This is from the July/August 2009 Vegetarian Times. They recommend serving with low-sodium soy sauce and chili oil. Posted for safekeeping.

4 green tea bags
1 cup basmati rice
1 garlic clove, minced
1 teaspoon ginger, minced
1 1/2 cups mixed vegetables, frozen
1/2 cup green onion, chopped
1/2 cup sesame seeds, toasted

Steps:

  • Place tea bags in a 4 c measuring cup and cover with 3 c water. Steep 7-10 minutes and discard the tea bags.
  • Combine rice, garlic, ginger, and tea in a medium saucepan and bring to a boil. Cover pan, reduce heat to medium low, and simmer 10 minutes.
  • Add frozen vegetables and cover pan again. Cook 5-10 minutes more, or until tea is absorbed and vegetables are hot and crisp-tender. Stir in green onions and sesame seeds and season with salt and pepper.

2 cups sweetened tea
1 cup long-grain white rice (uncooked)
1/2 teaspoon salt
2 tablespoons butter
1/2 cup pecans (chopped)
1 large jalapeno chile (seeded and minced)
1 large fresh peach (peeled and diced)
1 tablespoon fresh chives (chopped)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Bring tea to a boil in a 3-qt. saucepan over medium-high heat; stir in rice and 1/2 teaspoons salt. Cover, reduce heat to low, and simmer 20 minutes or until tea is absorbed and rice is tender.
  • Meanwhile, melt butter in a large skillet over medium heat; add pecans, and cook, stirring often, 3 to 4 minutes or until toasted and fragrant.
  • Add jalapeno, and saute 1 minute.
  • Stir in hot cooked rice, diced fresh peach, chives, 1/4 teaspoons salt, and pepper.
