Steps:
- Combine all ingredients except cornstarch and water in a large casserole dish, place chicken in sauce.
- Cover and bake for 1 hour at 350°F (175°C).
- Mix cornstarch with ½ cup (125 mL) of cold water; thicken sauce with this when removed from oven.
- Serve over a bed of rice and mixed vegetables.

SWEET AND SOUR CHICKEN BREASTS

- Cut each chicken breast into 2 pieces. Put each chicken piece between sheets of plastic wrap and pound to thin to about 1/4-inch thickness. Alternatively, carefully slice each chicken breast in half horizontally, making thin cutlets.
- In a plate or bowl, combine the flour, ginger, salt, pepper, and garlic powder. Dredge chicken pieces in the flour mixture.
- Heat the butter and olive oil in a large skillet or sauté pan. Brown the chicken for about 4 minutes on each side, until browned and cooked through. Remove to a warm serving platter and keep warm.
- While the chicken is cooking, combine the orange juice, chicken broth, rice vinegar, brown sugar, soy sauce, ketchup, and sherry or wine, if using. Combine the cornstarch with the 1 tablespoon of water and add to the mixture. Blend well and set aside.
- Add the green onions and garlic to the skillet and cook, stirring, for about 1 to 2 minutes. Add the sauce mixture and continue cooking, stirring, until thickened. Simmer for 1 minute.
- Spoon the sauce over the chicken pieces and serve with hot cooked rice or noodles.

- Preheat oven to 325 degrees.
- Season chicken with salt and pepper.
- Working in two batches, toss the chicken pieces in cornstarch and then coat with the egg.

- In a large bowl, toss chicken with 1 tablespoon each soy sauce and cornstarch, salt, and pepper. In another bowl, combine remaining soy sauce and cornstarch, vinegar, ketchup, sugar, and 1/2 cup water; set aside.

- For the sauce, put the red pepper, chunks of chilli and pineapple juice in a pan and bring to the boil. Cover and cook for 10 mins, then purée in a food processor. Return to the pan with the pineapple chunks, chilli halves, star anise, tamarind, sugar and vinegar. Gently simmer for 20-30 mins until reduced and sticky. Keep warm, or reheat to serve.
- Fill a large pan 1cm deep with oil and heat until shimmering. Whisk the soda water and 100ml cold water into the self-raising flour with a little salt. Tip the cornflour onto a plate, line a tray with kitchen paper and turn on the oven to low.
- Stir the batter well. Dust the chicken with cornflour, then dip into the batter. One at a time, lower into the hot oil (about 5-6 every batch). Turn up the heat to keep the chicken frying, if needed, and cook for 5-6 mins, turning once. When cooked, drain on the tray, and keep warm in the oven. Repeat with the remaining chicken.
