SWEET BISCUITS FOR BREAKFAST OR SHORTCAKE
I wanted a sweet biscuit, but found that the more sugar I used, the heavier they would be. I started experimenting with a basic rolled biscuit recipe from The Joy of Cooking, and came up with this. The way you handle the dough is important, and be sure to use a sharp cutter to cut the rounds, so all of the edges puff up. A preheated oven and an insulated cookie sheet are necessary. If you don't have an insulated sheet, put two regular sheets together. Recipe is easily doubled. I've served this as shortcake with strawberries and whipped cream, and we also like it at breakfast with apple jelly.

Steps:
- Preheat oven to 400, I place a rack in lowest position in the oven.
- Combine dry ingredients.
- Cut in butter.
- Stir in liquid until it just begins to pull from the sides- it will be pretty moist.
- Spread 1/4 C flour on a pastry board and dump the dough onto the flour.
- Gently turn the dough until all sides are covered with flour.
- Knead by gently rubbing the dough into the flour, a scant 8 to 10 turns.
- Pat the dough into a 1 inch thich slab.
- Cut into rounds with a sharp round biscuit cutter- I use a 2 1/2 inch cutter-- you can push the scraps together to make room to cut a few more, try not to knead it too much.
- Place on insulated cookie sheet about 1/2 inch apart.
- Put in HOT oven and bake for 12- 15 minutes.
- You can test by lifting the top layer of the center biscuit; if it's done it will look dry inside and the edges will be golden.
- (I get 9 biscuits when I use a 2 1/2" cutter).

SWEET BISCUIT CHOCOLATE ROLL
A quick sweet snack that is very popular in Greece and there are many different recipes. This is my favorite.

Steps:
- Cut by hand the biscuits in crumbs. Chop the walnuts.
- Melt the margarine in a small pot and then add the sugar and the cocoa. Stir with a spoon until well mixed.
- Beat the eggs and put them to the margarine mixture; stir.
- And finally add the biscuits crumbs and the walnuts. Stir until they are mixed.
- Cut a piece of parchment paper about 13x18" size. Arrange the cookie-mixture as a roll in the middle of the paper and roll.
- Put the roll into the freezer for a couple of hours.
- Then remove and store at the fridge. Enjoy!
- Cooling time is not included!

DOUBLE CHOCOLATE ROLL (FLOURLESS)
This is a flourless cake. Its texture is more like a souffle. This is a roll filled with chocolate cream or ganache. This recipe is great if you are diabetic due to the low carb factor. It is wonderful if you need to eat GF. There is NO flour what so ever in this recipe. I do not claim the creative rights to this recipe because it was given to me back when I was diagnosed as diabetic. It is so rich though I can't really eat it. Chocolate and migraine issue. It is heavenly though.It melts on your tongue. You can change the taste by the type of chocolate you use.

Steps:
- Preheat the oven to 350 degrees.
- Butter a jelly-roll pan. Line it with wax paper or parchment paper and butter the paper.
- Melt the chocolate with the coffee until smooth and let cool. This can be done in a double boiler or in the microwave. Using the microwave, only do this a minute at a time.My microwave only takes a minute and half to melt the chocolate. It may not appear completely melted but once you stir it finishes melting. You don't want to burn the chocolate.
- Separate the egg yolks and egg whites into two separate bowls.
- In the mixer beat the egg yolks until they are smooth. Then add 2/3 cup of the sugar a little at a time and beat the mixture until it falls in a ribbon when the beater is lifted. Set aside.
- In another bowl, beat the egg whites with the salt until they are frothy.
- Add the cream of tartar and beat the egg whites until they hold soft peaks.
- Add the remaining sugar a little at a time and beat the whites until they are stiff peaks.
- Combine the egg yolks with the chocolate mixture.
- Stir in 1/4 of the whites then fold in the remaining egg white mixture gently but thoroughly.
- Spoon the batter onto the jelly-roll pan. Spread it evenly and bake the cake in the middle of the oven for 15 minutes or until a cake tester inserted comes out clean.
- Turn the oven off and open the oven door. Let the cake stand in the oven for 5 minutes.
- Transfer the pan to a rack. Cover the cake with dampened paper towels and let the cake cook to room temperature. About 15 minutes.
- Remove the towels and run a knife along the side to release the wax/parchment paper.
- Cover the top of the cake with another piece of parchment/wax paper and a baking sheet.
- Invert the cake onto the baking sheet and peel the wax paper off the top.
- MAKING THE FILLING:.
- In a saucepan combine the heavy cream with the chocolate and cook. Stirring until the chocolate is melted and the mixture is slightly thickened. Transfer the mixture to the mixer bowl and chill. Do not let it solidify.
- After it has cooled, beat the chocolate cream until it forms soft peaks and stir in the coffee. I will also add a tsp of vanilla.
- Spread the filling over the cake leaving about a 1 inch border.
- Starting with the long side, roll up the cake jelly-roll style, lifting it with the wax paper and finishing with the seam side down.
- Just before I roll it to the end I move it to the platter then pull the last bit of wax paper out.
- Chill the roll covered loosely. Before serving, trim the ends and sprinkle with powdered sugar. You can also make this with the semi sweet then take the dark chocolate making another batch of the ganache. While it is in the thick pudding like state, pour it over the roll. Allow that to set up Then slice.I would do that at the point that it needs to be chilled.

