MIMI'S SWEET POTATOES IN ORANGE CUPS

Mimi's Sweet Potatoes in Orange Cups image

My mother made these every year for the holidays. I have made them for a church fellowship dinner, using 100 oranges. They were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to three days ahead of time and it travels well. There's an extra bonus: The orange sections can be used for making delicious ambrosia.

SWEET POTATO ORANGES

Sweet Potato Oranges image

Adapted from AllRecipes: A beautiful and unique way to serve sweet potatoes - absolutely delicious, too! Note: It is easiest to remove the flesh of the oranges using your bare (clean) hands vs. a spoon! The filled oranges can be made a day ahead and brought to room temperature before adding streusel topping and heating. Be sure to cut the oranges so that they are fairly stable and will not roll over into the water when baking.

IS IT BETTER TO BAKE, BOIL, OR STEAM SWEET POTATOES?
The peel of a sweet potato has nearly ten times the antioxidant power as the flesh (an antioxidant capacity comparable to that of blueberries). However, the peel’s nutrition really takes a hit when baked, which wipes out over two thirds of the antioxidants, whereas microwaving or boiling are comparatively much gentler. The same is true for the rest of the sweet potato. …
