SWEET CORN BREAD PUDDING

1/2 onion, diced fine
1 ounce unsalted butter
1/2 teaspoon thyme
1/2 teaspoon rosemary
1 (15-ounce) can creamed style sweet corn
1 cup heavy cream
2 eggs
1 teaspoon baking powder
1/2 cup yellow cornmeal, whole grain, stone ground
1/2 cup shredded Parmesan
1 teaspoon kosher salt
Ground black pepper
2 cups cubed French bread

Steps:

  • Heat oven to 350 degrees F.
  • Sweat onions with butter and herbs in an oven safe skillet until translucent.
  • Combine corn, cream, eggs, baking powder, cornmeal, Parmesan, salt, and pepper in a large mixing bowl. Add cubed bread and fold to combine. Pour batter into skillet, right on top of the onion mixture. Bake 50 minutes, or until set. Cool slightly before serving.

6 cups white bread, cut or torn into 1-inch chunks
2 cups half-and-half
4 eggs
3/4 cup maple syrup or sugar
1/2 teaspoon cinnamon
Pinch salt

Steps:

  • Butter an 8-inch souffle or baking dish, and add bread. Cut remaining butter into bits, and combine with all other ingredients; pour over bread. Submerge bread with weighted plate, and turn oven to 350 degrees.
  • When oven is hot, remove the plate and bake until pudding is just set, 35 to 45 minutes. Serve with or without whipped cream.

2 tablespoons butter, plus extra for greasing the pan
1 pound butternut squash, peeled, and cut into 3/4-inch pieces
4 parsnips, peeled, and cut into 3/4-inch pieces
Kosher salt for seasoning
Freshly ground black pepper for seasoning
1 (1 pound) loaf brioche, challah, or sourdough bread, cut or torn into 1-inch pieces
3 cups heavy cream
8 eggs, beaten
3/4 cup brandy
1/4 cup vegetable oil
3 tablespoons brown sugar
2 tablespoons cinnamon
1 tablespoon fresh thyme leaves, chopped

Steps:

  • Set an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Grease a 9 by 13-inch glass baking dish. Set aside.
  • In a large skillet, melt the butter over medium-high heat. Add the butternut squash and parsnips. Season, to taste, with salt and pepper. Cook, stirring occasionally, for 5 minutes until slightly softened. Set aside to cool.
  • Add the bread to a large bowl.
  • In another bowl mix together the heavy cream, eggs, brandy, vegetable oil, brown sugar, cinnamon and thyme. Pour the cream mixture over the bread and toss gently to coat. Add the cooled vegetables and toss until the bread is coated. Spoon the mixture into the prepared pan. Bake for 40 to 45 minutes until the bread pudding is puffed and golden.

I got this from a coworker's wife years ago and it's always been my favorite bread pudding recipe. Make sure the bread is as dry as possible - the drier the bread, the more it will soak up the custard.

1 loaf sweet bread (1 lb)
1/2 cup raisins
1/2 cup butter
2 cups milk
1 cup sugar
5 eggs, beaten
1 (21 ounce) can apple pie filling
cinnamon
1 teaspoon vanilla (optional)

Steps:

  • Grease a 9x12 pan.
  • Scald milk. Add sugar and butter. Mix until butter is melted. Cool.
  • Break sweet bread into pieces (not too small). Spread apple pie filling on top of the sweet bread. Sprinkle raisins over the filling.
  • Combine cooled milk mixture with beaten eggs. Pour liquid over the bread. Sprinkle with cinnamon.
  • Bake at 350 degrees for 25 to 30 minutes.

Here's a new entertaining hack: Instead of cubing and toasting brioche for bread pudding, simply hollow out sweet Hawaiian dinner rolls and fill them with custard. Topped with juicy berries after baking, they're a surefire summer dessert.

