1 medium sweet red pepper, chopped
2 celery ribs, chopped
1 small onion, chopped
1 tablespoon canola oil
2 cans (15 ounces each) black beans, rinsed and drained
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (4 ounces) chopped green chilies
3/4 teaspoon ground cumin
1-1/2 cups cooked instant brown rice
6 tablespoons reduced-fat sour cream

Steps:

  • In a large nonstick saucepan, saute the pepper, celery and onion in oil until tender. Add the beans, broth, tomatoes, chilies and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until thickened., Divide rice among six soup bowls; top with soup and sour cream.

1 Tbs. olive oil
1 onion (, chopped, 1 cup)
1 red bell pepper (, seeded and chopped, 1 cup)
1 large carrot (, peeled and chopped, 1 cup)
1 rib celery (, chopped, 1/2 cup)
1 Tbs. chili powder
1 tsp. ground cumin
1/2 tsp. kosher salt
2 cans (15.5 ounces each) black beans (, drained and rinsed)
2 cups vegetable broth ( or chicken broth)
1 can (10 ounces) Rotel Original diced tomatoes & green chilies
2 Tbs. cilantro leaves
shredded Mexican cheese (, optional garnish)
sour cream (, optional garnish)
chopped red pepper (, optional garnish)

Steps:

  • Heat olive oil over medium-high heat in medium saucepot.
  • Add onion, red pepper, carrot, celery, chili powder, cumin and kosher salt and cook until tender-crisp, 3-4 minutes.
  • Add black beans, broth, and Rotel tomatoes and chilies and bring to a boil.
  • Reduce heat and simmer 25 minutes or until vegetables are tender.
  • Stir in cilantro leaves and garnish with shredded cheese, sour cream and chopped red bell pepper if desired.

This sweet potato black bean soup is not only ridiculously good, it's also ridiculously affordable! This vegetarian meal is super creamy and always has us wanting a second helping!

1½ cups dried black beans (rinsed (or 3 cans black beans, drained and rinsed))
1 large or 2 medium sweet potatoes (diced)
½ large onion (diced small)
1 t minced garlic
4 cups vegetable stock (or chicken stock, if you don't care about it being truly vegetarian)
3/4 t ground coriander
1 t ground cumin
½ t black pepper
1 t salt (omit if you've used canned beans)
2 T lime juice

Steps:

  • Pour the beans, diced sweet potato, diced onion and garlic into a crockpot. Pour the vegetable stock over the top and sprinkle on the spices (do not add lime juice). Stir to combine, put the lid on and let cook on low for 8 hours (or on high for 5 hours).
  • When the beans and potatoes are very soft, stir in lime juice and blend with an immersion blender until mostly smooth (I like to leave some small chunks) (alternatively, use a traditional blender and pulse to get it mostly smooth). If it's too thick, add some more broth to thin it out.
  • Salt to taste (mine needed about a tablespoon more salt because my vegetable stock is not very salty at all) and serve.

Back in college, a great local cafe stayed opened into the wee hours ladling up their version of this stuff. The first time I slurped some of it down after midnight, I decided to make black bean soup my own tradition. Mine is hearty and smoky, and if it's lying around, I'll also throw in a can of beer for good taste and in keeping with the spirit of a good night on the town. Like the onion soup, you'll want to make this ahead of time so you're not faced with the prep-work when you and your friends just want to kick back and chow down after a long night. Using smoked bacon makes all the difference in the world because those beans are just begging for that rich, smoky flavor.

10 slices bacon, finely chopped
2 medium onions, chopped (about 2 1/2 cups)
6 garlic cloves, pressed
1 (14 1/2-ounce) can reduced-sodium chicken broth
1 1/2 cups canned chopped tomatoes
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 tablespoon chili powder
4 (15 1/2-ounce) cans black beans, drained but not rinsed

1 bunch cilantro

Thinly sliced scallions, for garnish

Steps:

  • Put the bacon into a large heavy pot and place it over medium heat. Cook until it starts to give up its fat, about 4 minutes. Stir in the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Stir in the garlic and cook until you can smell it, about 1 minute. Add the broth, tomatoes, ketchup, Worcestershire, and chili powder. Stir in the beans, turn the heat to high and bring to a boil. Adjust the heat so the soup is bubbling gently and cook 10 minutes. Season with salt and pepper.
  • Meanwhile, pick off all the thick stems from the cilantro. Wash it and shake dry. Chop the cilantro coarsely and stir it into the soup when it has been simmering 10 minutes. cook until the soup is thickened, about 5 minutes. Stir in the lime juice. Serve with the garnishes.

Two 15.5-ounce cans black beans, rinsed and drained
One 14.5-ounce can reduced sodium, fat-free chicken or vegetable broth
1 large tomato, chopped
1 cup cooked brown rice
1/4 cup chopped fresh cilantro

Steps:

  • In a large saucepan, heat the oil over medium-high heat. Add the onion, celery, bell pepper and garlic. Saute for 5 to 6 minutes, or until the veggies have softened. Add the chili powder and cumin; stir and cook for an additional minute. Add the beans to the saucepan and mash with a potato masher or large fork (mash some and leave the rest whole). Stir in the broth and tomato. Increase heat to high and bring the soup to a boil. Remove from heat and serve- top each serving with 1/4 cup rice and 1 tablespoon cilantro.

