SWEET POTATO SOUP WITH BACON
Sweet potatoes cook up with just enough spice for a flavorful soup. Pureed and topped with bacon to finish things off.

- Spray a large soup pot with cooking oil, and heat it on medium. Add the bacon, and cook until crispy, 5 to 7 minutes. Remove the bacon from the pot and place on a plate with a paper towel on top.
- Drain the excess bacon fat from the pot, and wipe the pot with a paper towel to get most of the bacon grease out but leaving a bit for flavor. When the bacon has cooled, crumble it into small pieces.
- Heat 1 tablespoon of olive oil in the soup pot used for cooking the bacon. Add the onions, cook for 5 minutes until the onions begin to soften.
- Add the carrots and jalapeno peppers, cook for a few more minutes. Add the garlic and cook for another minute.
- Stir in the sweet potatoes along with the 2nd tablespoon of olive oil.
- Add the chicken broth, water, white pepper and curry powder. Bring to a boil, then reduce to simmer. Let the soup simmer uncovered for about 30 minutes until the sweet potatoes are nice and soft.
- When the sweet potatoes are soft, purée with a handheld immersion blender. If the handheld blender isn't available, transfer in batches to a food processor to purée there. Stir in the cilantro and spinach if using after puréeing the soup. Add salt and pepper to taste.
- Serve the soup hot, topping each bowl with a bit of the reserved bacon bits.

- Preheat the oven to 400˚ F. Line a baking sheet with parchment paper. Combine 5 tablespoons olive oil, the onion, leeks, 2 teaspoons thyme, a big pinch of salt and a few grinds of pepper in a large pot or Dutch oven. Cook over medium-high heat, stirring occasionally, until the onion is tender, about 10 minutes. Add the sweet potatoes, parsnips, chicken broth, 3 cups water, 1 teaspoon salt and the cayenne. Bring to a boil, then reduce the heat and simmer until the potatoes and parsnips are tender, 12 to 15 minutes.
- Meanwhile, cook the bacon in a small skillet over medium heat, stirring, until browned and crisp, 5 to 7 minutes. Transfer the bacon and drippings to a large bowl.
- Add the bread, cheese and remaining 1 tablespoon olive oil to the bacon and drippings. Season with salt and pepper and toss, then spread out on the prepared baking sheet. Bake, tossing once or twice, until toasted and the cheese is melted, 10 to 12 minutes.
- Meanwhile, puree the soup with an immersion blender until smooth (or puree in batches in a regular blender). Season with salt and more cayenne to taste. Thin with water as needed. Divide the soup among bowls. Top with a swirl of creme fraiche, the croutons and the remaining 2 teaspoons thyme.

- Lay 3 slices of bacon on a greased pan.
- Bake for 20 minutes at 400°F (200°C), flip once halfway through.
- Dab off any extra oil and brush maple syrup on both sides of the bacon.
- Bake for an additional 3-5 minutes (until the bacon is crispy).
- Cut up the bacon into small pieces and set aside for garnishing the soup later.
- Melt 1 Tbsp. of butter. Add in the onion, stir, and cook on medium heat until fragrant.
- Add in the sweet potatoes, chicken broth, and spices. Cover and bring to a boil.
- Let simmer for 15-20 minutes until the potatoes have softened. Add 2 tbsp of maple syrup and stir.
- Then blend with an immersion blender or transfer to a blender and blend in batches until smooth and well-combined.
- Serve up and garnish with heavy cream (optional), the maple bacon, and a sprinkle of cinnamon (optional).

- In a heavy saucepot, over medium-low heat, cook the flour and butter, stirring constantly until roux achieves a light caramel color. Add the broth and brown sugar, bring to a boil, then lower to a simmer. Stir in the sweet potatoes and spices, bring to a simmer again, and cook for 5 minutes more. In a blender, puree the soup in batches and return to saucepot. Add the milk, and reheat soup. Season with salt and pepper, ladle into warm soup bowls and serve.

- Cut the vegetables and bacon into large chunks. Place all ingredients in the slow cooker.
- Fill the slow cooker with boiling water and cook on high for 3/4 hours or on low for 7/8 hours. Top up the water as required.

- Heat the oven to 180°C Cut the sweet potatoes in half lengthwise, rub with the olive oil and bake, cut side down for 1 hour until tender. Allow to cool, then scoop the flesh out of the skins and discard the skins.
- Arrange the bacon on a foil-covered baking tray and grill or fry in a non-stick frying pan until super crisp. Remove and drain on kitchen paper, then crumble into small pieces. Cook the onions in the bacon fat or in 1 tbs olive oil over a moderate heat for 5 minutes until they start to soften.
- Add the sweet potato flesh, bay leaves, chicken stock, nutmeg, salt and pepper and bring to the boil, stirring. Simmer for 15 minutes, stirring occasionally. If it's too lumpy for your taste, whip out the bay leaves and whiz the whole lot in the food processor, otherwise leave it alone. Serve in warmed soup bowls, topped with crumbled crisp bacon.
