EGG CUSTARD PIE
Eggs, milk, sugar, and vanilla with a little nutmeg make this traditional southern Egg Custard Pie a dessert loved by both kids and adults.

Steps:
- If using a frozen pie crust, allow it to thaw at room temperature according to its package directions.
- Prick the crust all over with the tines of a fork.
- Brush thoroughly with beaten egg white. This helps prevent the crust from becoming soggy.
- Set the crust aside.
- Preheat the oven to 400 degrees.
- In a medium bowl, add the beaten eggs, sugar, salt, and vanilla. Beat together.
- Using a wire whisk, add the milk.
- Place the prepared pie crust on a baking sheet.
- Pour the egg and milk mixture into the pie crust filling baking cups with any excess mixture.
- Sprinkle the top with nutmeg.
- Bake for 30-35 minutes or until a knife inserted near the center comes out clean.
- Remove from the oven and transfer to a cooling rack.
- May be served either cold or at room temperature.

S & W CAFETERIA EGG CUSTARD PIE
This recipe was originally published in the Charlotte Observer sometime in the 1960s. I recently found it going through some of my Mother's recipe clippings and knew I had to make it again, as much for the memories as the taste of this great southern tradition. I lost my Mother in 2002, but going to the S&W in Asheville on Saturdays for lunch with my parents will always remain a special memory for me. Mother, without fail, had the Egg Custard Pie as it was one of the very few desserts she actually enjoyed.

Steps:
- Combine sugar, butter and salt, add eggs and mix well on low speed of your mixer or with a whisk, beat in milk, nutmeg and vanilla until smooth.

- Remove from oven and cool at room temperature.

SWEET CREAM EGG CUSTARD
We love egg custard. I like to cook with heavy cream and thats all i had on hand one day so i decided to give it a try. Its better than any egg custard i have ever made.

- In a small bowl mix the sugar and flour well, set aside
- In a large mixing bowl beat the eggs lightly
- Use enough softened butter to butter the 1 qt casserole dish, add remainder to the eggs along with the vanilla extract and mix well.
- Measure the milk and warm just to enough to get the chill off the milk.
- Add the sugar/flour mixture to the egg mixture and mix well
- Add the slightly warmed heavy cream to the egg mixture and mix well.
- Carefully pour mixture into the buttered casserole dish and place in the preheated 350 degree oven for approximately 1 hour, check it at about 45 minutes. It will jiggle in the center, but you don't want it loose, it takes about an hour every time i make this.

- Preheat oven to 400 degrees F.
- Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add a few drops yellow food coloring.

- Bake pie shell at 400 degrees F (205 degrees C) for 5 minutes. Set aside.
- Combine melted butter or margarine, sugar, flour, milk, vanilla, and nutmeg. Add beaten eggs, and blend well. Pour filling into partially baked pie shell.
