Sweet and Sour Meatballs (Suan T'ien Niu Jou Po Lo La Tzu) image

I grew up in Japan, and my Mother got this recipe from some Catholic nuns there during the 50's. It's been a family favorite ever since. If you're a vegetarian, try this sauce with vegetables only. It's wonderful that way also!

1 pound ground beef
1 egg
1 tablespoon cornstarch
1 teaspoon salt
4 tablespoons diced onion
1 pinch ground black pepper
1 tablespoon vegetable oil
1 cup pineapple juice
3 tablespoons cornstarch
1 tablespoon soy sauce
3 tablespoons distilled white vinegar
6 tablespoons water
½ cup granulated sugar
4 slices fresh pineapple, cut into pieces
1 large green bell pepper, cut into thin strips
¼ carrot, thinly sliced
⅓ onion, cut into wedges and separated

Steps:

  • In a mixing bowl, combine the ground beef, egg, cornstarch, salt, diced onion and pepper. Form into 1 inch meatballs; about 20.
  • In a large skillet over medium heat, brown the meatballs; drain fat and set aside.
  • Heat the oil in a large saucepan over low heat. Pour in the pineapple juice and simmer for a few minutes.
  • In a small bowl, combine the 3 tablespoons of cornstarch, soy sauce, vinegar and water. Stir until smooth and pour into the pineapple juice. Add the sugar and simmer until thickened, stirring constantly.
  • Place the meatballs, pineapple pieces, green pepper, carrot and onion into the sauce mixture. Heat thoroughly.

1/2 cup loosely packed brown sugar
1/2 cup rice wine vinegar
1/4 cup ketchup
1 tablespoon low-sodium soy sauce
2 1/4 cups pineapple juice
1 tablespoon cornstarch
One 25-count bag All-Purpose Meatballs (still frozen is fine), recipe follows
1 tablespoon sriracha hot sauce
1 cup drained small pineapple chunks
Steamed long-grain rice, for serving
2 tablespoons sliced green onions, for garnish
5 pounds ground beef
1 1/2 cups plain breadcrumbs
1/2 cup milk
1/4 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons grainy mustard
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
4 large eggs
2 tablespoons olive oil

Steps:

  • In a large skillet over medium-high heat, add the brown sugar, vinegar, ketchup, soy sauce and 2 cups of the pineapple juice. Bring to a boil.
  • Make a slurry by mixing the cornstarch into the remaining 1/4 cup pineapple juice, whisking to get out all the lumps. Whisk the slurry into the skillet and add the All-Purpose Meatballs. Bring to a simmer and add the sriracha. Cover and cook until the sauce is thickened and the meatballs are heated through, 8 to 10 minutes. Stir in the pineapple chunks.
  • Serve over steamed rice, garnished with green onions.
  • To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
  • To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
  • Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer. Yield: 125 meatballs.

1 pound hamburger
1/2 cup plain dry bread crumbs
1/4 cup milk
2 T. chopped onion
1 tsp. salt
1/2 tsp Worcestershire sauce
1 egg
1/2 cup brown sugar
1 T. cornstarch
1-can (13 ? oz) pineapple chunks, drained (save juice)
1/3 cup cider vinegar
1 T. soy sauce
1 small green pepper, cut into julienne

Steps:

  • Preheat oven to 350 degrees F.
  • Mix first seven ingredients together and form into 1-1/2-inch balls. Place on cookie sheet and bake in oven for 20 -25 minutes until done. Then, place in a slow cooker on low.
  • Place vinegar, pineapple juice, soy sauce and brown sugar in sauce pan. Stir in cornstarch and bring to boil. Pour over meatballs. Carefully stir in pineapple and green pepper. Keeps well in a slow cooker for several hours.

1/4 cup breadcrumbs
1/4 cup whole milk
1 1/2 pounds ground turkey, chicken, pork or a combination
3 cloves garlic, minced
2/3 cup minced yellow onion
1 large egg
Kosher salt and freshly ground black pepper
2 teaspoons olive oil
3 cloves garlic, minced
2 teaspoons cornstarch
1 cup pineapple juice
1/2 cup ketchup
1/4 cup packed light brown sugar
1 tablespoon soy sauce
1 cup diced pineapple

Steps:

  • Make the meatballs: Preheat the oven to 500 degrees F. Grease 13-by-9-inch baking dish or mini muffin pan with cooking spray.
  • In a small bowl, stir together the breadcrumbs and milk. Let sit for 5 minutes.
  • In a large bowl, combine the ground meat, garlic, onion, egg, 1/2 teaspoon salt, 1/4 teaspoon pepper and the breadcrumb mixture, mixing with your hands just until combined. Using your hands, break off 2 or 3 tablespoons of the meat mixture at a time and roll it into a ball. Arrange the meatballs in a single layer in the prepared baking dish.
  • Bake the meatballs for 12 to 15 minutes or until they are cooked through. While the meatballs are baking, make the sauce.
  • Make the sauce: Add the olive oil to a medium saucepan set over medium-low heat. Once the oil it hot, add the garlic and cook, stirring, until golden brown.
  • Meanwhile, add the cornstarch and 1 tablespoon water to a small bowl and whisk to combine.
  • Whisk the pineapple juice, ketchup, brown sugar, soy sauce and cornstarch mixture into the saucepan. Bring the mixture to a boil and cook until the sauce is thick enough to coat the back of a spoon, 3 to 5 minutes.
  • Transfer the cooked meatballs to a large bowl, then add the diced pineapple. Add the prepared sauce and toss to combine. Serve immediately.

