I love sweet potatoes. They have amazing flavor and you can do so much with them.

Steps:
- In a covered large saucepan, cook sweet potato in enough boiling water to cover, about 10 minutes or until tender.
- Meanwhile, in a small saucepan, bring orange juice to boiling over medium heat. Stir in orange peel and lemon juice.
- In small mixing bowl, stir together the cold water and cornstarch; stir into the orange juice mixture. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more.
- Transfer cooked vegetables to a serving dish. You can either drizzle the orange juice mixture over the vegetables or mix it in before putting the sweet potatoes in the serving dish. I prefer to mix it in, as it ensures that the lovely citrus flavors are spread throughout the vegetables. Then just sprinkle the almonds on top and serve.

- Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain. When potatoes are cool, peel and cut into 1/2-in. slices. Arrange in a greased shallow 3-qt. baking dish; set aside., In a large saucepan, combine the brown sugar, cornstarch, salt and cinnamon. Stir in the orange juice, honey, butter, water and orange zest. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in walnuts. , Pour mixture over the potatoes. Bake, uncovered, at 350° for 25 minutes or until heated through.

MIMI'S SWEET POTATOES IN ORANGE CUPS
My mother made these every year for the holidays. I have made them for a church fellowship dinner, using 100 oranges. They were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to three days ahead of time and it travels well. There's an extra bonus: The orange sections can be used for making delicious ambrosia.

- Preheat oven to 375 degrees F.
- Cover sweet potatoes with cold water in a large pot and boil until fork tender. Peel the potatoes, transfer to a bowl, and mash. Stir in butter, orange juice and pecans, and mix until incorporated.
- For the orange shells, cut each orange in half and scoop out the pulp using a small knife or grapefruit spoon. Reserve the pulp for another use.
- Fill each orange shell with the potato mixture and top off with the marshmallows. Bake until hot and the marshmallows are melted.
SWEET POTATO SALAD WITH ORANGE-MAPLE DRESSING

- In a large pot fitted with a steamer basket, steam the sweet potatoes in batches until just tender, 12 to 15 minutes per batch. Transfer them to a large bowl and let cool to room temperature.
- Meanwhile, in a small bowl, make the Orange-Maple Dressing by whisking the olive oil, maple syrup, orange juice, vinegar, ginger, nutmeg and salt.
- Add the green onions, parsley, pecans and raisins to the cooled sweet potatoes. Pour the Orange-Maple Dressing over the potato mixture and toss gently to combine. Season to taste with salt and pepper. This salad can be made several hours ahead of time; cover and refrigerate until ready to serve.
ORANGE-GINGER SWEET POTATOES
I saw this recipe posted in a local newspaper for the upcoming Thanksgiving. I haven't made this yet, but wanted to post it for others who are looking for a nice side dish for the holidays. Prep time includes the time needed to bake the potatoes.

- Preheat oven to 375F.
- Bake potatoes on a cookie sheet until soft (approx. 1.5 hrs).
- When cool enough to handle, peel and chunk potatoes into a large bowl.
- Add butter and other ingredients and toss to mix.
- Mash potatoes thoroughly or puree in a blender. A hand mixer works well also.
- Lower oven temperature to 350F.
- Turn mashed potatoes into a casserole dish and dot the top with a bit of additional butter.
- Bake 30-40 minutes until hot.
- NOTE: This can be made ahead of time. Bring the mashed potato mixture to room temperature before dotting with butter and baking until hot.

- Cut oranges in half and juice them. You should measure 3/4 cup orange juice. If you don't have enough, supplement with packaged orange juice.
- Scoop out orange halves and save the shells. Set aside.
- Wash sweet potatoes and prick in several spots. Place potatoes on a paper towel and microwave on HIGH for 12-15 minutes or until very soft.
- Peel potatoes (be careful!). Scoop potato pulp into a large bowl.

- Prepare and butter a shallow 3-quart baking dish.
- Arrange the potato slices overlapping in rows in the baking dish; set aside.
