- Place soy sauce in a bowl and marinade the chicken cut into cubes for a few minutes. When you see it is soft it will be time to prepare the batter.
- Prepare the mix to batter the chicken. You will need flour, pepper, salt and beer. You can also add liquid left over from marinating the chicken with the soy sauce. If you notice that your batter mix is very clear add tablespoons of flour until it becomes more consistent and thick.
- Once you have made the dough, coat the chicken cubes in it and then fry in a pan containing hot sunflower oil. When you observe that the chicken tacos are of a golden colour, remove from heat and place on a plate with absorbent kitchen paper so to remove the excess oil from frying.
- Meanwhile in another pan sauté the vegetables adding salt and pepper to taste, so to later add them to the chicken dish. You just need to sauté them, they will eventually cook through when in the sweet and sour sauce.
- To make the sweet and sour sauce you mix the following ingredients in a bowl: the three tablespoons of vinegar and three tablespoons of brown sugar. If you do not have this type of sugar, you can use white sugar. You should also add three tablespoons of sweetened pineapple juice. Then add to the mixture a spoonful of soy, one of sunflower oil and one of honey. Add salt and pepper to taste and add a teaspoon of ginger powder and a tablespoon of ketchup. Look at the picture, your sweet and sour sauce should look something like this.
- Mix it all on a low heat. You must watch the honey melt and keep stirring all the ingredients for the flavours to mix slowly.
- Mix the sauce until thick and then incorporates slowly the corn flour to further thicken. The sauce can be concentrated to your liking, the thicker you want it, the more corn flour you should add while stirring the mixture.
- Once you have the sauce to your liking, remove from the heat. Then in a new pan you should add the fried chicken cubes, vegetables and sauce. Mix it up and heat for a few minutes.
- And that is it! You have your Chinese style sweet and sour chicken ready to serve. You can make white basmati rice to accompany. You will delight your guests.

- To make the sauce, put the cornflour in a small bowl and stir in two tablespoons of the pineapple juice until smooth. Put the remaining pineapple juice in a separate bowl and stir in the garlic, ginger, soy, vinegar, sugar, ketchup and chilli flakes until thoroughly combined. Set aside.
- Put the pineapple on a board and cut off the skin. Quarter lengthways and remove the tough central core. Cut the pineapple into thick slices and set aside. Cut each chicken breast into seven to nine even pieces (depending on size).

- IF BAKING: Heat oven to 375 degrees F. Line a baking sheet with a nonstick mat or foil and lightly spray with cooking spray. Place baking sheet in the oven to heat up.
- MARINATE CHICKEN. Whisk eggs in a large bowl then whisk in all remaining "marinade" ingredients. Stir in chicken and let marinate at room temperature while you prep the rest of the ingredients, preferable 20 minutes.
- WHISK SAUCE. Whisk the sauce ingredients together in a small bowl, set aside.
- BREAD CHICKEN. Add flour, cornstarch, and seasonings to a large freezer bag (or large bowl). Remove chicken from marinade with a slotted spoon, dab off excess egg with paper towels and add to breading. Toss chicken until well coated, pressing coating into chicken from outside the bag.
- TO PAN FRY (See notes for more cooking options): Add enough vegetable oil to a large frying pan so it reaches 1/4-inch up the sides and heat over medium-high heat. Working in batches, shake off excess breading from chicken add to hot pan in a single layer and cook for about 4-6 minutes, or until cooked through, turning halfway through. Remove to a paper towel lined plate.
- STIR FRY: Heat 1 tablespoon oil in a large skillet and heat over medium high heat. Add onions and 1 cup pineapple and stir fry for 2 minutes. Add bell peppers, ginger and garlic and stir fry for 1 minute.

- Chop the chicken into bite-sized pieces.
- Add the salt to the corn starch.
- Add the chicken pieces to a bowl with the corn starch and toss to coat.
- Preheat a large frying pan or wok over medium to medium-high heat.
- Spray the pan generously with cooking spray, and then add half of the chicken to the pan.
- Make sure the chicken is spaced out, as to not overcrowd the pan. This is the key to getting a golden crust on the chicken.
- Cook the chicken for five minutes, and then flip each piece to cook for another five minutes.
- Check the internal temperature of the chicken to make sure it's done before removing from the pan. It should be 165F when fully cooked.
- Remove the first batch of chicken from the pan and place in a bowl to the side, then repeat with the remaining chicken.
- Combine all of the sauce ingredients in a small sauce pan, except for the sesame seeds.
- Whisk together to ensure the corn starch is broken up and incorporated.
- Bring the mixture to a boil, then reduce to simmer.
- Simmer for approximately five minutes or until the sauce becomes thick and syrupy in texture.
- In the same pan you cooked the chicken in, spray more cooking spray, and add the diced pepper and onion.
- Cook on high heat for 5 minutes or until the vegetables are slightly charred and tender.