Nonstick cooking spray, for the baking dish
24 Hawaiian sweet dinner rolls
1 1/2 cups plus 2 tablespoons heavy cream
1/4 cup turbinado sugar
1 1/2 cups milk
1 1/4 cups granulated sugar
2 tablespoons pure vanilla extract
5 large eggs plus 5 yolks
Pinch of kosher salt
7 ounces strawberries (about 6 medium), sliced
1/2 pint blueberries
1/2 pint blackberries
3/4 cup plus 2 tablespoons granulated sugar
3 tablespoons lemon juice (about 1 lemon)
1/2 cup heavy cream

Steps:

  • For the bread pudding: Spray a 9-by-13-inch baking dish with nonstick cooking spray; put the rolls in the dish. Use a sharp paring knife to cut a circle out of the top of each roll, leaving an 1/8-inch border around the edges and going down into each roll as far as possible without cutting through the bottom. Use the end of a wooden spoon handle to push the circles down into the rolls to create a large hole in the middle of each. Brush the tops of the rolls with 2 tablespoons of the cream and sprinkle with the turbinado sugar.
  • Whisk together the milk, granulated sugar, vanilla, whole eggs and yolks, remaining 1 1/2 cups cream and salt in a large bowl. Reserve 1 cup of the custard and refrigerate. Pour the remaining custard in the holes in the rolls. Refrigerate until most of the custard has been absorbed, about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Pour the reserved custard into the holes so it pools. Bake until the custard is cooked through and the tops of the rolls are golden brown, about 1 hour 10 minutes.
  • For the berries and cream: Meanwhile, put the strawberries, blueberries and blackberries into 3 separate medium bowls. Add 1/4 cup granulated sugar and 1 tablespoon lemon juice to each bowl and stir to combine. Let sit until liquid is released and the berries are softened and glistening, about 1 hour.
  • Whisk the heavy cream and remaining 2 tablespoons granulated sugar in a medium bowl until soft peaks form, about 5 minutes. Refrigerate until ready to use.
  • Spoon the berries into the holes in the rolls, filling each hole with a different kind of berry and working in diagonal rows to create a checkerboard pattern. Serve 1 roll on each plate with a dollop of whipped cream.

10 slices bread
1 cup sugar
3 eggs
4 teaspoons baking powder
2 teaspoons vanilla essence
3 cups milk
4 ounces butter
nutmeg (optional)
raisins (optional)
cinnamon (optional)

Steps:

  • Heat oven up to 350°F.
  • Cut slices of bread into cubes.
  • Bake bread cubes for 10 min until a little crisp.
  • In a saucepan, heat the milk, and butter but do not allow to boil.
  • To this, add the vanilla, beaten eggs and sugar, when a bit cooled.
  • Add the baking powder and blend until smooth.
  • In an ovenproof tray, layer the cubes of bread and pour over it the liquid prepared above, until the bread is saturated.
  • If desired, sprinkle your choice of nutmeg, cinnamon or raisins.
  • Bake for approximately 30 minutes or until it browns.

This is a recipe for a Thanksgiving side dish that I got from the Food Network in a show that featured Giada DeLaurentis preparing her family's traditional Thanksgiving dishes. Although she often uses a different bread each year (for flavor variety), this is her family's favorite version, using challah bread. If you can't find challah bread, Giada recommends using a loaf of brioche or sourdough bread.

1 lb brioche bread or 1 lb sourdough bread
2 tablespoons butter
1 lb butternut squash, peeled & cut into 3/4-inch pieces

2 teaspoons pepper, divided
2 tablespoons olive oil
3 tablespoons brown sugar
2 tablespoons ground cinnamon
1 tablespoon fresh thyme leave, chopped
3 cups heavy cream

3/4 cup brandy

Steps:

  • Preheat oven to 400°F, Lightly butter a 9x13-inch glass baking dish; set aside.
  • Tear or cut bread into 1-inch pieces. Place bread pieces in a large mixing bowl; set aside.
  • In a large skillet, melt the butter over medium-high heat. Add the butternut squash and parsnips. Add 1 teaspoon salt and 1 teaspoon pepper. Cook, stirring occasionally, for 5 minutes or until slightly softened. Set aside to cool.
  • Drizzle the olive oil over the bread pieces, and toss gently. Add the brown sugar, cinnamon, 2 teaspoons salt, 1 teaspoon pepper, and chopped thyme leaves. Toss the ingredients together until the bread pieces are well coated.
  • In another bowl whisk together the heavy cream, eggs, and brandy. Pour the cream mixture over the bread mixture. Add the cooled vegetables, and toss gently until the bread is well coated with the custard mixture (but the bread still reamins in chunks).
  • Spoon the mixture into the buttered baking pan. Bake for 40 to 45 minutes, or until the bread pudding is puffed and golden.
