VIETNAMESE RICE PAPER ROLLS (SPRING ROLLS)



Vietnamese Rice Paper Rolls (Spring Rolls) image

Recipe video above. Vietnamese Rice Paper Rolls are incredibly fresh and healthy. The Vietnamese peanut dipping sauce that accompanies this is sensational and completely addictive!

7 - 14 sheets of 22cm/8.5" round rice paper (Note 1)
11 small cooked prawns/shrimp (about 12cm/5" in length, unpeeled including the head)
50g / 1.5 oz dried vermicelli noodles
7 lettuce leaves - use a lettuce with soft leaves, like Oak or Butter Lettuce (Note 2)
14 mint leaves
1 cup bean sprouts
1 tbsp peanut butter, preferably smooth ((crunchy is ok too))
2 tbsp Hoisin Sauce
1 1/2 tbsp white vinegar (or lime juice)
1/3 cup milk ( (any fat %) (or water))
1 garlic clove, minced
1/2 tsp crushed chilli, samba oelak or other chilli paste, adjust to taste (optional)

Steps:

  • Peanut Sauce: Combine the Peanut Dipping Sauce ingredients. Mix briefly (it won't come together), then microwave for 30 seconds. Mix again until smooth. Set aside to cool. Adjust sour with vinegar, salt with salt and spiciness to taste. Thickness can be adjusted with milk or water once cooled.
  • Place vermicelli noodles in a bowl and cover with warm water for 2 minutes, then drain (or follow packet instructions).
  • Peel the prawns, slice in half lengthwise and devein (watch video).
  • Remove the crunchy core of the lettuce leaves (watch video).
  • Tip - LETTUCE BUNDLE (Note 4): Place some vermicelli noodles and bean sprouts in a lettuce leaf, then roll it up, finishing seam side down. Repeat.
  • Fill a large bowl with warm water. The bowl doesn't need to be large enough to fit the whole rice paper in one go.
  • Place two rice papers together (if using 2). Note which side is the smooth side - this is supposed to be the outside of the spring roll. Submerge the rice papers into the water (both of them at the same time, together) for 2 seconds. If your bowl isn't large enough to fit the whole rice paper in one go, that's fine, just rotate it and count 2 seconds for each section you submerge into the water.
  • Place both the rice papers (one on top of the other, they will stick together) on a board or the counter with the smooth side down.
  • On the top part of the rice paper, place 3 prawns with a mint leaf in between, as per the photo below.
  • Place the lettuce bundle with the seam side down onto the middle of the rice paper.
  • Fold the left and right edges of the rice paper in, then starting from the bottom, roll up to cover the lettuce bundle. Then keep rolling firmly. The rice paper is sticky, it will seal itself.
  • If you placed the ingredients on the rice paper as per the photo below, your rice paper rolls should look pretty with the prawn and mint leaves on the smooth side of the roll and the seam on the side or underside of the roll.
  • Serve immediately with the peanut dipping sauce.

BASIC SWEET-ROLL DOUGH

1/2 cup whole milk
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

Number Of Ingredients 16

2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
2 teaspoons canola oil
1/2 cup water
1/4 cup creamy peanut butter
1/4 cup hoisin sauce
2 tablespoons tomato paste
ROLLS:
4 ounces uncooked thin rice noodles
2 teaspoons hoisin sauce, optional
1 medium sweet red pepper, julienned
1 medium cucumber, seeded and julienned
1 medium carrot, julienned
12 rice papers (8 inches) or spring roll wrappers
1/2 cup dry roasted peanuts, chopped
1/2 cup fresh cilantro leaves, optional

Steps:

  • In a small saucepan, saute the garlic and pepper flakes in oil for 1-2 minutes or until garlic is tender. Add the water, peanut butter, hoisin sauce and tomato paste; cook and stir for 2-4 minutes or until thickened. Remove from the heat; set aside., For rolls, cook noodles according to package directions. Drain and rinse in cold water; drain well. Add hoisin sauce if desired; toss to coat. In a small bowl, combine the red pepper, cucumber and carrot. Set aside noodles and vegetables., Fill a shallow bowl with water. Soak a rice paper in the water just until pliable, 30-45 seconds (depending on thickness of rice papers); remove, allowing excess water to drip off., Place on a flat surface. Layer vegetables and noodles down the center; top with peanuts and, if desired, cilantro. Fold both ends over filling; fold one long side over the filling, then roll up tightly. Place seam side down on a serving platter. Repeat with remaining ingredients., Cover with damp paper towels until serving. Cut rolls diagonally in half; serve with peanut sauce.

SHRIMP CHEUNG FUN (RICE ROLLS)

The slightly sweet but mostly textural wrapper of the rice roll is the canvas for the sweetness of the shrimp.

