SPAETZLE WITH BRATWURST, SWEET POTATOES AND CARAMELIZED ONIONS

Spaetzle With Bratwurst, Sweet Potatoes and Caramelized Onions image

Let's celebrate Oktoberfest with classic German comfort food. This spaetzle with bratwurst, sweet potatoes and caramelized onions is baked to perfection with melted Gruyere and havarti and topped with fresh sage for a cozy dish that's full of fall flavors. Now all that's left is to grab a good German beer, and you have yourself the ultimate Oktoberfest meal.

Provided by Amanda McGrory-Dixon

Categories     Main Dishes

Time 1h30m

Number Of Ingredients 11

2 tablespoons butter
1 sweet yellow onion (uniformly sliced )
Pinch of sugar
1 medium sweet potato (cut into 1-inch cubes)
1 tablespoon olive oil
Salt and pepper
12 ounces bratwurst links (about three to four links, depending on the size)
5 cups cooked spaetzle
1 ½ cups grated havarti
1 ½ cups grated Gruyere
Fresh sage (chopped, for garnish)

Steps:

  • In a skillet over medium-low heat, melt the butter and then add sliced onions and pinch of sugar. Stir to coat. Continue to let the onions cook until caramelized. Don't mess with the onions too often but give them a stir about every five to eight minutes. This process takes some time, so it's best to start on the onions while prepping the other ingredients.
  • Heat oven to 425 degrees. Toss sweet potato cubes with olive oil and salt and pepper. Roast until soft, about 20 minutes.
  • Cut the bratwurst lengthwise and remove the ground bratwurst from the casing. Over medium heat, cook the bratwurst until no longer pink, about 10-15 minutes. As the brat cooks, break up with a spoon to crumble. Once cooked, move bratwurst to a paper towel-lined plate.
  • Heat oven to 400 degrees. Grease a 9-inch-by-13-inch baking dish or 12-inch cast-iron skillet. Layer half of the cooked spaetzle and top with half of the havarti and Gruyere. Spread half of the bratwurst crumbles, roasted sweet potato cubes and caramelized onions on top. Repeat for the last remaining layer.
  • Bake until the cheese melts, about 15-20 minutes. Top with plenty of fresh chopped sage for added fall flavor. Enjoy!

SWEET POTATO QUICHE

Sweet Potato Quiche image

A beautiful quiche filled with roasted sweet potatoes, caramelized onions, goat cheese, and rosemary. A perfect balance of sweet and savory flavors that's perfect for brunch or dinner.

Provided by Erin Clarke / Well Plated

Categories     Breakfast

Time 2h40m

Number Of Ingredients 10

1 Whole Wheat Pie Crust
2 tablespoons extra virgin olive oil (divided)
1 large sweet potatoes ((or 2 small) about 1 pound)
3/4 teaspoon kosher salt (divided)
1 large yellow onion (thinly sliced)
4 large eggs
2/3 cup milk
1/4 teaspoon ground nutmeg
4 ounces goat cheese (crumbled)
1 tablespoon fresh rosemary (chopped)

Steps:

  • Prepare the pie dough as directed. Fit it into a deep, 9-inch pie dish and refrigerate until ready to bake.
  • Wash and peel the sweet potatoes, then cut them into 1/4-inch cubes. Toss the pieces with 1 1/2 tablespoons olive oil and 1/2 teaspoon kosher salt. Spread on a baking sheet in a single layer, then roast at 400 degrees F until soft, about 20 minutes. Set aside. Reduce oven temperature to 350 degrees.
  • In a large skillet, heat the remaining 1/2 tablespoon olive oil over medium. Add the sliced onions and cook, stirring occasionally, until soft and golden, about 20 minutes. Set aside.
  • Remove the dough from the refrigerator and place it on a well-floured surface. Working from the center, roll the dough into a 12-inch circle, then transfer it to an ungreased 9″ pie dish. With a fork, pierce rows of holes in the bottom and sides of the dough, about 1 inch apart. Place the pan in a 350 degree F oven and bake until the crust is lightly golden, 10 to 15 minutes. If you will be baking the quiche right away, increase the oven temperature to 375 degrees F.
  • Layer the sweet potatoes in the bottom of the par-baked crust, then sprinkle the caramelized onions, goat cheese, and rosemary over the top. (At this point, the crust and toppings may be covered and refrigerated together for up to 24 hours.) When ready to bake, in a large bowl, whisk together the eggs, milk, nutmeg, and remaining 1/4 teaspoon kosher salt. Pour the egg mixture over the quiche, then carefully place the quiche on a large baking sheet.
  • Bake at 375 degrees F for 45 to 55 minutes, until the quiche puffs up and just barely jiggles. Remove from the oven and let sit 10 minutes. Serve warm or at room temperature.

