AUTHENTIC BAKED ZITI
Baked Ziti is a wonderful dish all its own. When done correctly, it is actually very different from lasagna. If you get good ingredients and follow this recipe, you will end up with a delicious and unique authentic Italian meal that tastes like nothing you've ever had before! A word about the ingredients: fresh mozzarella cheese is not the same thing as part-skim mozarella cheese. Use fresh mozarella in this recipe. Marzano tomatoes are a must for this recipe as well, but in a pinch, Progresso whole Italian tomatoes will do. Fresh herbs can be found in the produce section of most stores, but dried herbs can be substituted.

Steps:
- SAUCE.
- Remove the sausage casings and crumble the sausage.
- Add 2 teaspoons of olive oil to a pan, and brown the sausage.
- Puree the tomatoes in a blender (not too much).
- Add onions and garlic to now-browned sausage. Cook for a few more minutes until transparent.
- Add your tomato puree to the sausage.
- Add thyme and basil to sauce.
- Add some salt and pepper to taste.
- Add a generous pinch of the pepper flakes.
- Stir this up, heat to near-boil, then let it simmer covered on low for 15 minutes.
- BUILDING THE DISH.
- Boil your ziti pasta to not quite al-dente. Don't overboil, pasta will soften while baking.
- Cut the mozarella, half of it into 1/2 inch cubes, the other half in as thin of slices as you can manage.
- Remove the herb sprigs from the sauce and discard.
- Add the can of tomato paste to your sauce to thicken it up and give it a lively red color and more intense flavor.
- Add the pasta, your sauce, the cubed mozarella and half the parmesan in a baking dish.
- Top with the sliced mozarella and the remainder of the parmesan.
- Bake for about 30 minutes until golden.

Steps:
- Put all the ziti in a large bowl.
- Toss ziti with 3 cups of the gravy and half of the grated cheese.
- Spoon half of the ziti into a casserole dish.
- Spread the ricotta over the top of the ziti.
- Sprinkle with the mozzarella and rest of grated cheese.
- Pour on 1 cup of sauce.
- Top with remaining ziti and rest of sauce (it will be almost overflowing) sprinkle with more grated cheese.
- Bake covered with foil for 45 minutes and then uncovered for 15 minutes.
- Let stand 15 minutes.
- Tell me immediately how it was!

- Preheat oven to 375°F. Prepare a 13x9x2-inch baking dish with nonstick cooking spray. Heat 1 tablespoon oil in a 12-inch skillet over medium heat. Add shallots, garlic, salt, pepper and Italian seasoning. Cook, stirring 2 minutes or until shallots are softened. Add crushed tomatoes and bring to a simmer. Reduce heat and stir frequently for 10 minutes or until ready to use. Heat 1 tablespoon oil in a separate 12-inch skillet over medium heat. Add mushrooms, shallots, garlic, ½ teaspoon salt, ¼ teaspoon pepper and Italian seasoning. Cook, stirring 7 to 8 minutes or until the mushrooms have released their juices and are starting to brown. Stir in balsamic vinegar and cook, stirring 1 minute. Add spinach and stir into mixture. Remove from heat and allow to cool. Set aside. Attach bowl and flat beater to KitchenAid® Stand Mixer. Add ricotta cheese, 1½ cups mozzarella cheese, ¼ cup Parmesan cheese, remaining ½ teaspoon salt and ¼ teaspoon pepper into bowl. Mix on speed 4 to combine. Add cooled mushroom and spinach mixture and mix on low speed. Set aside. Attach Spiralizer Attachment to KitchenAid® Stand Mixer. Center one sweet potato section on fruit and vegetable skewer; attach to Spiralizer. Attach peeling blade and fine spiralizing blade and position at end of sweet potato. Position medium bowl under blades to catch spiralized sweet potato and peel. Turn stand mixer to speed 4 and process until blade reaches end of sweet potato. Repeat with remaining sweet potatoes to yield 8 cups. Coat bottom of prepared pan with ⅓ cup marinara sauce. Arrange half the sweet potatoes over sauce. Add half the ricotta mixture over sweet potatoes and top with half of marinara sauce. Layer remaining sweet potatoes, ricotta mixture and marinara sauce. Cover and bake for 45 minutes. Uncover, top with remaining Parmesan and mozzarella and bake uncovered for 20 to 25 minutes or until the sweet potatoes are tender. Allow to rest for 10 minutes before serving.

- Preheat oven to 350 degrees.
- Boil pasta as directed on box for al dente. Drain and return to pot.
- Add 5/6 of you pasta sauce to pot.
- Add the riggota cheese, mozzarella cheese, garlic powder, parsley, salt, pepper, oregano, and the egg slightly beaten.Mix well.
- Pour remaining sauce on the bottom of a 9x13 inch glass baking dish.

- Preheat over to 400°F.
- In a large mixing bowl combine spaghetti sauce with sour cream. Stir in broth.
- Add 1/2 cup Mozarella and 1/2 cup Parmesan cheese.
- Stir in ziti and blend well.

Here is another great RR recipe. This is also delicious with ground sausage or ground sirloin. I substituted regular shredded mozzerella instead of the fresh mozerella that RR used because I don't care for the flavor of fresh mozzerella.

- Preheat oven to 350.
- Boil ziti just shy of al dente.
- Place a medium sauce pan on medium-high head and add EVOO.
- Cook onion and garlic 4-5 minutes, then add the tomatoes. Smash the tomatoes with the back of a large spoon, then add basil, salt and pepper and simmer 15 minutes.
- Heat a separate medium sauce pan on medium-high heat then add, butter and alllow to melt.
- Add flour and brown 2-4 minutes, then stir in bay leaf, salt and pepper and cook 5 minutes on low heat. Remove bay leaf.
- Mix red sauce with pasta and transfer to a casserole dish.
- Top with white sauce, and both cheeses.
- Bake 25-30 minutes at 350 degrees.