1 Tablespoon of neutral oil (vegetable, canola, etc.), or ¼ cup of water
1 small yellow or red onion, diced
1 small red or green bell pepper, diced
1 medium zucchini, diced
3 garlic cloves, diced
7 cups of water
2-3 cubes of vegetable bouillon (see method)
15 ounces of black beans (or any kind of bean), drained
15 ounces of cannellini beans (or any kind of bean), drained
14.5 ounces of diced tomatoes, in their juices
15.25 ounces of corn kernels, drained
1/2 Tablespoon of ground cumin
1/2 cup of vegan cheddar shreds (optional)
1 large avocado, diced (optional)
Hot sauce (optional)
Tortilla chips, for garnish (optional)

Steps:

  • In a large pot over medium heat, heat the oil (or water). Add the onion, bell pepper, zucchini, and garlic, and sauté for 5 minutes or until the onion becomes tender and translucent.
  • Add the water and bouillon cubes, beans, diced tomatoes in their juices, corn kernels, ground cumin, and vegan cheddar shreds (if using). Bring to a boil.
  • Boil until the vegetables become tender, about 10 minutes.
  • Remove from heat, serve, and garnish with diced avocado, hot sauce, and tortilla chips (if using).

I have just developed this very healthy soup that is low in fat and sodium, no cholesterol and low Fat/Cal %.

2 cups dried black beans
32 fluid ounces vegetable broth or 32 fluid ounces chicken broth, divided
1 large onion, chopped small
4 cloves garlic, chopped small
2 cups water
1 large potato, peeled and cubed 1/2 inch
14 1/2 fluid ounces canned plum tomatoes, crushed and include liquid (no salt)
1/2 teaspoon dried thyme
3/4 teaspoon ground cumin
1 cup fresh green beans, cut into 3/4 inch lengths
1 large carrot, scrubbed and coarsley shredded
1 large green pepper, seeded and chopped
1 large sweet red pepper, seeded and chopped
2 large celery ribs, chopped small
1/4 teaspoon Tabasco sauce or 1/4 teaspoon red hot sauce
4 large green onions, chopped small

Steps:

  • Soak black beans in water overnight.
  • The next day, drain and rinse before using.
  • In a large saucepan or heavy bottom cooking pot, add 1/2 cup of broth, chopped onion and chopped garlic and bring to boil.
  • Reduce heat; cover and simmer for 6 to 8 minutes.
  • or until onions are jnst tender.
  • Stir in black beans; add 2 cups water, diced potato, crushed plum tomatoes including liquid, thyme, cumin, green beans, and remaining broth; return to boil.
  • Reduce heat, cover and simmer for 15 to 20 minutes or until potatoes are tender, stirring occasionally.
  • Add shredded carrots, green and red peppers, chopped celery, Tabasco sauce and cook for an additional 5 minutes.
  • Adjust seasonings to taste.
  • Garnish each serving with chopped green onions.
  • Refrigerate any unused portion.
  • You may wish to add some low-sodium soy sauce to the soup, use about 2 tablespoons, however it will increase the sodium count.
  • You can also use canned black beans to speed up the process.
  • Use 2- 15 fluid ounce cans, drained and rinsed.
  • Cauliflower florets would also enhance the soup, use about 1 cup of florets.

1/2 cup onion
3 tablespoons minced garlic
2 (14 ounce) cans chicken broth
1 1/2 teaspoons cumin
1/2 teaspoon cinnamon
1 1/2 teaspoons chili powder
1 tablespoon cilantro
2 (15 1/4 ounce) cans black beans
1 (14 1/2 ounce) can chili-ready tomatoes or 1 (14 1/2 ounce) can diced tomatoes
1 (15 1/4 ounce) can corn

Steps:

  • Spray pan with non-stick spray. Dice onion, add to pan. Add garlic.
  • Cook on medium-high heat until onion is translucent.
  • Add chicken broth, cumin, cinnamon, chili powder, cilantro, and diced tomatoes. Reduce to medium heat.
  • Add drained corn and black beans.
  • Simmer for 30 minutes to an hour. (the longer the better!).

1 medium white onion, chopped
1 yellow bell pepper, diced
5 cloves garlic, crushed
4 teaspoons chili powder
1 ½ teaspoons ground cumin
1 ½ teaspoons dried oregano
½ teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon chipotle pepper powder
6 cups vegetable broth
1 pound dry black beans
1 (4 ounce) can chopped Hatch chile peppers, undrained
1 pinch garlic salt, or to taste
1 cup pico de gallo
1 red bell pepper, sliced
1 lime, cut into wedges

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil and heat until shimmering. Add onion and yellow pepper; cook and stir until translucent and soft, about 5 minutes.
  • Add garlic, chili powder, cumin, oregano, salt, pepper, and chipotle powder. Stir until fragrant, about 1 minute. Add broth, beans, and chile peppers. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 40 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 25 minutes. Unlock and remove the lid. Use a stick blender to blend beans until thick and creamy. Season with garlic salt. Serve with pico de gallo, red bell pepper slices, and lime wedges.

1/2 pound boneless skinless chicken breasts, cut into 1-inch cubes
2 cans (14-1/2 ounces each) reduced-sodium chicken broth, divided
2 cups frozen corn
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 jalapeno pepper, seeded and chopped
2 tablespoons minced fresh cilantro
3 teaspoons chili powder
1/2 teaspoon ground cumin
1 tablespoon cornstarch
18 tortilla chips
Shredded reduced-fat Mexican cheese blend, optional

Steps:

  • Place a large nonstick saucepan coated with cooking spray over medium heat. Add chicken; cook and stir 4-6 minutes or until no longer pink. Reserve 2 tablespoons broth; add remaining broth to pan. Stir in corn, beans, tomatoes, jalapeno, cilantro, chili powder and cumin. Bring to a boil. Reduce heat; simmer, uncovered, 15 minutes. , Mix cornstarch and reserved broth until smooth; gradually stir into soup. Bring to a boil; cook and stir 2 minutes or until thickened. Top servings with crushed chips and, if desired, cheese.