SWEET POTATO AND CARAMELIZED ONION PIZZA

Sweet Potato and Caramelized Onion Pizza image

This easy to make flatbread pizza features ribbons of sweet potato and a tangle of caramelized onions overtop a bed of ricotta cheese, and gets finished with fresh herbs and feta.

Provided by Heidi

Time 1h25m

Number Of Ingredients 10

2 large sweet onions (peeled and cut in half then thinly sliced)
2 tablespoons butter
Kosher salt
2 store bought flat breads
1 15- ounce container whole-milk ricotta cheese
3-4 sprigs fresh thyme leaves (about 2 tablespoons)
1/2 tablespoon olive oil
1 small sweet potato (peeled)
3 ounces feta cheese
Flake sea salt

Steps:

  • Melt butter over medium heat and add onions to large skillet or pan. Stir gently to coat with butter, sprinkle with pinch or two of kosher salt. Stir onions every 5-10 minutes. Onions will begin to darken and caramelize the longer they've cooked, up to 1 hour.
  • Preheat the oven to 450°F.
  • To make each pizza: Mix ricotta cheese with olive oil and 1 tablespoon of fresh thyme leaves. Spread half of the ricotta cheese on one piece of flat bread. Top with half of caramelized onion. Using vegetable peeler, peel long ribbons of sweet potato from root to tip. Sweet potatoes will shrink as they bake so peel a few more than you think you'll need.
  • Layer sweet potatoes in ribbons then sprinkle with half of feta cheese. Top with leaves of fresh thyme and bake for 5-10 minutes or until potatoes have lightly browned. Remove from oven, drizzle with more olive oil and season with flake sea salt. Serve warm or at room temperature.

Time 55m

Yield 8 servings

Number Of Ingredients 8

4 large sweet potatoes, peeled and chopped into rough chunks
1/4 cup grade B maple syrup, plus 2 tablespoons
1/4 cup extra-virgin olive oil, divided in 1/2
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons butter
1 large Vidalia or other sweet onion, thinly sliced
Hot water

Steps:

  • Preheat oven to 375 degrees F.
  • Place sweet potatoes, 1/4 cup of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper in a large mixing bowl. Toss to evenly coat and place on sheet tray. Roast in the preheated oven for 35 to 40 minutes or until sweet potatoes are soft. Be sure to check on them after 15 minutes and stir, if needed.
  • Meanwhile, in a medium saucepan over medium-high heat, melt butter and add remaining 2 tablespoons of olive oil. Add the sliced onion, 2 tablespoons of maple syrup and season with salt and pepper, to taste. Saute until deep golden brown, about 2 minutes. Remove from the heat and set aside. CARMELIZED ROASTED SWEET POTATOES

Carmelized Roasted Sweet Potatoes image

I make these roasted potatoes often, especially in autumn and winter. They're so yummy that you will forget how good they are for you. They pair well with ham, turkey or chicken. I sometimes even make these just especially for lunch.

