CINNAMON SWEET POTATO APPLE BAKE

Steps:
- Preheat oven to 375℉.
- In a 9×13 inch casserole dish, combine the sweet potatoes, apples, 2 Tbsp. melted ghee or butter, water, and cinnamon.
- Mix until apples and sweet potatoes are evenly coated.
- Cover with foil and bake in the oven for 40 minutes.
- After 40 minutes, remove foil, add optional pecans, stir and bake for an additional 10-15 minutes or until sweet potatoes are cooked through to your liking.
- Remove from oven, toss or drizzle with 1 Tbsp. melted ghee or butter and dash with cinnamon and a little sea salt.
- Optional - Drizzle with a little maple syrup and top with additional chopped pecans.

Steps:
- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a small bowl, mix brown sugar, cinnamon and nutmeg.
- Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
- In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
- Bake in the preheated oven 30 minutes, or until lightly browned.

SWEET POTATO BAKE WITH APPLES (WHOLE30)
My kids LOVE this recipe for sweet potato bake with apple breakfast casserole. It takes a few minutes of prep, a few minutes to bake and it's a nice alternative to eggs! Whole30 compliant and you can use whatever apples you have (I used granny smith).

- Preheat the oven to 400F.
- If you haven't already shred the sweet potato until you have about 1 1/2 cups, packed.
- Shred the apple until you have about 3/4 cup, packed. As you pack the shredded apple, you'll naturally squeeze the juice out. You can save the juice for a recipe later, or drain in the sink. Be sure to press the apples into the measuring spoon very well, in order to get as much of the juice out as possible.
- In a large bowl, whisk the salt, cinnamon, nutmeg, eggs and milk together well.
- Heat coconut oil in a cast-iron skillet. Add the sweet potato and cook, stirring often, until the majority of the sweet potato is golden in color.
- Pour the sweet potato into the egg/milk mixture and add the apples and half of the raisins. Stir well so the ingredients are thoroughly mixed together.
- Pour this back into the skillet, smooth the top and sprinkle the remaining raisins and pecans on top.
- Bake in the oven for 10-15 minutes, or until the eggs are set and begin to brown.

- Heat ghee in a large cast-iron skillet over medium heat, then add sweet potatoes. Cook, stirring often until beginning to soften, about 5-10 minutes.
- Add in apples, 2 teaspoons cinnamon, and raisins, and cook until apples are softened and raisins are plumped, about 8-10 minutes. Both apples and sweet potatoes should be easily pierced with a fork. If necessary, add in a little water to prevent sticking and burning. Add in in walnuts and salt, about 1/2 teaspoon to taste. Stir to combine well and sauté the mixture a minute or two
- In a medium bowl, whisk eggs and coconut milk until smooth and well combined. Remove apple-sweet potato mixture from heat and pour egg mixture over. Smooth to cover with the back of a spoon. Bake for 20 minutes or until set. A knife stuck in the middle should come out clean.
