COCONUT PINEAPPLE SHRIMP SKEWERS
Grilled Pineapple Shrimp Kabobs with an easy citrus shrimp marinade. The best way to cook shrimp! Works for the oven, stovetop, and outdoor grill.

- In a medium bowl, combine the coconut milk, Tabasco sauce, soy sauce, orange juice, and lime juice. Add the shrimp and toss to coat. Cover and place in the refrigerator to marinate for 1-2 hours, tossing occasionally. If using wooden skewers, soak in warm water while the shrimp marinates. Meanwhile, prepare the pineapple if needed.
- Preheat the grill to medium high heat. Remove the shrimp from the marinade, and reserve the marinade for grilling. Thread the shrimp onto a skewers, alternating with the pineapple.
- Lightly brush the grill with canola oil, then place the shrimp on the grill. Grill the shrimp for 3 minutes, brushing with the marinade, then turn and cook for an additional 2-3 minutes, brushing with the marinade again, until the shrimp are just cooked through. Remove to a serving plate and garnish with cilantro and green onion. Serve hot.

- Heat a cast-iron grill pan or outdoor grill over medium-high heat.
- Combine the pineapple juice, lemon juice, lime juice, ginger, jalapeno, soy sauce, honey and cilantro in a small saucepan. Heat the mixture over medium-high heat and simmer until the liquid is reduced by half.
- Skewer the shrimp on 8 metal skewers or on 8 wooden skewers that have been soaked in water for at least 20 minutes, alternating with pieces of pineapple, onion and bell pepper.
- Brush or drizzle the kebabs with the pineapple glaze. Grill until the shrimp are opaque, about 3 minutes per side, brushing occasionally with the glaze. Serve hot.

SLAYER'S SWEET, TANGY, AND SPICY KABOBS
I acquired both my nickname and the idea for this recipe while working at an awful franchised restaurant in my college years. These are great for Summertime cookouts at tailgate partys or just for get-togethers. The sauce is fairly versatile and can be used for an array of different meats and applications (I originally used the sauce for chicken wings). For people such as myself who have acid reflux I have indicated some ingredients that can be left out in order to help curb the heartburn.

- Make the marinade by whisking the brown sugar, honey, lime juice, lemon juice, maraschino cherry juice, garlic powder, ginger, black pepper, cayenne pepper, pineapple juice, wine, hot pepper sauce, and soy sauce together in a large, non-metallic bowl. Toss the mushrooms, onion, bell pepper, tomatoes, and chicken in the marinade; cover and refrigerate at least 1 hour.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- On each skewer, thread a piece of chicken, then three of the veggies followed by another piece of chicken then a pineapple slice and one maraschino cherry at the end. - Start the grill.
- Combine brown sugar, rum or pineapple juice, vanilla extract, cinnamon, and chili pepper flakes.
- Stir until the sugar is fully dissolved into the mixture.
- Using two skewers per serving, thread the pineapple cubes onto them so that you get six kebabs. The use of two skewers for each one will make it easier to turn.
- Brush both sides of each kebab with the sugar mixture. Reserve the remaining mixture. Let sit for 10 minutes.

- To prepare the marinade: Whisk together the marinade ingredients. Pour into a large plastic storage bag. Add the chicken chinks and place into the fridge to marinate for at least 4 hours, preferably overnight.
- To prepare the kabobs: Remove the chicken from the marinade. Thread onto skewers alternating the peppers, chicken, pineapple and onion chunks onto the skewers. Season everything lightly with salt and pepper.
- To grill: Oil grill grates and preheat grill to medium-high heat. Cook the kabobs rotating as needed so they will cook evenly. About 2-3 minutes on all sides. The kabobs should char, but, not burn.
- In the last 2 minutes of grilling, reduce the grill temperature to medium and begin to baste the kabobs with the spicy pineapple glaze until lightly charred
