WHIPPED SWEET POTATO AND TOASTED WALNUT CASSEROLE
Sweet Potatoes whipped with sweetened condensed milk, flavored with the taste and texture of toasted walnuts brown sugar and cinnamon this is truly a holiday treat. Enjoyed by my family since I was a boy. The toasted walnuts are an addition I made and find absolutely delicious.

Steps:
- Preheat oven to 350 Spray large skillet with cooking spray and toast the walnuts well, stirring frequently.
- Don't allow them to blacken.
- Boil the Peeled/Quartered Sweet potatoes just as you would regular potatoes for mashed potatoes.
- Pour into strainer and allow to drain well.
- Place potatoes into xtra large mixing bowl Along with all other ingredients except the marshmallows then use a hand blender to puree just like mashed potatoes.
- Taste, add more brown sugar and/or sweetened condensed milk if you prefer them sweeter, make sure the walnuts are well distributed.
- Turn the mixture into a casserole dish (Make sure its a deep one or the marshmallows will melt over the rim into the oven).
- Layer the marshmallows over the top pressing down lightly into the mixture.
- Bake at 350 for 30 minutes or until marshmallows are melted and browned.

This sweet potato casserole is the same recipe my family makes for Thanksgiving each and every year. Of course there's always the great topping debate. The crunchy brown sugar streusel is a given, but I like a few toasty marshmallows as well. My mother begrudgingly designates a small corner of the casserole just to appease me. Hey, at least I don't have to share!

- Preheat oven to 400 degrees.
- For the filling: Roast the sweet potatoes on an aluminum foil-lined baking sheet for approximately one hour, or until tender. Cut the sweet potatoes in half and cool until able to touch. Peel and mash the sweet potatoes with a fork or potato masher. (This should yield approximately 4 cups.)
- In a large bowl, combine the mashed sweet potatoes, sugar, milk, butter, eggs, vanilla, cinnamon, and nutmeg. Beat with an electric mixer until smooth. Spoon the sweet potatoes into a lightly greased 1-1/2 to 2-quart casserole dish.
- For the streusel topping: In a medium bowl combine the brown sugar and flour. Using a pastry blender or your fingertips, cut the butter into the brown sugar mixture until it resembles coarse crumbs. Stir in the walnuts. Sprinkle the streusel over the sweet potato mixture. Bake the casserole until the streusel is golden brown and bubbling, 35 to 40 minutes.

We opted for a nutty crumb topping over marshmallows to create a pleasantly crunchy contrast to the creamy and soft mashed sweet potatoes. - For the sweet potatoes: Add 1 3/4 pounds peeled and cubed sweet potatoes to a large pot of salted water. Bring to a boil over high heat, then lower the heat to a simmer and cook until the potatoes are very tender, 15 to 20 minutes. Drain and cool. Mash the sweet potatoes.
- For the filling: Preheat the oven to 350 degrees F. Butter a 2-quart baking dish.

- Preheat the oven to 375 degrees F.
- Put the sweet potatoes on a sheet tray and roast for 35 to 40 minutes. The sweet potatoes might still be a little hard in the center- no problem!
- While the sweet potatoes are baking make the topping. In a food processor, combine the oatmeal, brown sugar, olive oil, butter, and walnuts and pulse until mixture comes together.
- When the potatoes are cool enough to handle, peel them and cut them into 1-inch chunks. Discard the skins. Put the potatoes into a large dish and add the remaining ingredients. Mash together with a potato masher until well combined.
- Transfer the mixture to a 2-quart casserole dish. Crumble the topping mixture over the potatoes. Bake until the mixture hot all the way through and the topping is brown and crispy, about 30 minutes.

KIM'S SWEET POTATO CASSEROLE
This Thanksgiving my boyfriend's step mom's daughter-in-law, Kim, brought this sweet potato casserole for our feast. Not being a huge fan of sweet potatoes, I was reluctant to try it. Boy am I glad I did! It isn't as sweet as most sweet potato casseroles and doesn't have tons the marshmallow goop on it. I begged her for the recipe so that I could have it every holiday and decided to post it on *Zaar so that I don't lose it. She stated on the recipe card that she always doubles the recipe and that when it does, it fills a 1 1/2 quart casserole dish.
