SWEET CHILLI PRAWN CAKES
These prawn cakes are a great appetizer or small finger food to serve with drinks. They can be made in huge batches, all shaped and kept in the freezer. And when you need them (which will be often), just take them out and shallow fry. It is ready to be served. Great for unexpected guest.

Steps:
- Place prawn meat, egg white, lime leaves, sweet chili sauce, corn flakes and rice flour in a food processor and process till the mixture is combined, BUT not smooth.
- With wet hands, shape the mixture into small cakes.
- Heat enough oil in a frying pan over medium heat to shallow fry.
- Add prawn cakes a few at a time and cook for 3 minutes on each side, or till golden brown.
- Place the cooked prawn cakes on kitchen towels to soak up the excess oil.
- Serve with the extra sweet chili sauce.
SWEET CHILLI PRAWN PATTIES
Delicious inclusion in a seafood platter, anti pasto or just as an entree/ starter. When I do this at home I use Chilli Wine jelly for the glazing, it comes from the Disaster Bay Chilli company in Eden NSW and is brilliant. If not from Australia substitute sweet chilli sauce for a similar taste

Steps:
- Mince prawns in blender or food processor.
- Add ginger, garlic, lemon grass, coriander and fish sauce and mix well.
- Add egg and stir through.
- Season to taste.
- Check consistency and add flour as required to stiffen up mixture.
- Make into small patties using 1 teaspoon of mixture at a time.
- Refrigerate for 1 hour then pan fry or cook on bbq grill until golden.
- Add sweet chille sauce and stir gently until sauce caramalises and adheres to patties.
- Serve while hot.

- Tip the sugar into a wok, add a splash of water and let it dissolve over a low heat. Once dissolved, turn up the heat until it bubbles, then pour into a heatproof bowl.
- Heat the oil in the wok, then stir-fry the broccoli and sweetcorn for 3 mins until they start to blister. Stir the curry paste into the caramel, then pour into the wok. Add the pepper and continue to cook for 2 mins. Splash in the fish sauce or soy, add the prawns and fry again to heat through. Serve immediately with rice or noodles.

Steps:
- Place fish and prawns in processor. Chop to chunky paste. Remove to bowl.
- Stir in onions, coriander and breadcrumbs.
- Season.
- Moisten your hands, and form mixture into small cakes.
- Heat a little vegetable oil in pan or wok and cook cakes in batches until golden brown on both sides.
- Drain on paper towels.
- Serve with sweet chilli sauce for dipping.

- Put 300g of the prawns in a food processor with half the coriander, the lime zest, ginger, 1 tbsp of the fish sauce, most of the spring onions, the beaten egg and breadcrumbs. Season well, then pulse until the mix comes together. Chop the rest of the prawns quite finely, then stir into the mixture. Shape into 12 patties, put on a plate and chill for 15 minutes.
- Meanwhile, mix the remaining 3 tbsp fish sauce with the lime juice and sweet chilli sauce, then add the remaining sliced spring onion. Heat 1cm oil in a large frying pan, then fry the prawn cakes for 3-4 minutes on each side until golden and cooked through.
- Toss the remaining coriander with half the dressing (and, if you like, rocket). Serve the cakes and the leaves with the remaining dressing for dipping.
