SWEET POTATOES WITH SAUSAGE AND PEPPERS



Sweet Potatoes with Sausage and Peppers image

Makes a nice and easy main dish.

Number Of Ingredients 9

2 large sweet potatoes, peeled and diced
1 tablespoon vegetable oil
½ pound bulk Italian sausage
2 red bell peppers, chopped
1 onion, chopped
2 cloves garlic, minced
1 (8 ounce) jar chunky salsa
1 teaspoon ground cumin
salt and pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, 12 to 15 minutes. Drain and set aside.
  • Heat oil in a large skillet over medium heat. Crumble sausage into skillet and cook, stirring frequently, until browned and no longer pink, about 7 minutes. Remove sausage with slotted spoon and drain on paper towels.
  • Pour off all but 1 tablespoon oil from the skillet. Heat oil over medium heat and add bell peppers, onion and garlic and cook until softened, about 7 minutes.
  • Add to the skillet the potatoes, sausage, salsa and cumin. Stir and cook about 5 minutes to heat through and blend flavors. Season with salt and pepper.

This is a recipe I got from a woman that I work with. It is very easy and delicious. The ingredients sound kind of gross, but trust me it's good. My DH wasn't sure about it either, but now it's one of his favorites.

1 lb Polish sausage (in the roll)
1 cup grape jelly
1 cup seafood cocktail sauce

Steps:

  • Slice polish sausage into 1/2 inch wide pieces.
  • Put into bottom of crock pot.
  • Mix grape jelly and cocktail sauce.
  • Pour over sausage.
  • Cook for about 3 hours.
  • Being that crock pots are all different, yours might be done a little sooner or a little later.
  • I make these with Cheesy Potato Casserole #102296, very good meal.

1 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
1 medium onion, chopped
1 small green pepper, chopped
1 celery rib, chopped
1 tablespoon butter
1 cup packed brown sugar
3/4 cup ketchup
1/2 cup cider vinegar
1 teaspoon salt
1 can (20 ounces) pineapple chunks
3 tablespoons cornstarch
1/4 cup cold water
Hot cooked rice

Steps:

  • In a large skillet, saute the sausage, onion, green pepper and celery in butter over medium heat until meat is no longer pink and vegetables are tender; remove with a slotted spoon and set aside., In the same skillet, combine the brown sugar, ketchup, vinegar and salt. Drain pineapple, reserving juice; set pineapple aside. Add juice to skillet; bring to a boil. Return sausage mixture to pan. Combine the cornstarch and water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in reserved pineapple; heat through. Serve over rice.

2 pounds kielbasa sausage, cut into 1 inch pieces
⅓ cup Worcestershire sauce
1 tablespoon fresh lemon juice
1 onion, chopped
½ cup brown sugar
2 dashes hot pepper sauce
⅔ cup water

Steps:

  • Place sausage in a large saucepan. Add water to cover and simmer over low heat for 1 hour. Drain, remove sausage and set aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In the same saucepan combine the Worcestershire sauce, lemon juice, onion, sugar, hot pepper sauce and water. Bring all to a boil, stirring. Place reserved sausage in a 9x13-inch baking dish and cover it with the sauce mixture.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

Also known as "kielbasa" which is the Polish word for sausage. This homemade sausage is made from a blend of pork and beef and seasoned with its trademark marjoram and garlic.

Number Of Ingredients 10

4 teaspoons coarse kosher salt
1 3/4 teaspoon ground black pepper
3 tablespoons sweet Hungarian paprika
1 teaspoon dried marjoram, crumbled
1/2 teaspoon dried savory, crumbled
2 teaspoons finely minced garlic
10 ounces trimmed beef, diced
16 ounces fresh pork fat, diced
1/3 cup ice water
1 1/4 pound lean pork, diced

Steps:

  • Combine the salt, pepper, paprika, marjoram, savory, and garlic in a bowl. In another large bowl, combine the beef, pork fat, ice water, and lean pork. Mix the spices into the meat mixture. In batches, process the meat mixture in a food processor until it is very finely ground. Return the ground meat to another bowl and mix by hand until all batches are mixed together. Cover the bowl and refrigerate for 24 hours or up to 48 hours. Stuff the meat mixture into sausage casings, tying it off every 10-inches or as desired. Return the stuffed sausages to the refrigerator and chill, uncovered, for 12-24 hours to dry out. To cook, place 1-4 sausage links in a skillet covered with water. Bring the water to a strong simmer over medium-high heat. Cook for 8 minutes then turn the sausages and cook for another 8 minutes. Drain off the water and prick the sausage casings with a fork or sharp knife. Cook the sausages over medium-high heat turning as needed until browned on both sides.

  • When the potatoes have been in the oven for 20 minutes, use a spatula to stir them gently and flip them over. Add the sausage, peppers, and onions to the baking sheet. Stir to combine and spread everything across the baking sheet.