Number Of Ingredients 17

Rice rolls:
1½ cups rice flour
3 tablespoons tapioca starch
1 tablespoon wheat starch
1 tablespoon potato starch
½ teaspoon salt
2½ cups lukewarm water
Neutral oil for greasing the pan
18 medium to large or 36 small shrimp, peeled, deveined, and patted dry
Sweet dipping sauce:
½ cup light soy sauce
¾ cup dark soy sauce
¾ cup sugar
1 cup water
1½ teaspoons oyster sauce
1½ teaspoons chicken powder (such as Lee Kum Kee)
Special Equipment: 12-inch steamer basket, a 9x6-inch "eighth" sheet pan, plastic bench scraper

Steps:

  • Rice rolls:
  • Sift the rice flour, tapioca starch, wheat starch, potato starch, and salt into a large bowl. Mix in the lukewarm water, stirring until a consistency of very thin glue is reached.
  • When ready to cook, mix again until there are no clumps. Using a brush, generously oil a rimmed eighth sheet pan. Using a ladle, pour just as much batter in the pan as needed to form a thin, even layer. (The thinner you can keep your roll, the better.) Put 3 medium to large or 6 small shrimp onto each roll, placing them 1 inch from one narrow edge.
  • Set up a 12-inch steamer: Fill a wok with enough water to come up to the lower rim of a steamer but not so much the waterline is above the food bed. (If you do want to DIY it, just use a plate in a pot. Fill a pot with ½ an inch of water. Then make a sort of tripod out of tinfoil by forming three golf ball- sized balls and placing them in the bottom of the pot, making sure their tops rest above the water- line. Rest the plate on the tinfoil, cover, and steam.) Bring water to a boil.
  • Place the sheet pan in the steamer, cover, and steam for 6 minutes, or until you see bubbles on top of the mixture. If you need more water- water tends to evaporate-add boiling, not cold, water so as not to stop the steaming.
  • Carefully remove the sheet pan from the steamer and set on a work surface (it will be hot, so be prudent). Let cool for a minute or so. Then, using a bench scraper, start rolling the rice roll from the top of the pan away from you until folded into a loose roll. Cut in half widthwise.
  • Brush the pan with oil again and repeat until you've used up all the batter.
  • When ready to serve, briefly re-steam the rolls for 1 to 2 minutes until hot.
  • Sweet dipping sauce:
  • Heat a small saucepan to medium-low heat and add all ingredients. Stir until sugar and chicken powder are dissolved. Spoon atop rice rolls.

This was inspired by the Pinoy dessert. I lived in the Philippines for 4 months, so the other day as I was recreating some of the magic of pinoy food, I came across this recipe. Lacking banana leaves I created my own version!

1 pinch salt
2 cups calrose rice, short grain, glutinous
1 (8 ounce) can coconut milk, sweetened
1 head cabbage, leaves pulled off
water

Steps:

  • Boil water and cook cabbage leaves until soft - do not overcook.
  • Soak rice in salt water until it swells.
  • Drain Water. Add about 1 cup of coconut milk.
  • When the cabbage is soft, drain water.
  • Take a scoop of rice and place it down the middle of the cabbage leaves, gently roll the leaf around the rice. Be aware that the rice will expand, so do not fill them too full.
  • Place rice rolls in 1 cup of water and the rest of the coconut milk. Add any leftover liquid the rice was sitting inches Cover and bring the liquid to a boil then place on low heat, allowing the rice to cook for about 20 minutes.
  • Serve gently with a spatula.

50g fine vermicelli rice noodles
12 rice paper wraps
handful of mint or coriander leaves, or snipped chives (or a mixture)
200g cooked prawns , or cooked and shredded chicken
¼ cucumber , trimmed and finely sliced into matchsticks
1 carrot , trimmed and finely sliced into matchsticks
40g red cabbage , very finely sliced
small handful of radishes , trimmed and thinly sliced
½ mango , stoned, halved and finely sliced
2 tbsp sweet chilli sauce
1 tbsp tahini
1 tbsp low-salt soy sauce
1 tsp sesame oil , plus extra for drizzling
½ lime , juiced

Steps:

  • Soak the noodles in boiling water from the kettle, following pack instructions. Drain and rinse under cold running water to cool, then toss in a little sesame oil to stop them sticking together.
  • Next, make the dipping sauce by mixing all the ingredients together. Set aside.
  • Fill a wide, shallow dish a few centimetres deep with warm water. Working with one rice paper wrap at a time, soak it for a few seconds until it's flexible, then lay it on a chopping board. Scatter some of the herbs down the centre, then top with a couple of prawns or a little bit of chicken, then some veg pieces and mango, and a small bundle of noodles. Try to keep the fillings in the centre, and don't overfill. Tuck the ends of the wrap over the ingredients to slightly enclose them, then roll up from the sides, keeping everything as tight as you can. Put the finished rolls on a plate covered with a damp sheet of kitchen paper until you're finished assembling all the rolls. Will keep in the fridge for up to 24 hrs. Serve with the sesame dipping sauce.
