- Add all ingredients to a small bowl and stir until combined. Store in an airtight container until ready to use. Keeps well for at least a couple of months (I haven't tried any longer!)

SWEET AND SMOKY BABY BACK RIBS
Steps:
- Remove the thin papery skin on the back of each rack of the ribs or ask your butcher to do it. (Pull it off in a sheet with your fingers, using a corner of a dish towel to gain a secure grip.) Place the ribs in a roasting pan and pour the bourbon over them. Let marinate in the refrigerator for 1/2 hour, turning the ribs several times.
- Meanwhile, combine the ingredients for the rub in a bowl and stir to mix. Pour off and discard the bourbon. Sprinkle the ribs on both sides with 2/3 of the rub, patting it in with your fingers. Let the ribs marinate for 30 minutes, while you light your grill.
- Set up your grill for indirect grilling and smoking, using wood chips and adjust the heat to 350 degrees. Arrange the ribs on a rack in the center of the grill away from the heat and cook until very tender and the meat has pulled away from the ends of the bones, 1 1/4 to 1 1/2 hours. The last 15 minutes, brush the ribs with 1/3 cup sauce. Sprinkle with the remaining rub. Serve the remaining barbecue sauce on the side.

- Preheat oven to 325 degrees or prepare your BBQ/Smoker for your own preference.
- Whisk together the dry rub ingredients.
- Use 1/3 of the mixture on each slab of ribs that you have. Each slab should be approximately 3 lbs ( see the ones in our photos for size reference.) Place any remaining rub in a sealed container for later.;
- Place the ribs on a lightly oiled baking sheet.

- Spread on cookie sheet to dry, about 2-3 hours.

KANSAS CITY SWEET AND SMOKY BARBECUE RUB

SWEET AND SMOKY TURKEY

- Dry brine the turkey: Place the turkey in a roasting pan fitted with a rack. Rub the turkey liberally with salt and pepper. Place in the refrigerator, uncovered, 8 hours or up to overnight.
- Preheat a gas grill for cooking over medium heat (about 350 degrees F).
- Set the turkey on the counter to take the chill off.
- Meanwhile, put the paprika, tomato paste, vinegar, guajillo chiles, caraway seeds, coriander, cumin, cayenne pepper and 3 cloves garlic in a food processor and pulse to combine. Add some olive oil just until a thick paste is formed. Taste and season with salt.
- Stuff the center cavity of the turkey with the onion, orange, lemon, thyme and the remaining 3 cloves of garlic. Rub the turkey generously all over with the spice paste. Tie the legs tightly together with kitchen twine. Tuck the wings underneath the turkey. Add 2 cups chicken stock to the pan and tent with aluminum foil.
- Place the roasting pan in the center of the grill, directly on the grates. Let cook for 45 minutes.
- Remove the foil and add 2 cups chicken stock. Close the lid and continue to cook until the internal temperature reaches 145 degrees F, about 35 minutes more.
- Meanwhile, add the honey to a small bowl. Once the temperature of the turkey reaches 145 degrees F, use a turkey baster to add 1/4 cup pan juices to the bowl with the honey and whisk to combine. Using a pastry brush, glaze the bird all over with the honey mixture.
- Close the grill and continue to cook until the internal temperature reaches 155 degrees F, another 15 to 20 minutes. Remove the turkey and let rest 30 minutes (the internal temperature will continue to rise to 165 degrees F). Serve!

- Whisk together the brown sugar, chili powder, smoked paprika, kosher salt, cumin, dried mustard, dried thyme, dried oregano, garlic powder, onion powder, and freshly cracked black pepper together in a bowl.
- To use, sprinkle the meat with a liberal amount of seasoning and rub it in. Be sure to cover the entire surface of all sides of the meat.

- Preheat oven to 425° Cover 2 large sheet pans completely with aluminum foil. Place a cooling rack in the sheet pans, spray the racks, and lay your chicken wing pieces in nice rows, leaving a little space between each piece. Sprinkle the wings with salt and pepper (even though we will be putting our dry rub on them, we season all layers of our food!) and brush both sides of each wing with the oil.
- Combine all the dry rub ingredients in a bowl and whisk until completely mixed. Sprinkle a generous amount of the dry rub on both sides of the wings. You can use your fingers to do this, or I had this old Parmesan cheese shaker that I poured the rub into and used that. I’ve even saved old spice jars with shaker lids and used them to sprinkle on the rub. Do whatever makes it easier for you, just don’t be skimpy with the rub. Get it on there!
- Bake at 425° for 20 minutes, then turn the wings over. If you want to sprinkle on some more rub at this time, go for it! I sure did! Bake for another 20 minutes or until the wings are crispy and nicely caramelized. Serve with my delicious Ranch Dressing and (maybe) some carrots and celery. Share with a friend or two, if they are wing worthy. Your decision.
