KIELBASA-SWEET POTATO FOIL PACKETS

- Preheat a grill to medium. Toss the kielbasa, sweet potatoes, onion, celery, apricots and 4 thyme sprigs in a large bowl with 2 tablespoons olive oil. Drizzle with 1/4 cup orange juice and season with 1/2 teaspoon salt and a few grinds of pepper.
- Tear off four 24-inch sheets of foil and fold each in half. Pile the kielbasa mixture on one side of each foil sheet. Fold the foil over and crimp the edges to seal well. Grill the packets, rotating them occasionally so they don't burn, until the vegetables are tender, 18 to 22 minutes.
- Meanwhile, combine the vinegar with the remaining 1 cup orange juice, 1 tablespoon olive oil and 2 thyme sprigs in a medium skillet; season with 1/4 teaspoon salt. Bring to a boil and cook until syrupy and reduced to about 3 tablespoons, 5 to 7 minutes. Discard the thyme. Open the foil packets, drizzle with the sauce and sprinkle with celery leaves.

- Bring a medium pot of water to a boil and add the sweet potatoes. Cook for 5 minutes, drain and rinse with cold water to cool. Dry off any excess water with a kitchen towel.
- Put the onions and cooled sweet potatoes in the work bowl of a food processor fitted with the metal chopping blade. Pulse until the sweet potatoes are almost pureed but still a bit grainy. You should have some very small bits of potato visible. Transfer the mixture to a large bowl and stir in the flour, 1/2 teaspoon salt and 1/4 teaspoon pepper to combine.
- Using your hands, shape the potato mixture into 1- to 1 1/2-inch-long cylinders, packing them very tightly.
- Heat about 2 inches of oil in a deep heavy skillet over medium-high heat until a deep-frying thermometer inserted in the oil registers 350 degrees F. Line a large plate or baking sheet with paper towels.
- Working in batches, add the tater tots to the shimmering hot oil and cook until golden brown, 3 to 5 minutes, turning with tongs or a slotted spoon to ensure even browning and being careful not to overcrowd the pan. With a slotted spoon or skimmer, remove the browned tots to the towel-lined plate to drain. Serve warm.

- Peel the sweet potatoes and cut in half lengthwise. Slice each half into 1/2-inch thick slices.
- Peel red onion and cut in half. Cut each half into wedges. Combine all ingredients except lime in a large bowl and toss to coat.
- Set out six 12x14-inch sheets of aluminum foil, shiny side down.
- Divide potato mixture evenly and place in the center of each foil sheet. Place one lime wedge in each packet.
- Fold top over potatoes and crimp sides of foil to seal.
- Grill or bake (350 degrees) packets over medium heat for 25-30 minutes or until potatoes are tender.

- Wash potato and remove any blemishes. I keep the skins on. There is a lot of vitamins in that skin! Slice in half lengthwise. With cut side down, cut 1/2 inch slices.
- Spray a piece of foil large enough to fan out the sliced potato. Lightly drizzle olive oil over potato slices. Sprinkle rosemary (fresh is best but dry will do), salt and pepper on the potatoes. Fold the foil to create a packet. You can also split the potato into two packets if the potato is large.
