2 1/4 lbs sweet potatoes, peeled and chopped
1 cup half-and-half
3/4 cup packed brown sugar
1 teaspoon salt
2 teaspoons vanilla
2 eggs
1 1/2 cups miniature marshmallows
1/4 teaspoon salt
1/2 cup flour
1/4 cup packed brown sugar
2 tablespoons chilled butter, cut into small pieces
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 375°F.
  • Place potatoes in boiling water and simmer for 20 min, or until tender; drain and cool slightly.
  • Place potatoes in a large bowl; add half and half, 3/4 cup brown sugar, 1 tsp salt and vanilla and beat at medium speed until smooth (or mash with potato masher to desired consistancy).
  • Add eggs and mix well; scrape into a 13 x 9 dish coated with cooking spray.
  • For topping: sprinkle marshmallows over top.
  • Combine flour, 1/4 cup brown sugar, and 1/4 tsp salt in medium bowl.
  • Cut in butter until mixture resembles coarse meal; stir in pecans and sprinkle over potatoes.
  • Bake for 30-40 min, or until golden brown.

2 tablespoons unsalted butter, melted
1 1/2 teaspoons grated orange zest
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
1 tablespoon minced garlic
1/2 teaspoon ground allspice
salt, to taste
1/2 cup fresh whole wheat breadcrumbs
1/3 cup pecan halves, coarsely chopped
1/4 cup chopped green onion, green part only
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 400 deg F with rack in center position.
  • Prick potatoes several times with fork and wrap each in foil. Roast until very tender, about 45 minutes.
  • Unwrap foil and halve potatoes; scoop out the flesh into a bowl.
  • Mash the potatoes with the butter, zest, juices, garlic, allspice and salt to taste. (You can prepare it this far up to two days ahead of time - just store well-covered in the fridge).
  • Toss together the bread crumbs, pecans, green onions and Parmesan in a bowl.
  • Reduce the heat to 375 deg F and grease a 1 quart pie plate or other shallow ceramic baking dish. Spoon the potatoes into the dish and cover with the crumb mix.
  • Bake until the crumbs are golden and the potato mixture is hot, about 30 minutes.

1/2 cup whole wheat pastry flour, plus more for your hands
2 tablespoons freshly grated Parmigiano-Reggiano cheese
1/2 teaspoon baking powder
1/4 teaspoon fine sea salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
3 tablespoons 2 percent milk
1 tablespoon pure olive oil
1 tablespoon chopped fresh sage
1 teaspoon firmly packed dark brown sugar
1/8 teaspoon freshly grated nutmeg

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with a silicone mat or parchment paper. (This will help with cleanup.) Spray a 2-quart shallow baking dish with nonstick cooking spray. Set aside.
  • Using a fork, pierce the sweet potatoes in several places and place on the prepared baking sheet. Bake until fork-tender, about 50 minutes. Remove to a rack to cool.
  • When the potatoes are almost tender, prepare the topping: In a small bowl, combine the chopped pecans, flour, Parmesan, baking powder, salt, and pepper. Stir to combine. Add the milk, oil, and sage. Stir until well combined. Set aside.
  • When the sweet potatoes are cool enough to handle, peel the potatoes, discarding the skin. Place the pulp in large bowl. Add the brown sugar and nutmeg. Season with salt and pepper. Smash the potatoes with a potato masher until chunky.
  • Transfer the sweet potatoes to the prepared baking dish. Lightly flour your hands and crumble the topping in small, cherry size pieces on top of the sweet potatoes. Transfer to the oven and bake until golden brown, about 30 minutes. Serve immediately.

  • Peel and slice yams 1/8" thick- easily done in a food processer.

⅓ cup packed dark brown sugar

5 pounds orange-fleshed sweet potatoes, such as Louisiana, jewel, or garnet yams
3/4 cup all-purpose flour
3/4 cup plus 1/3 cup (packed) light brown sugar
14 tablespoons (1 3/4 sticks) unsalted butter, softened

Steps:

  • Position rack in center of oven and preheat to 400°F. Butter 9- by 13-inch baking dish or 2-quart casserole. Line rimmed baking sheet with aluminum foil.
  • Pierce each potato with fork and transfer to baking sheet. Bake until tender, about 50 minutes. Cool until easy to handle.
  • Meanwhile, make streusel: In medium bowl, combine flour, 3/4 cup brown sugar, and 1 stick butter. Rub mixture between fingertips until blended and crumbly. Set aside.
  • Halve potatoes lengthwise and scoop out flesh into large bowl. Add remaining 1/3 cup brown sugar and 3/4 stick butter and mash with potato masher or, for a smoother purée, handheld electric mixer. Spread mixture in prepared dish and cool completely. (Streusel and purée can be made up to 2 days ahead and refrigerated, separately, covered.)
  • Sprinkle streusel over potatoes. Bake until golden brown, about 40 minutes. Let stand 5 minutes before serving. (Completed dish can be prepared up to 1 day ahead and refrigerated, covered. Remove from refrigerator 1 hour before reheating and let come to room temperature. Bake, loosely covered with foil, until heated through, about 25 minutes.)
  • Variation:
  • Sweet potato purée with marshmallows: Omit streusel. Spread purée in baking dish, cover with foil, and bake until heated through, about 30 minutes. Sprinkle top with 3 cups miniature marshmallows and broil until marshmallows are lightly browned, about 1 minute. Serve immediately.