Provided by ForeverMama

Categories     Yam/Sweet Potato

Time 45m

Yield 7-8 serving(s)

Number Of Ingredients 7

4 medium large sweet potatoes, peeled and cut into 1-inch cubes
7 -8 tablespoons maple syrup, divided
8 tablespoons extra virgin olive oil, divided
2 1/2 teaspoons kosher salt, divided
1 1/2 teaspoons fresh ground black pepper, plus more for seasoning
3 -4 large onions, peeled, cut in half and very thinly sliced
4 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • In a large bowl add sweet potatoes, 4 tablespoons of maple syrup, 4 tablespoons of the olive oil, 2 1/2 teaspoons salt and 1 1/2 teaspoons black pepper. Mix to evenly coat the potatoes. Set aside.
  • In a large skillet over low heat, add 3-4 tablespoons olive oil until heated. Add the sliced onions. Saute, stirring every so often for 20 minutes or until they caramelize. (NOTE: it is very important to saute the onions over low heat, to avoid them from burning). Once they are caramelized, add the remaining 3 to 4 tablespoons maple syrup and the balsamic vinegar. Stir to mix flavors. Season with salt and pepper to taste. Continue sauteing until onions are dark golden brown and fully caramelized, about 5-10 minutes more. Add water, 1 tablespoon at a time, if pan becomes dry. (Refer to Tidbit below).
  • Arrange sweet potatoes on a sheet tray. Roast for about 25 to 30 minutes. Mid-way through cooking, lift and turn-over potatoes to brown evenly. Dot caramelized onions over the roasted sweet potato cubes. With a spatula, lift and turn-over potatoes again to evenly distribute onion mixture. Roast for an additional 5 - 8 minutes until potatoes are cooked through and slightly browned. Taste for seasoning.
  • Transfer to serving tray and enjoy!
  • Tidbit: Note that onions will cook down alot; decreasing the volume. Depending on the power of your stove top and the amount of onions you have in the pan, it may take a longer time for onions to be fully carmelized. They should be dark (not burned) and cooked way down.
  • Another tidbit: If not using freshly ground pepper in this recipe, it makes a big enough difference. The store prepared ground doesn't have as much depth.

  • To caramelize the onion: Pour 2 tablespoons olive oil into a large skillet over medium-high. Once oil shimmers, add onion slices; toss for a few minutes until wilted. Stir in 1/2 teaspoon kosher salt; reduce heat to low. Cook, stirring occasionally, until sliced onions are browned, very soft, and sweet, up to 1 hour.
  • Bring a Dutch oven of salted water to a boil. Add sweet potatoes; cook until fork-tender, 10 minutes. Drain.
  • Rinse Dutch oven; set it back over medium and pour in 1 tablespoon olive oil. Add chopped onion; cook until tender, 8 to 10 minutes. Stir in 1/2 teaspoon kosher salt and chipotle and sauce; cook, stirring, until chipotle darkens, 30 seconds. Stir in beans, 1 cup cooking liquid (add water to reach 1 cup if you don't have enough), and 1 cup water. Increase heat to medium-high; bring to a boil, reduce heat to low, and cover. Simmer until beans are very soft, 10 minutes. Transfer to a blender; puree until smooth. (You should have about 4 cups.) Add more cooking liquid or water until puree is thick but pourable. Season to taste. Cover to keep warm.
  • When sliced onions are caramelized, scrape into a bowl. Return skillet to medium. Add sweet potatoes; sauté, stirring occasionally, until sweet potatoes start to brown, 8 minutes. Stir in onions; cook 1 minute. Turn off heat; cover.

  • Thinly slice the onions. Heat the 4 tablespoons of butter in a skillet over medium heat. Add in the onions with a big pinch of salt and pepper. Stir. Cook for 10 minutes, stirring occasionally, until the onions soften. Reduce the heat to medium-low, stir in the thyme and cook for another 30 to 40 minutes, stirring often, until the onions are golden and caramelly in color. If at any time the onions start to burn, turn down the heat or add a splash of water to the pan. If the onions are not cooking, you need to raise the temperature a bit.
  • Use a mandoline or sharp knife to thinly slice the potatoes - you want them to be very thin, uniform in size and ⅛ inch thick or thinner. If you are slicing them ahead of time or with a while to go before assembling, place them in a bowl of ice water so they don’t brown.
  • Make the sauce! Heat the other 4 tablespoons of butter in a saucepan until melted. Whisk in the flour to create a roux. Cook for 2 to 3 minutes, stirring, until the roux is golden in color and smells fragrant and nutty. Slowly stream in the milk while whisking the entire time, bringing the sauce together.
