top with mushrooms, onion and red pepper. Whisk together hoisin sauce, chili sauce, soy sauce, lime juice, garlic, ginger and rice vinegar; pour over vegetables. Lock lid; close pressure-release valve.
