EGG, BACON AND POTATO SKILLET
This is a great recipe to use up any leftover cooked potatoes, the cooked potatoes must be very cold before using in this recipes, so cook your potatoes up to 2 days in advance, and refrigerate. A 12-inch cast-iron skillet is best for this. Prep time does not include boiling the potatoes or cooking bacon. I like to add in some finely chopped and seeded jalapenos and use Cajun seasoning in, but that is only optional, adjust the seasoned salt or white salt and black pepper to taste.

- Heat a large skillet/frying pan over medium-high heat. Add the olive oil and sweet potatoes, spreading the cubes evenly on the pan. Cook for 3 minutes, until crisp and golden brown and turn the potatoes over. At this stage, add the peppers, salt and the diced chorizo and stir through. Cook over medium-high heat for 10-12 more minutes, stirring a few times, or until the sweet potato is nice and soft.
- Make a few wells in the mixture for the eggs. Crack the eggs and season them with a little extra salt and pepper, if you like. Cover with a lid and cook for 2-3 minutes, or until the eggs are cooked to your liking. Covering the pan with a lid speeds up the cooking, but if you don’t have one, just cook the eggs for a little longer. You can also scramble the eggs through.

Cook the vegetables for 15 to 20 minutes over medium-high heat until sweet potatoes begin to soften, covering with the lid to steam the insides of the sweet potatoes. If the skillet becomes dry while cooking, add water a tablespoon at a time to help steam sweet potatoes and cook all the way through.

- Wash the sweet potatoes, and peel the garlic. In a food processor, shred the potatoes (with the skins on) and the garlic. If you don’t have a food processor, grate the sweet potato with the large side of a box grater, and then mince the garlic. Wash the chard, then cut it into thin strips (chiffonade).
- In a large skillet, heat the olive oil over medium heat. Add the sweet potatoes, dried oregano, dried basil, kosher salt, and fresh ground pepper. Sauté for 7 to 8 minutes, stirring frequently, until the sweet potatoes are tender but not crispy (make sure to stir enough that the potatoes do not stick to the bottom of the skillet). Add the chard and sauté for another minute.
- Stir in half of the feta cheese. Then crack the eggs into the skillet and sprinkle the top with the remaining feta crumbles. Broil on high for 4 to 6 minutes until the egg whites are solid. Serve immediately. (To make this a full dinner, we’d serve with a side salad and corn muffins or bread. Note that the sweet potatoes result in a soft, not crispy fried, texture.)

- In a 12-inch cast iron skillet (I use and recommend this pan), cook the bacon pieces over medium-low heat until crisp (cooking the bacon at a lower temperature will render more fat).
- Use a slotted spoon to remove the cooked bacon from the pan. Set aside. There should be enough rendered bacon fat to coat the entire bottom of the skillet, about 1/8 inch deep. If your bacon didn’t render this much fat (it can vary from brand to brand), add additional bacon fat, lard, ghee, or coconut oil to your skillet until there is 1/8 inch of fat.
- Increase heat to medium-high and carefully place the diced sweet potatoes in the hot oil. Cook the sweet potatoes without stirring until the bottom of the cubes start to turn golden brown (this can take several minutes). Stir and cook until the cubes just start to soften.
