1/2 cup of finely chopped CELERY (secret ingredient....and the smaller the chop, the better....)
1/4 cup of butter
1 1/2 lbs. ground beef/hamburger meat
3 TBsp. freshly squeezed lemon juice (yes, only fresh)
1 pkg. McCormick's Mild Chili Seasoning
1 tsp. regular yellow jar mustard
29 oz. tomato sauce
1 1/2 TBsp worcestershire sauce
1 tsp. of salt
4 TBsp. of brown sugar
1 package hot dogs
Buns for hot dogs
Colby Jack Cheese (shredded)

Steps:

  • Melt butter in a medium pan over medium heat.
  • Add the celery and onions and cook until tender, about 3-5 minutes.
  • In separate pan, brown the ground beef & drain the grease.
  • Place in a large stock pot or slow cooker, add the onions and celery and all remaining ingredients and simmer for one hour or cook on low or warm for a few hours, like 3-4. *see note for further instructions*
  • Place hot dogs in their buns, top with chili, then cheese and place under a broiler to melt.

After countless searches for a good Coney Island sauce, I stumbled on this one at another cooking website. Most recipes I had tried were just too sweet, this is a good Midwest-style Coney sauce. I didn't follow the measurements to the letter - just eyeballed it; and I added a couple dashes of hot sauce to kick up the heat a bit.

1 lb ground chuck
1 large onion, chopped
2 garlic cloves, minced
1 (6 ounce) can tomato paste
1 cup water
1 tablespoon sugar
1 tablespoon prepared yellow mustard
1 tablespoon dried onion flakes
2 teaspoons chili powder
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon ground cumin (heaping)

Steps:

  • Brown ground beef in a skillet, adding onions halfway through. Add minced garlic when meat is nearly done.
  • Add remaining ingredients; stir well to combine. Simmer over low heat 15 minutes.

Extra-virgin olive oil
1 medium onion, chopped
2 cloves garlic, chopped
1 pound lean ground beef
1 medium jar ketchup, about 2 1/2 cups
1 teaspoon chili powder
2 tablespoons prepared yellow mustard
Kosher salt and freshly ground black pepper
4 all-beef hot dogs (recommended: Ball Park)
4 hot dog rolls
1/2 cup grated Cheddar

Steps:

  • Put a skillet over medium heat and drizzle in a 2-count of olive oil. When the oil gets hazy, add the onion and garlic and cook, stirring, until it is soft and translucent, about 5 minutes. Add the ground beef, breaking it up with the back of a spoon, and cook until nicely browned, about 10 more minutes. Stir in the ketchup, chili powder, and mustard and simmer for 15 minutes until thickened. Season with salt and pepper.
  • While the chili is cooking, get the grill going. Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Take a few paper towels and fold them several times to make a thick square. Blot a small
  • amount of oil on the paper towel. Then carefully and quickly wipe the hot grates of the grill to make a nonstick grilling surface.
  • Bring a pot of water up to a simmer and parboil the dogs for about 5 minutes. Take them out of the water, pat them dry, and grill them just long enough to mark them. (That'll give them a grilled flavor too.) Brush the insides of the rolls with olive oil and lay them face down on the grill; cook until toasty. To serve, put a dog in each roll and top with the chili and some Cheddar.

1/2 cup freshly chopped cilantro (optional)
ketchup and mustard to taste

Steps:

  • Preheat oven to 375
  • Place olive oil in a large non-stick skillet or griddle over medium-high heat.
  • Place hot dog buns, inside side down, on skillet just long enough to toast the buns.
  • Place hot dog buns on a baking sheet with high sides or casserole dish. Sprinkle onions, cilantro, and desired amount of ketchup and mustard into each bun. Sprinkle with 1/2 cup cheese.

This is a homemade chili for topping hot dogs a famous diner food in Coney Island. A recipe I developed over the years to my family's taste. This chili is great over baked potatoes, cheese fries and so much more!

1 1/2 pounds ground beef
1 cup beef broth, or water
4 tablespoons canola oil
1 medium-sized bell pepper clean and cut in four pieces
2 cloves fresh garlic
1 teaspoon granulated garlic
1 teaspoon smoked paprika
1 1/2 teaspoons chili powder
1/2 teaspoon cumin
cayenne pepper to taste
3 tablespoons Worcestershire sauce
salt and pepper to taste
1 cup crushed tomatoes
Garnish: extra sharp cheddar cheese shredded
Optional: 1 small finely chopped onion ( the onion will continue to get a stronger flavor in leftover chili, so I never put it in. I serve them chopped raw on the side or you can grill them separately to add on top when serving the chili.
Note: There isn't any onion in mine because it gets stronger as the day goes by so this will taste fresh for up to 4 days and taste the same.
You can always add some raw chopped onion on top of your hotdog if you want to get that flavor.
In a food processor add the broth or water with peppers and fresh garlic pulse until there are tiny bits left.

Steps:

  • In a food processor add the bell pepper with fresh garlic. broth or water and pulse until small bits are left.
  • Heat a medium-sized saucepan on and brown the meat in oil add all the seasoning spices until all the pink is gone.
  • Add the broth mixture with tomatoes, Worcestershire sauce, and season to taste.
  • Simmer until the liquid is almost all evaporated and the mixture is thick, around 20 minutes on medium-high heat stirring occasionally.
  • If it starts to get too thick add more broth if necessary or water.
  • Place your hot dog on a bun, spoon the hot dog chili on top, and add shredded cheddar cheese if desired on top.