This is one of my recipes I like to use for special occasions such as at my Christmas 'open house' and New Years Day buffet. It is a great addition to a buffet and is definitely a crowd pleaser at potlucks. I often prepare double batches of the meatballs, bake them in the oven, freeze on a cookie sheet and when frozen slip them into a plastic bag. This allows me to take out as many as I need for the meal I am preparing. Found this recipe hand written on a sheet of paper tucked in a cookbook picked up at a yard sale.

1/2 lb ground beef (I use all ground beef)
1/2 lb ground pork
1 teaspoon white sugar
1/8-1/4 teaspoon black pepper
1 teaspoon dried ginger
3 teaspoons soy sauce
2 tablespoons tapioca starch or 2 tablespoons cornstarch
1 small onion, chopped fine (best minced or grated)
1/4 cup water chestnut, chopped fine (optional)
1/3 cup white vinegar
3/4 cup white sugar (You may wish to use less)
2 3/4 ounces tomato paste
1 tablespoon tapioca starch or 1 tablespoon cornstarch
1 cup water (I use the drained juice from one 19 ounce can of pineapple chunks plus water to equal one cup)
1 cup pineapple chunk, drained (I use one 19 ounce can of pineapple chunks)
1 green pepper, cut into small squares
1 red pepper, cut into small squares (optional)
1 carrot, cut into thin slices (I use more ...about 4)

Steps:

  • In large mixing bowl combine and mix: ground meat, sugar, black pepper, dry ginger, soy sauce, the tapioca or cornstarch, minced onion and(the water chestnuts if using).
  • Knead above for at least two minutes to insure proper marination, form into even sized balls.
  • Fry in oil and drain (I never fry my meatballs, I put them on a cookie sheet and bake at 350 for about twenty minutes or until done.).
  • Meanwhile make the Sweet and Sour Sauce: in sauce pot on medium heat whisk together vinegar, sugar, tomato paste, the tapioca starch or cornstarch, the cup of water (or water/pineapple juice mix) Bring to boil stirring while cooking. (I find using a whisk to stir works very well).
  • When mixture reaches boiling point add the meatballs and heat through.
  • Add the carrots, peppers and pineapple chunks and cook until vegetables are 'just done'. Do not overcook.
  • NOTE: This can be made ahead and refrigerated. It can then be quickly reheated in the microwave and kept hot in a Crockpot. This freezes well.
  • I also find cooking the carrots separately and then adding, assures they don't get overcooked.

Sweet and tangy sauce for meatballs or chicken. I developed this recipe as a variation on my simple sweet and sour dipping sauce used in my Asian inspired recipe #336740 recipe. Still very simple to make but a little more sophisticated with the addition of brown sugar, pineapple and green pepper. I hope you enjoy it too!

1/2 cup brown sugar, packed
1/2 cup sugar
3 tablespoons cornstarch
1 teaspoon seasoning salt (I use Johnny's brand)
1 (8 ounce) can pineapple tidbits, undrained (or chunks)
1/2 cup vinegar
2/3 cup water
1 teaspoon Worcestershire sauce
1 1/2 tablespoons maraschino cherry juice
1 small green pepper, chopped into 1-inch pieces

Steps:

  • In medium saucepan stir together both sugars, cornstarch and seasoning salt. Mix well.
  • Stir in pineapple, vinegar and water. Bring to a boil. Reduce heat just enough to keep it at a low boil. Cook and stir for 2 minutes.
  • Stir in Worcestershire and cherry juice.
  • Add green pepper, reduce heat to a simmer and cook for 3 minutes.
  • For Meatballs: Pour sauce over your favorite cooked meatballs in casserole dish or in a pan on the stove and heat through.
  • For Chicken: Place boneless, skinless chicken breasts into 13x9x2 inch baking dish sprayed lightly with non-stick cooking spray. Cover and bake at 350° for 20-30 minutes depending on thickness of chicken. Bake until chicken is no longer pink in the center. Uncover the last 10 minutes of cooking.

I was having a craving for meatballs over rice and when I went through my usual recipesI was missing one ingredient or another, either pineapple chunks, or green peppers,cranberry sauce, sour cream, jelly, this ingredient or that ingredient...gee I felt like poor old mother hubbarb that day!!!! So I went on the internet in search of a "simpler" recipe...this is what I found and it was very very tasty & easy,and needless to say, great for when you are short on ingredients and due for your next grocery order!!(Actually , even for this recipe,I was out of onions too, which is why I used onion soup mix!!) My hubby even really liked it quite a bit, sometimes less is more! It ended up a keeper that I will make even when I do have a fully stocked kitchen! HA!