MEXICAN BIZCOCHITOS (CRUSTY SWEET BISCUIT)
This is a crusty sweet biscuit that is good served with hot chocolate, coffee or tea. It is an inexpensive, very quick and easy treat. I like them best when they are fresh from the oven. They are very easy to prepare and I've added a little cinnamon to the powdered sugar that is mixed in with the butter. I like to make them on mornings we get to sleep in for a late morning "get yourself going" sweet biscuit served with coffee. I also like to make them if I know my girlfriends are coming over for morning coffee. I found this in a little South West cookbook about 10 yrs ago. Just something special for those of us that don't (but should,smile) eat breakfast. They are an easy treat for the kids to help make. You need to help them roll them in the powdered sugar, as it is done when hot from the oven. I'm not sure how long they would keep,,ours are always gone! I believe they should be ok stored in a zip locked bag,,for a day or so. I want to try doubling recipe to freeze some to have on hand as I think they would freeze well, but I'm not sure how good they would be re-heated. This is not a large quantity recipe, just enough for a couple biscuits for 2 people.

Steps:
- Cream together butter and powdered sugar.
- Add in flour, pecans and vanilla and mix together.
- Roll dough into 1-inch balls.
- Place on a greased baking sheet.
- Flatten with bottom of a glass that has been dipped in powdered sugar.
- Bake in 300°F preheated oven for 15-20 minutes.
- When done, roll each in powdered sugar while still warm.
- If you like cinnamon, you may add it to the dough or in the powdered sugar you roll the baked biscuit inches.
- My granddaughter likes to spread a little jam on hers, but that is too sweet for me.
- Best served warm from the oven with coffee, hot chocolate or your favorite warm drink.
HERSHEYS CHOCOLATE ROLLS
I got this recipe from my ex-husbands late grandmother. She taught me this and I fix this all the time. My family loves these and you can fix these when you want something simple and sweet. You can also fix these for any occasion. you can also make cinniamon rolls and omit the chocolate

- Preheat oven 350 to 375 degrees.
- Roll out biscuit dough thin.
- Spread soften butter on top of dough.
- Add sugar to butter.
- Add vanilla to butter and sugar.
- Roll up into a log, pinch sides.
- Cut into 2 inch rolls.
- Place in a 9x11x13 cake pan.
- Put in preheated oven until golden brown.
- In deep sauce pan mix well sugar and cocoa.
- Add water to cocoa mixture until well blended.
- Bring to a boil until thick.
- When rolls are golden brown let them cool off.
- Pour chocolate syrup on top of rolls.
- Let set for about 1 1/2 hrs to 2hrs. This gives the chocolate to be soaked up.
- Serve and enjoy. Even better in the mornings with coffee. Servings vary. Time fixing also varies.

CHOCOLATE ROLL DAINTY
This chocolate roll is a delicious addition to the dainty tray. There are no leftovers! Always nice to have a dainty that tastes as good as it looks.

Steps:
- In a pot over low heat: Melt the chocolate and margarine.
- In a small bowl beat the egg slightly, carefully whisk into the above mixture until nicely blended.
- Remove from heat, add the graham crumbs.
- If the graham crumbs have not cooled the mixture to warm, allow mixture to cool to warm before folding in the marshmallows, walnuts, and cherries.You don't want to be melting the marshmallows.
- Shape into a roll on wax paper, rolling into the size you wish - basically like a sausage roll.
- For variety I often roll in flaked coconut which gives it an extra special look.
- Chill in refrigerator until set, slice and serve.
